GRILLED SHRIMP WITH ARUGULA MUSHROOM SALAD

- To make the shrimp: Heat the oil in a heavy medium skillet over medium heat. Add the pepperoncini and garlic and cook until fragrant, about 2 minutes. Season, to taste, with salt and pepper. Set aside.
- Toss the shrimp in a medium bowl with 2 teaspoons of the pepperoncini oil. Sprinkle with salt and pepper. Prepare a charcoal or gas grill for high heat or preheat the grill pan over a high flame. Grill the shrimp until just cooked through, about 2 minutes per side. Toss the shrimp with the remaining pepperoncini oil to coat.
- Meanwhile, to make the salad: Whisk the extra-virgin olive oil and lemon juice in a medium bowl to blend. Season the dressing, to taste, with salt and pepper.
- Top the arugula with mushrooms in a large bowl. Season the salad, to taste, with salt and pepper. Surround with the warm grilled shrimp and shaved Parmesan. Add dressing and toss before service. Serve immediately. Mound the salad in the center of large plates.
GRILLED SHRIMP BASTED WITH PEPPERONCINI PEPPER SAUCE
I had this dish a few summers ago, I remembered it was so good that it needs to be shared with this little group here on Recipezaar! Give it a try and you will including this as a regular meal.

- In a glass bowl mix the olive oil, lemon juice, oregano, shallots, salt, pepper and shrimp. Mix very well so the shrimp is coated very well, refrigerate at least 30 minutes, the longer the better.
- For the sauce! In a medium sauce pan add olive oil,shallots and garlic, saute' on medium for 2 minutes. Slice the Peperoncini pepper in thin strips and add to the sauce pan. You can use any type of your favorite pepper, a mild one that's sweet works the best. Now add the salt and pepper and stir for 30 seconds. Skewer the shrimp and place on grill until your desired doneness, about 2 minutes on each side.
- Just before serving Heat sauce and add the parsley and balsamic vinegar and stir for 1 minute. Serve over the shrimp.

- Salt and pepper the shrimp. In a medium sized bowl combine olive oil, red wine vinegar, garlic, Italian seasoning, lemon juice, soy sauce, Dijon Mustard and Worcestershire sauce. Add the shrimp and let marinate for at least one hour or overnight.

- In a mixing bowl, mix together olive oil, parsley, lemon juice, hot sauce, garlic, tomato paste, oregano, salt, and black pepper. Reserve a small amount for basting later. Pour remaining marinade into a large resealable plastic bag with shrimp. Seal, and marinate in the refrigerator for 2 hours.
- Preheat grill for medium-low heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
- Lightly oil grill grate. Cook shrimp for 5 minutes per side, or until opaque, basting frequently with reserved marinade.

MARINATED GRILLED SHRIMP
A very simple and easy marinade that makes your shrimp so yummy you don't even need cocktail sauce! Don't let the cayenne pepper scare you, you don't even taste it.
