BALSAMIC MARINATED TOMATO AND MOZZARELLA SALAD

Balsamic Marinated Tomato and Mozzarella Salad image

A perfectly simple salad marinated in a combination of olive oil and balsamic vinegar and kicked up with onion, garlic and basil. The longer it sits, the better it gets. Also great served over pasta.

Ingredients

1/4 cup olive oil
1/4 cup balsamic vinegar
1/2 teaspoon salt
black pepper
1 clove minced garlic
3 tablespoons chopped fresh basil
1/4 cup onion, chopped
1 1/2 cups mozzarella cheese, cubes
1 pint grape tomatoes or 1 pint cherry tomatoes, halved

Steps:

Mix together first five ingredients for dressing and toss in cheese and tomatoes.
Chill until ready to serve.

Grilled tuna partners with classic mozzarella and tomato salad for a delicious dinner.

Ingredients

1/2 lb tuna steaks
1 teaspoon olive or vegetable oil
1 small clove garlic, finely chopped
3 large plum (Roma) tomatoes, sliced
4 oz fresh mozzarella cheese, sliced
2 tablespoons balsamic vinaigrette
2 tablespoons chopped fresh basil leaves

Steps:

Heat gas or charcoal grill. Drizzle both sides of tuna steaks with oil; rub with garlic. Let stand at room temperature 15 minutes to marinate.
Meanwhile, on large serving plate or platter, place tomato and cheese slices. Drizzle with vinaigrette; sprinkle with basil. Set aside.
Place tuna on grill. Cover grill; cook over medium heat 8 to 10 minutes, turning once, until fish flakes easily with fork and is slightly pink in center. Cut tuna into slices. Place tuna slices on top of tomatoes and cheese.
