- In a large bowl, combine the tuna, egg, bread crumbs, onion, celery, red pepper, mayonnaise, chili sauce and seasonings; mix well. Shape into four patties (mixture will be soft). , Coat a nonstick skillet with cooking spray; fry patties for 3-4 minutes on each side or until cooked through. Serve on buns with tomato and lettuce if desired.

TASTY TUNA PATTIES
If you're ever pressed for time, start with a couple cans of tuna and you'll have a delicious patty in no time that you can serve a number of different ways. Add them to buns with your favorite toppings for sandwiches, serve them alongside a fresh salad, or make smaller versions of them and serve them as appetizers with tartar sauce on the side. There are a lot of great flavor elements in these easy and versatile patties, but the quantities are small so the flavor still comes out pretty mild. If you're looking for a stronger flavor, increase quantities as you like!

- Combine tuna, eggs, bread crumbs, Parmesan cheese, celery, lemon juice, seafood seasoning, mustard, pepper, and dill in a bowl; stir gently until fully and evenly combined. Shape mixture into 4 patties.
- Heat oil in a nonstick skillet over medium-high heat. When oil is hot, gently lay 2 tuna patties into the skillet. Don't over crowd - only add as many patties as comfortably fit with room to flip them.
- Cook tuna patties until golden brown, 3 to 5 minutes per side, adjusting the heat as needed if they're cooking too quickly. Repeat with remaining patties, adding remaining oil as needed.

COMFORTING TUNA PATTIES

- In a small saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Remove from heat. Transfer to a small bowl; cool., Stir in tuna, 1/3 cup bread crumbs, green onion, lemon juice, salt and pepper. Refrigerate, covered, at least 30 minutes., Place remaining 1/2 cup bread crumbs in a shallow bowl. Drop 1/3 cup tuna mixture into crumbs. Gently coat and shape into a 1/2-in.-thick patty. Repeat. In a large skillet, heat oil over medium heat. Add tuna patties in batches; cook until golden brown, 2-3 minutes on each side. Drain on paper towels., Freeze option: Freeze cooled tuna patties in freezer containers, separating layers with waxed paper. To use, reheat tuna patties on a baking sheet in a preheated 325° oven until heated through.

TUNA PATTIES
Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes. You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture. The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that! You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried!

Steps:
- Mix all ingredients.
- Use more or less breadcrumbs, as needed, to soak up the moisture from the tuna and egg until it is the consistency of a "patty" (I'm sorry I can not explain this better!).
- Make into patties 1/2 inch thick.
- Sprinkle both sides of patties with pepper, and pat it inches.
- Warm up oil and butter in a pan over medium heat, enough so it's hot enough to cook but not burn. You know how your own burners work.
- Fry until golden brown, and flip to cook the other side.
GRILLED TUNA
Tuna is available most of the year, so fresh steaks should be easy to come by. Be choosy: a reddish color is acceptable, but flesh with dark spots or streaks should be avoided. As with all great ocean fish, the flesh tends to be dry. Marinate with oil, and avoid overcooking. The timing is critical, as tuna should be served medium rare. Use a kitchen timer.

- Place tuna steaks and olive oil in a large resealable plastic bag. Seal, and refrigerate for 1 hour.
- Preheat the grill for medium heat. When coals are very hot, scatter a handful of hickory or mesquite wood chips over them for flavor.
- Lightly oil grill grate. Season tuna with salt and pepper, and cook on the preheated grill approximately 6 minutes, turning once. Transfer to a serving platter, and drizzle with freshly squeezed lime juice. Serve immediately.

- Put tuna in a chilled bowl. Add chopped scallion, pickled ginger, soy sauce and pepper. Mix all of the ingredients lightly. Depending on the size burger, you want to divide the mixture into 2 or 4 patties and form your burgers. Heat your grill or skillet over medium flame. Place brioche slices on grill and toast. Remove slices and place patties on grillpan sear to your desired doneness. Rare to well.
GRILLED TUNA BURGERS WITH SPICY MAYO
Steps:
- Add the sesame oil, soy sauce, red pepper flakes and egg to a large mixing bowl. Mix well, then fold in the tuna, red bell pepper and scallions. Mix well to coat everything evenly. Sprinkle with salt and fold in the panko breadcrumbs to lightly bind everything. Carefully form the mixture into 4 even-size patties and set on a platter. Refrigerate so the patties firm up and hold their shape when cooked, 15 to 20 minutes.
- Heat a large nonstick skillet over high heat. Coat the pan with a little vegetable oil and cook the tuna patties 3 minutes per side (when done, the patties will be browned on the outside and medium-rare in the center).
- Grill the hamburger buns over high heat until well charred and crispy.
- Serve the tuna burgers slathered with the Spicy Sriracha Mayo, lettuce leaves and tomato slices on the toasted, seeded hamburger buns, paired with the dry Riesling.
- Combine the mayonnaise, sour cream, Sriracha, sesame oil, lemon juice, honey and scallions in a large mixing bowl. Stir well to combine, season with salt and pepper and place in the refrigerator until ready to serve.
GRILLED TUNA BELLY

- Prepare a grill or preheat the broiler. With a sharp knife remove the thick skin from the outer side of the tuna belly and the white filament-like skin from the inner side. Sprinkle both sides with the herbes de Provence, 1 teaspoon pepper, salt and 1 tablespoon of the olive oil.
- Put the flat bellies on the rack of a clean, very hot grill, and cook for 2 minutes on one side. Turn, and cook for 1 minute on the other side. Transfer to a 170-degree oven, and let rest for 10 minutes. If a grill is not available, cook the fillets under a broiler 3 to 4 inches from the heat for 2 minutes on each side for rare -- pink in the center -- or longer if you prefer your tuna well done.
- Meanwhile, in a bowl combine the remaining 4 tablespoons of olive oil and the remaining 1/4 teaspoon of pepper with the lemon juice.
- Cut the bellies and divide them among six plates. Serve with sauce spooned on top.

JESSICA'S FAMOUS TUNA PATTIES
These amazing baked tuna patties were discovered when the kids were hungry and it was the night before grocery day! I had to do what I could with what we had to avoid getting a "We want (fill in the blank with a fast food restaurant)!" protest from the kids. I made these babies off the top of my head and they were an instant hit. The kids loved them, I loved them, and I was easily able to hide the carrots in them from my husband, so he loved them too!

- Pre-Heat Oven to 375.
- Spread oil over bottom of pan (any metal pan should work, I used a pizza pan that has a lip on it).
- Mix remaining ingredients in a large mixing bowl.
- Divide mixture into 8 equal parts.
- Form mixture into patties and place on the pan.
- Bake patties for 10 minutes.
- Turn patties over. (Be careful they may fall apart easily.).
- Continue to bake for an additional 5-10 minutes until they start to brown.
- Remove and let them sit for 5 minutes to firm.

- For sauce:
- Whisk first 6 ingredients in bowl to blend. Using fine grater, grate in egg yolks. Whisk in oil, then capers. Season with salt and pepper.
- Do ahead: Can be made 1 day ahead. Cover and chill.
- For burgers:
- Combine oil, vinegar, and bay leaves in large heavy-duty resealable plastic bag. Shake to blend. Add tuna. Seal bag; turn to coat. Chill at least 1 hour and up to 2 hours, turning bag occasionally.
- Spray grill rack with nonstick spray and prepare barbecue (medium-high heat). Brush cut sides of rolls with some of tuna marinade. Grill rolls, cut side down, until golden, about 2 minutes. Transfer rolls to work surface. Grill tuna, with some marinade still clinging, until slightly charred but still pink in center, about 2 1/2 minutes per side.
- Place tuna on roll bottoms. Top with dollop of sauce, then roll tops. Serve, passing remaining sauce separately.
