1 can (6 oz) tuna packed in water, drained
2 tablespoons finely chopped onion
2 tablespoons finely chopped green bell pepper
1 tablespoon finely chopped dill pickles
2 tablespoons creamy Dijon mustard
1/4 cup shredded Cheddar cheese (1 oz)
4 slices whole-grain bread

Steps:

  • Heat gas or charcoal grill for indirect grilling as directed in owner's manual. Cut two 12-inch square pieces of heavy-duty foil. In small bowl, mix tuna, onion, bell pepper and pickles. Stir in mustard and cheese.
  • Spoon tuna mixture on 2 bread slices; top with remaining bread slices. Place each sandwich on center of foil piece. Fold foil over sandwich so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion.
  • Place packets over unheated area on grill. Cover and grill 12 to 15 minutes or until sandwiches are heated through.

One 12-ounce can tuna, drained
1/4 cup mayonnaise, plus more if you like a creamy tuna salad
Juice of 1/2 lemon, plus more if desired
1/4 cup chopped red onion
1/4 cup chopped green onion, white parts and some of the green parts
1/2 tablespoon chopped fresh basil
1/2 tablespoon chopped fresh cilantro
1/2 tablespoon chopped fresh flat-leaf parsley
1/2 teaspoon chopped fresh mint
1/2 tablespoon red wine vinegar
Salt and freshly ground black pepper
Salt and freshly ground black pepper
3 tablespoons unsalted butter, softened
8 slices sourdough bread
8 slices Cheddar
4 pickle spears, for serving

Steps:

  • For the tuna: In a large bowl, break up the tuna with a fork and add the mayonnaise, lemon juice, red onions, green onions, basil, cilantro, parsley, mint and vinegar. Mix well to combine. Taste and season with salt, pepper and extra lemon juice and mayonnaise as desired.
  • For the sandwich: Brush the softened butter on 1 side of each slice of bread, setting aside some butter for cooking the sandwiches. Place the bread buttered-side down on a baking sheet. Divide the tuna among 4 slices of bread and top each with 2 slices of cheese. Complete the sandwich with the remaining 4 slices of bread, buttered-side up.
  • Heat a large nonstick skillet over medium-high heat and add half of the remaining butter. When the butter melts, place 2 sandwiches in the pan and cook until toasted and golden brown on each side. Repeat with the remaining sandwiches. (If your pan is large enough, you can cook all the sandwiches at the same time.) Serve warm, with pickles.

Juice of 3 limes
1/4 cup high-quality soy sauce (Japanese or domestic shoyu)
5 tablespoons extra-virgin olive oil
1 teaspoon dark sesame oil, optional
1/2 teaspoon coarsely ground black pepper
2 cups mesclun, arugula or other greens, washed, dried and torn into bits
1 tuna steak, no less than 1 1/2 inches thick, about 1 1/2 pounds, skin removed
Salt and freshly ground black pepper to taste

Steps:

  • Start a charcoal or wood fire or preheat a gas grill or broiler. In a medium bowl or blender, add lime juice, soy sauce, olive oil, sesame oil, pepper and 2 tablespoons water. Whisk or blend until emulsified. Soak greens in this mixture while preparing the tuna.
  • Using a sharp, thin-bladed knife like a boning knife, make a small horizontal incision halfway down any side of the tuna steak. Insert the knife almost to the opposite edge of the steak, then swing it back and forth, turning the knife as necessary to keep the blade facing the direction you're cutting. The goal is to create a large pocket. Be careful not to cut through the top, bottom or opposite edge of the tuna, and try to keep the entry point relatively small.
  • Drain the greens of excess marinade and cram them into the pocket; you can overstuff as long as you don't tear the tuna (the tuna won't shrink, nor will the greens expand). If the pocket opening is small, seal it with a toothpick; if it's more than an inch or two wide, use two skewers. Marinate the tuna in the remaining soy mixture until the grill is hot, or up to an hour at room temperature or several hours refrigerated.
  • Grill the tuna, turning once, a total of about 6 minutes an inch of thickness (if your steak is 1 1/2 inches thick, for example, turn it after about 4 minutes and cook 4 or 5 minutes more). Season with salt and pepper, cut into 1/2-inch-thick slices and serve.

This is dedicated to all those chefs who tell you to never, ever mix fish and cheese together; and yet there they are, at the diner at 2:00 in the morning. And you know what they eat? Tuna melts. And the reason they do is because it is delicious.

1 (6.5 ounce) jar oil-packed tuna, drained
1 tablespoon minced green onion
2 tablespoons finely diced celery
2 teaspoons capers, drained
1 teaspoon Asian chile paste (such as sambal oelek)
2 tablespoons mayonnaise, or more to taste
⅓ cup fresh mozzarella cheese
salt and ground black pepper to taste
2 tablespoons softened butter, divided
2 thick slices French bread
¼ cup shredded sharp white Cheddar cheese, divided
1 pinch cayenne pepper, or to taste

Steps:

  • Place tuna into a mixing bowl and lightly break apart with a fork. Add green onion, celery, capers, chile paste, and mayonnaise. Pinch small pieces from mozzarella cheese into the tuna salad and stir to mix. Season with salt and black pepper; refrigerate tuna salad until needed.
  • Heat oven's broiler. Line a baking sheet with aluminum foil.
  • Spread butter generously on both sides of French bread slices.
  • Broil buttered bread until golden brown on top, 2 to 3 minutes. Flip bread slices and broil other side until toasted, 2 to 3 more minutes. Remove from oven and turn bread slices over on the baking sheet so the darkest sides are on the bottom.
  • Gently spread tuna salad onto bread slices using 2 forks. Press the salad onto the bread and spread tuna all the way to the edges of the bread. Spread shredded sharp Cheddar over each sandwich. Dust tops with cayenne pepper.
  • Place sandwiches under broiler and cook until cheese is melted and bubbling, 5 to 6 minutes.

An Asian flavor that is very unique and delicious. This is one of those recipes that looks fancy but is actually quite easy to prepare. I used pre-bagged mixed greens, found near the bagged salads in the grocery store. You can make this in your broiler or on the grill!

1 1/2 cups mesclun or 1 1/2 cups other mixed greens, torn
2 (3/4 lb) tuna steaks
1 clove garlic, minced
1 teaspoon any strong mustard
1 teaspoon ground ginger
1/2 teaspoon sesame oil
1/2 teaspoon black pepper
1/4 cup dry white wine (or water)
1/4 cup soy sauce
1 1/2 tablespoons lime juice

Steps:

  • Preaheat your grill or broiler.
  • Mix together all the ingredients except the tuna and greens.
  • Use a sharp, thin-bladed knife to make a small incision on any side of the tuna steak, creating a pocket, being careful not to cut through to the other side.
  • You can also make a small cut and then either wiggle the knife around gently or just start slowly easing the inside apart to create a large pocket.
  • Place the tuna in the soy mixture, covering each side.
  • Remove tuna from liquid, letting excess sauce drip off.
  • Toss the greens with the sauce, drenching it in the liquid.
  • Stuff the tuna pocket with the greens and seal the opening with toothpicks.
  • Grill or broil the tuna, turning once, about 5 minutes per inch of thickness, or however well-done you like your tuna.

  • Assemble sandwiches: Place slices of bread out onto cutting board or work surface. Lightly butter each. Reserve four slices to the side. Invert the other four slices buttered side down onto the work surface. Add a dollop of the Dijon-mayonnaise to each, smoothing it out evenly across the surface of the bread. Add two slices of tomato to each, along with a sprinkle of salt and pepper. Add tuna salad spreading it out evenly over the tomato slices. Add a rasher of bacon on to each, cutting in half first to fit nicely onto each mound of tuna. Add slice of cheese followed by the remaining slices of bread buttered side up.
  • Grill sandwiches: Set sandwich grill or skillet onto moderate heat. When the surface comes to temperature, add one or two sandwiches and grill until bread is toasted a rich golden brown. Feel free to press the sandwich down if using a griddler. Invert the sandwich carefully and repeat until the sandwich is grilled on both sides. Cut sandwiches in half or quarters and serve immediately.
