AGRODOLCE WINGS

4 cups red wine vinegar
1 shallot, halved
1 1/4 cups sugar
1 tablespoon black peppercorns
1 tablespoon mustard seeds
1 teaspoon kosher salt
Vegetable oil, for frying
2 dozen chicken wings, split at the joints, tips removed, patted dry
Kosher salt
1 cup cornstarch
2 teaspoons baking powder
1 teaspoon kosher salt
1/2 cup brown rice flour
1/2 cup cornstarch
1 teaspoon baking powder
1/2 cup vodka
1/4 bunch flat-leaf parsley leaves
1/2 bunch basil leaves

Steps:

  • For the agrodolce sauce: Combine the vinegar, shallot, sugar, peppercorns, mustard seeds and salt in a high-sided skillet. Bring to a boil over high heat and cook until reduced by half and syrupy, 10 to 12 minutes. Remove from the heat, strain into a large heatproof bowl and set aside.
  • For the wings: Line 3 rimmed baking sheets with wire racks.
  • Pour 6 inches of oil into a large Dutch oven. Clip a deep-fry thermometer to the side and heat the oil to 375 degrees F (or use a deep fryer).
  • Meanwhile, divide the wings between 2 of the prepared baking sheets. Sprinkle the wings with salt.
  • For the coating: Whisk together the cornstarch, baking powder and salt in a medium bowl. Dredge each wing in the cornstarch mixture and return to the racks.
  • For the batter: Whisk together the rice flour, cornstarch and baking powder in another medium bowl. Whisk in 1/2 cup water and the vodka. Working in batches of about 6 wings, dip each dredged wing into the batter and then place directly into the hot oil. Fry until cooked through, about 5 minutes. Remove the fried wings to the third prepared baking sheet. Continue dipping and frying until all the wings are cooked. Keep the oil over the heat.
  • For the garnish: Line a plate with paper towels. In the same oil the wings cooked in, carefully add the parsley and basil leaves and fry until crinkly and darker in color, about 15 seconds. (Be careful! The oil may spatter. When adding, step back and away from the oil.) Remove to the prepared plate.
  • Once all the wings are fried, use tongs to dip each wing into the agrodolce sauce and place on a platter. Garnish with the fried herbs and get ready to get sticky!

6 ½ cups ice
⅔ cup salt
Pinch of sugar
2 sprigs thyme
1 fresh bay leaf
½ tbsp peppercorns
1 ½ cups sliced onion
3 garlic cloves
4 cups hot water
5 garlic cloves, sliced
2 tbsp olive oil
1 tbsp chopped Calabrian chile
1 cup honey
½ cup hot sauce
¼ cup red wine vinegar
Pinch of xanthan gum
1 lb chicken wings (4 to 5 wings)
½ cup agrodolce
1 green onion, top sliced into matchsticks, bottom also sliced
1 tbsp matchstick-size slices Fresno chile
1 tbsp sliced red onion
Juice of half a lemon
1 tsp extra-virgin olive oil
Salt

Steps:

  • Make the brine: Place ice in a large container.
  • Place remaining ingredients and 4 cups hot water in a pot and bring to a boil. Remove from heat and pour over ice to cool.
  • Place chicken in brine for 2 hours.
  • Make the agrodolce: In a pan, cook garlic in oil over medium heat for 1 minute. Add chile and cook for 1 minute. Add honey, cover with lid, and cook for 7 minutes or until an instant-read thermometer registers 240°.
  • Remove lid and slowly add hot sauce and vinegar. Cook for 12 minutes. Whisk in xanthan gum and cook for 5 minutes. Set aside.
  • Preheat oven to 375° and prepare a grill for medium heat (350° to 450°).
  • Grill wings until cooked through.
  • Toss wings in agrodolce, then arrange on a baking sheet and bake for 5 minutes.
  • Arrange wings on a platter and top with green onion, Fresno chile, red onion, lemon juice, olive oil, and salt to taste.

1 cup white balsamic vinegar
1/2 cup sugar
1 tablespoon crushed red pepper
1 teaspoon kosher salt
2 garlic cloves, minced
2 tablespoons unsalted butter

Steps:

  • Combine the vinegar, sugar, crushed red pepper, salt and garlic in a medium saucepan over medium-high heat and bring to a boil. Reduce the heat and simmer until the sauce thickens and can coat the back of a spoon, 12 to 15 minutes. Remove from the heat, then add the butter and whisk to combine. Adjust the seasoning if necessary. Use on wings cooked to your preference.

1/2 cup balsamic vinegar
2 cloves garlic, peeled and smashed
4 sprigs fresh thyme
3 tablespoons honey, such as acacia
3 tablespoons unsalted butter, at room temperature
4 center-cut pork loin chops, bone in (about 12 ounces each)
Kosher salt and freshly ground black pepper
2 tablespoons olive oil

Steps:

  • Combine the vinegar, garlic and thyme in a small saucepan. Bring to a simmer over medium heat. Continue to simmer until reduced by half, about 5 minutes. Add the honey and simmer until the mixture has thickened slightly, another 3 to 4 minutes. Stir in the butter and set aside.
  • Preheat a grill pan over medium-high heat.
  • Season the pork chops evenly on both sides with 1 teaspoon salt and 1/4 teaspoon pepper. Drizzle with the olive oil and place on the hot grill pan. Grill the first side until nicely browned, about 5 minutes. Flip the chops and grill for an additional 5 minutes on the second side. Baste the chops with some of the sauce and then continue basting and flipping until the chops are caramelized and slightly charred and the meat registers 150 degrees F on an instant-read thermometer. Remove the chops to a platter and allow to rest for 10 minutes. Serve drizzled with the remaining sauce.

1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
3 pounds whole chicken wings
6 tablespoons unsalted butter
1/3 cup hot sauce
1 tablespoon apple cider vinegar
1 tablespoon honey

Steps:

  • In a small bowl, combine the salt, pepper and garlic powder. In a large bowl, toss the wings with the salt mixture to evenly coat.
  • Preheat a gas grill to medium heat (about 350 degrees F).
  • Place the wings on the grill, crowding them together so that they are all touching (this goes against the conventional wisdom of giving meat room so it doesn't steam; you want them to steam so that they stay moist). Grill, flipping the wings every 5 minutes, for a total of 20 minutes of cooking.
  • In the meantime, heat the butter, hot sauce, vinegar and honey in a saucepan over low heat and whisk to combine.
  • In a clean large bowl, toss the wings with the sauce. Turn the heat up on the grill to medium high. Use tongs to remove the wings from the sauce and put them back on the grill until the skins crisp, 1 to 2 minutes per side. Put the wings back in the bowl with the sauce, toss and serve.

An array of antipasti is just the thing for summer entertaining! Flame-kissed eggplant and squash are marinated in a sweet-and-sour sauce studded with plump raisins and briny capers, then served alongside cured meats, burrata, goat cheese, and toasted sesame bread.

2 medium zucchini (1 pound), cut into 1/2-inch slices
2 medium yellow or pattypan squashes (1 pound), cut into 1/2-inch slices
2 medium eggplants (2 pounds), cut into 1/2-inch rounds
Kosher salt and freshly ground pepper
3 tablespoons extra-virgin olive oil, plus more for drizzling
1 large yellow onion, peeled, halved, and thinly sliced (3 cups)
6 tablespoons sugar
1 cup red-wine vinegar
1/4 cup golden raisins
2 tablespoons capers, rinsed and drained
4 fresh bay leaves
1/2 pound sesame bread (from a 1-pound loaf), cut into thick slices
12 ounces assorted cured meats, such as prosciutto cotto, capocollo, and prosciutto di Parma
8 ounces burrata
6 ounces goat cheese, room temperature
Flat-leaf parsley leaves, for serving

Steps:

  • Preheat grill for direct-heat cooking. Season zucchini, squashes, and eggplants with salt and pepper. Lightly drizzle with oil; grill until tender, about 3 to 4 minutes per side (if browning too quickly, move to cooler part of grill).
  • In a large skillet, heat oil over medium. Add onion and 2 tablespoons sugar. Season with salt and cook, stirring often, until lightly browned, 6 to 8 minutes. Remove from heat and stir in vinegar, remaining 1/4 cup sugar, and 1 cup water. Return to medium high heat and cook until reduced by half, 9 to 10 minutes. Stir in raisins, capers, and bay leaves; season with salt. Let cool slightly. Arrange grilled vegetables in a 9-by-13-inch baking dish or other shallow vessel and pour marinade mixture over top. Drizzle generously with oil. Let cool completely, cover with plastic, and refrigerate at least 12 hours and up to 2 days.
  • When ready to serve, toast bread on grill or under broiler, flipping once, until lightly charred, 2 to 3 minutes total. Drizzle with oil. Arrange marinated vegetables and cured meats on a platter. With kitchen shears, cut burrata into quarters; drizzle generously with oil. Season with salt and pepper. Layer toast with cheeses, and top with cured meat, marinated vegetables, and parsley.

  • Add one 10-oz. bag frozen mixed berries, ¼ cup honey, 3 Tbsp. apple cider vinegar, and ½ cup water to shallot mixture in pan and cook, stirring often to prevent sticking and burning, until berries are completely softened and falling apart and agrodolce is thickened, 15–20 minutes. Taste and season with more salt, pepper, and/or vinegar if needed. Remove from heat and set aside.
  • Prepare a grill for medium heat. (Or, if you don’t have a grill, heat broiler with rack in upper third of the oven.) Pat 2 lb. chicken wings, drumettes and flats separated, dry with paper towels and arrange on a rimmed baking sheet. Sprinkle wings all over with remaining 2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt and ½ tsp. freshly ground black pepper, pressing to adhere. (Lightly coat baking sheet with oil if broiling wings.)
