SPICY GRILLED FISH



Spicy Grilled Fish image

This is a really tasty, economical and different way to enjoy fish! Lots of flavor from the marinade and easy clean up! Winners in my book. I am sure this would work very well on any firm, mild fish. When I made this I was a little crunched in the time department so I only got to marinade it for 1 hour and it was delicious. Plan ahead! This is best marinated for at least an hour but no more than 2 hours. In a pinch, just let it marinate while the grill is heating.

24 ounces catfish fillets or 24 ounces other mild fish
1/4 cup lemon juice
1/4 cup vegetable oil
2 tablespoons low sodium soy sauce
2 tablespoons fresh ginger, finely chopped or 2 teaspoons ground ginger
6 garlic cloves, finely chopped, about 1 Tbsp
3 green onions, chopped, green and white parts
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper, adjust to taste
lemon wedge (optional)
parsley, chopped (optional)

Steps:

  • Combine lemon juice, soy sauce, vegetable oil, ginger, garlic, green onions, minced onion, paprika and cayenne pepper and stir to mix well.
  • Place fish in a zipper seal bag and pour liquid mixture over it. Seal and marinate in the refrigerate for about 1 to 2 hours.
  • Oil grill grate or fish basket really well and preheat grill to medium high. Grill fish for 4 minutes on each side. Flip the fish only once and brush with reserved marinade when flipped.
  • NOTE: Fish is completely cooked when the color turns from translucent to opaque (white) or has reached a 150 degree F internal temperature. Resist the temptation to over-cook fish until it "flakes," which indicates the fish is becoming dry.

Grilling is a wonderful yet simple way to prepare sea bass. The garlic butter sauce blends nicely with the mild flavor of this light and tender fish.

For the Garlic Butter Sauce:
3 tablespoons butter
1 medium lemon, juiced
2 cloves garlic , minced
2 tablespoons finely chopped Italian parsley
For the Fish:
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon onion powder
1/4 teaspoon sea salt
2 pounds sea bass filets
1 1/2 tablespoons extra-virgin olive oil

Steps:

  • Gather the sauce ingredients.
  • Combine the butter, lemon juice, garlic, and parsley in a small saucepan over medium-low heat.
  • Cook until the butter has melted. Set aside.
  • Gather the remaining ingredients.
  • Preheat the grill to medium-high heat. Combine the garlic powder, paprika, onion powder, and salt in a small bowl.
  • Sprinkle the seasoning mixture on both sides of the fish.
  • Right before placing the fish on the grill, make sure to clean and oil the grill grates to keep the fish from sticking during the cooking process. This can be achieved by using a large pair of tongs, folded paper towels, and a high smoke point oil (canola oil, peanut oil, or sunflower oil; olive oil will work in a pinch). Dip the paper towel into the oil and run it across the grates at least 3 times to create a nonstick surface.
  • Place the fish on the grill and cook for 5 to 7 minutes. Turn the fish and baste it with the butter sauce. Cook for about 5 to 7 more minutes.
  • Once the fish reaches an internal temperature of at least 145 F, remove it from the heat, and drizzle it with olive oil.

4 firm, mild, white fish fillets ((such as grouper, sea bass, flounder, cod, or halibut, each about 6 oz))
1 small yellow onion ((diced))
1 walnut-sized piece of fresh ginger ((peeled and thinly sliced))
1 small bunch of fresh cilantro ((chopped))
1 tbsp chopped garlic
1/2 tsp cayenne pepper flakes
2 tsp grated lemon or lime zest
1 tsp freshly ground pepper
1/4 cup lemon or lime juice
1/4 cup olive oil
Optional: 1 lemon or lime ((quartered))
Sea salt or kosher salt ((to taste))

Steps:

  • Place the fish fillets in a shallow baking pan lined with baking parchment. Season lightly with salt.
  • Combine the onion, ginger, cilantro, garlic, chili, lime zest, pepper, lemon or lime juice and olive oil in a food processor fitted with the knife blade. Pulse until a paste forms.
  • Rub the paste evenly over both sides of each fish fillet. Cover and store in the refrigerator 2-4 hours.
  • About 15 minutes before serving, heat the oven grill to its maximum temperature. Cook the fish under the grill without turning it over, for 10 minutes. A certain amount of sauce will form in the baking pan. Spoon it over the fish before serving.
  • Transfer to warmed individual plates. Serve immediately with lemon or lime wedges, if desired.

¼ teaspoon onion powder
¼ teaspoon paprika
lemon pepper to taste
sea salt to taste
2 pounds sea bass
3 tablespoons butter
2 large cloves garlic, chopped
1 tablespoon chopped Italian flat leaf parsley
1 ½ tablespoons extra virgin olive oil

Steps:

  • Preheat grill for high heat.
  • In a small bowl, stir together the garlic powder, onion powder, paprika, lemon pepper, and sea salt. Sprinkle seasonings onto the fish.
  • In a small saucepan over medium heat, melt the butter with the garlic and parsley. Remove from heat when the butter has melted, and set aside.
  • Lightly oil grill grate. Grill fish for 7 minutes, then turn and drizzle with butter. Continue cooking for 7 minutes, or until easily flaked with a fork. Drizzle with olive oil before serving.

6 x sea bass fillets, about 140g/5oz each, skin on and scaled
about 3 tbsp sunflower oil
large knob of ginger, peeled and shredded into matchsticks
3 garlic cloves, thinly sliced
3 fat, fresh red chillies deseeded and thinly shredded
bunch spring onion, shredded long-ways
1 tbsp soy sauce

Steps:

  • Season 6 sea bass fillets with salt and pepper, then slash the skin 3 times.
  • Heat a heavy-based frying pan and add 1 tbsp sunflower oil.
  • Once hot, fry the sea bass fillets, skin-side down, for 5 mins or until the skin is very crisp and golden. The fish will be almost cooked through.
  • Turn over, cook for another 30 seconds - 1 minute, then transfer to a serving plate and keep warm. You'll need to fry the sea bass fillets in 2 batches.
  • Heat 2 tbsp sunflower oil, then fry the large knob of peeled ginger, cut into matchsticks, 3 thinly sliced garlic cloves and 3 thinly shredded red chillies for about 2 mins until golden.
  • Take off the heat and toss in the bunch of shredded spring onions. Splash the fish with 1 tbsp soy sauce and spoon over the contents of the pan.

1 lime, zested
2 tablespoons seasoned rice vinegar
2 tablespoons Asian fish sauce
