GRILLED TURKEY REUBENS
A twist on the old favorite for those who don't have Thousand Island on hand. You've never had a homemade sandwich quite like this!

Steps:
- Preheat a large skillet over medium heat.
- Lightly coat one side of each slice of bread with olive oil; lay out the slices, oiled side down, on a plate. Spread 1 teaspoon mayonnaise and 1 teaspoon of hot sauce on each slice. Top two of the slices of bread with a slice of Swiss cheese and 1/4 cup of sauerkraut. Arrange the turkey on the other two slices of bread. Bring the two halves together.
- Fry the sandwiches in the preheated skillet until the bread is golden brown on both sides and the cheese has melted.

Steps:
- Spread dressing on one side of each slice of the bread.
- Layer sandwiches:turkey breast, sauerkraut, caraway seeds and cheese.
- Cover with a second piece of bread.
- Heat a nonstick skillet to med-high; lightly coat with cooking spray.
- Place sandwich in pan.
- Cook 1 minute.
- Spray top side of sandwich, flip and cook an additional minute until crispy and cheese is melted.
- Cool slightly and cut in half.
GRILLED TURKEY REUBEN SANDWICHES
Not a fan of corned beef? This year make delicious turkey reuben sandwiches for St. Patrick's Day instead! Deli turkey, a delicious spicy sauce, swiss cheese, and sauerkraut griddled up on caraway rye bread. Yum!

Steps:
- Lay the two pieces of bread on a prep board. Spread the Thousand Island dressing or homemade spicy sauce on one slice.
- Lay one slice of cheese on each slice of bread. For the best melted stick, see the assembly instructions in the post above.
- Drain the liquid from the sauerkraut by patting it with a paper towel and then spread it on one side of the sandwich.
- Lay the turkey down and press the sandwich together.
- Spread softened butter over the top of the sandwich.
- Heat the remaining butter in a non-stick skillet over medium heat. Once the butter is melted, lay the prepared sandwich non-buttered side down.
- Cook the sandwich for 2 - 3 minutes and then flip it over with a spatula to griddle the other side. You may wish to press the sandwich with the spatula to ensure even browning and to help the melting cheese to stick the ingredients together.
- Cook until golden brown on both sides. Serve immediately.
TURKEY REUBEN SANDWICH
Steps:
- Gather the ingredients.
- In a bowl, combine the mayo, curry ketchup, egg, peppers, mustard, Sriracha, pickle relish, and garlic.
- Stir until everything is incorporated, season with salt and pepper to your liking, and set aside.
- Gather the ingredients.
- Take one slice of marbled rye and smear on some of your homemade Thousand Island dressing.
- Add a slice of cheese, the turkey, sauerkraut, and a second slice of cheese.
- On the remaining slice of marbled rye, give it a hearty smear of the Thousand Island.
- Close the sandwich. Butter both sides with the butter and set aside.
- Put the sandwich on a medium-sized skillet and turn the heat to medium.
- Let the sandwich cook for a few minutes on each side until the cheese starts to melt and the bread begins to crisp up.
- Once both sides are evenly browned, take it off the skillet and set aside for a minute so the cheese doesn't ooze out when you slice it.
- Slice the sandwich in half.
- Serve hot with an extra side of Thousand Island dressing.

- Warm the sauerkraut and turkey, separately, in a microwave-safe bowls for 30-seconds; set aside. Spread butter generously on one side of each slice of rye bread, then spread the thousand island dressing on the other side. Divide the sauerkraut, turkey, and Swiss cheese on two slice of bread with the butter-side down. Stack the remaining two slices of bread with the butter-side up on top.
- Heat a large skillet over medium-low heat. Arrange the sandwiches on the skillet and grill until lightly browned and the cheese is melted, about 3 minutes on each side.

- Mix 1/2 cup mayonnaise and chili sauce in small bowl. Mix 1/2 cup mayonnaise, mint, and next 4 ingredients in another small bowl.
