GRILLED JALAPENO BACON WRAPPED SHRIMP RECIPE
These Jalapeno Bacon Wrapped Shrimp have a bit of everything! A little sweet, a little salty, and even a little heat. They go quickly, so you may want to make a few batches!

Steps:
- Preheat oven to 350 degrees.
- Bake bacon on racks in a cookie sheet for 10-12 minutes (if using Whole Foods bacon or thick bacon increase time by 5-10 minutes, checking every 5 minutes) until bacon is partially cooked but still not entirely done.
- Allow bacon to cool enough to touch.
- Meanwhile, cut jalapenos into matchstick pieces the length of the shrimp (be sure to discard seeds and membranes).
- Take shrimp and place jalapeno into the top ridge.
- Wrap bacon around both the shrimp and jalapeno and skewer. (We did 4 to a skewer so they wouldn't touch)
- Season skewers to taste with seasoning blend. You will have a fair amount left afterwards.
- Grill over medium heating until shrimp and bacon are both cooked. If bacon starts to char before shrimp are done, move to indirect heat.
- Serve.

- 1. For the marinade: Process all ingredients in food processor until smooth. Reserve 2 tablespoons marinade; transfer remaining marinade to medium bowl. 2. For the shrimp: Pat shrimp dry with paper towels and butterfly according to photo 1. Add to bowl with marinade and toss to coat. Cover and refrigerate for at least 30 minutes or up to 1 hour. 3. Heat all burners on high for 15 minutes. Scrape cooking grate clean. Meanwhile, thread marinated shrimp on skewers according to photo 2. Sprinkle one side of shrimp with sugar. Grill shrimp, sugared side down, with lid down, until lightly charred, 3 to 4 minutes. Turn all burners off, flip skewers, close lid, and cook until other side of shrimp is no longer translucent, 1 to 2 minutes. Using tongs, slide shrimp into medium bowl and toss with reserved marinade. Sprinkle with cilantro and serve.
JALAPENO PICKLED SHRIMP
Steps:
- Mix all ingredients and pour over shrimp. Let stand in refrigerator overnight. Will keep for approximately 2 to 3 days.
JALAPENO WRAPPED SHRIMP

- Cut jalapeno in half and remove seeds. Roughly chop shrimp. Fill the cavity loosely with cream cheese. Add in cooked, chopped shrimp. Wrap peppers with prosciutto. Insert a toothpick to hold together. Grill until done, about 5 minutes.
GARLIC-JALAPEñO SHRIMP
This tasty marinade-hot but not punishing-is so easy and so flavorful that it will quickly make its way into your regular rotation. Shrimp is marinated with garlic, fresh lime juice, and jalapeño chile peppers, then seared in a skillet until fully cooked through.

- Toss together shrimp, garlic, jalapeno, lime juice, and 1 tablespoon oil; season with salt and pepper. Marinate in refrigerator for 45 minutes.

Steps:
- To remove the flesh from the pit using a sharp knife with the fruit standing on end cut down from just off center, filleting the flesh off in one large half.
- Repeat on the other side. Remove the skin and cut the fruit into ¼ inch cubes, place in a bowl. There will be some remaining fruit left on the pit squeeze the juice out and catch it in the bowl.
- Finely dice the Jalapeños seeds and all, set aside. Add as much Jalepeño as needed to achieve the right amount of heat for you. Remember that as it sits and the flavors mingle the spiciness will become more pronounced.
- Juice the limes and add to mango.
- Season salsa with a little salt, pepper and if needed a pinch of sugar.
- Dice the red onion and soak in ice water for 10 minutes.
- Drain and set aside.
- Wash and pick basil leaves, dry and set aside.
- Grill shrimp over moderately hot fire for a couple of minutes on each side until just done.
- As the shrimp is cooking mix the red onion and basil leaves into salsa.
- Spoon the salsa onto plates and arrange shrimp.
