SESAME AND GINGER BEEF SANDWICHES

Sesame and Ginger Beef Sandwiches image

Loosely inspired by bing, a style of Chinese pastry that varies from a thin crepe to a thick flatbread, this recipe uses refrigerated pizza dough, which is cooked in a pan until golden then halved and filled with roast beef stir-fried with sesame, ginger and scallion, plus a tangy spicy slaw.

Provided by Food Network Kitchen

Yield 4 servings

Number Of Ingredients 12

1 pound refrigerated pizza dough (fresh, not frozen)
3 tablespoons vegetable oil, plus more for greasing
2 tablespoons sesame seeds
Kosher salt
2 cups shredded coleslaw mix
1 tablespoon rice wine vinegar
1/4 to 1/2 teaspoon chili oil
6 ounces deli-sliced roast beef
1 tablespoon toasted sesame oil
3 scallions, thinly sliced
1/2 teaspoon grated peeled ginger
1/2 cup fresh cilantro

Steps:

  • Microwave the pizza dough on 50 percent power to soften, 1 to 2 minutes, then let rest 5 minutes. Grease a large plate with vegetable oil; shape the dough into a 9-inch round and place on the plate. Sprinkle with 1 tablespoon sesame seeds and 1/4 teaspoon salt.
  • Toss the coleslaw mix, vinegar, chili oil, and salt to taste in a bowl. In another bowl, toss the roast beef, sesame oil, scallions and ginger.
  • Heat 3 tablespoons vegetable oil in a large nonstick skillet over medium-high heat. Add the dough seed-side down and sprinkle with the remaining 1 tablespoon sesame seeds. Cover and fry, shaking the pan occasionally, until the dough is golden, about 3 minutes per side, turning with tongs. Transfer to paper towels, season with salt and cool.
  • Wipe out the skillet and place over high heat. Add the roast beef mixture and stir-fry until crisp, 1 to 2 minutes. Slice the flatbread in half horizontally. Layer the beef, coleslaw mixture and cilantro on the bottom half. Cover with the top and cut into 4 wedges.
  • Bing is a Chinese flatbread, often used to sandwich meat, eggs or fried dough for breakfast.

BEEF AND GINGER STIR-FRY

Beef and Ginger Stir-Fry image

Want to become 1,000 percent more efficient in the kitchen? Take a cue from restaurant chefs and set up all of your mise en place-that would be your ingredients, sliced and measured out-before you start cooking. You'll go from raw ingredients to a glossy stir-fry in the time it takes to make a pot of rice. How convenient.

Provided by Andy Baraghani

Categories     Bon Appétit     Dinner     Stir-Fry     Steak     Beef     Rice     Soy Sauce     Ginger     Onion     Wheat/Gluten-Free     Tree Nut Free     Peanut Free

Yield 4 servings

Number Of Ingredients 12

1 lb. skirt steak, trimmed, sliced against the grain into 1/4"-thick strips, patted dry
1 tsp. sugar
1 tsp. toasted sesame oil
1 tsp. plus 1 Tbsp. soy sauce
1 tsp. kosher salt, plus more
1 Tbsp. vegetable oil
1 medium sweet onion, sliced into 1/2"-thick rounds
1 (3") piece ginger, peeled, very thinly sliced
Freshly ground black pepper
3 Tbsp. unsalted butter, cut into pieces
1 Tbsp. fresh lemon juice
Cooked rice (for serving)

Steps:

  • Toss steak in a medium bowl with sugar, sesame oil, 1 tsp. soy sauce, and 1 tsp. salt to coat and let sit 20 minutes.
  • Place a large skillet over high heat. Pour in vegetable oil and swirl to coat bottom of pan. The oil should be shimmering and you should see some wisps of smoke-if it's not hot enough, the meat will steam instead of getting deeply browned.
  • Add steak to skillet in an even layer (it's okay to crowd it a bit) and cook, undisturbed, until brown around the edges, about 2 minutes. Turn steak over and add onion, ginger, lots of pepper, and 1/3 cup water. Cook, tossing often, until onion is just tender and ginger is softened, about 2 minutes.
  • Remove skillet from heat and add butter, lemon juice, and remaining 1 Tbsp. soy sauce. Toss until butter is melted and coats steak. Taste and season with more salt if needed.
  • Divide rice among bowls and top with beef stir-fry.

Provided by Cyndi Welch

Categories     Beef Stir-Fry

Time 50m

Yield 8

Number Of Ingredients 17

2 ¼ cups water
1 ½ cups uncooked jasmine rice, rinsed and drained
4 stalks scallions, white and green parts thinly sliced, divided
3 ⅓ tablespoons white wine vinegar
1 pinch salt
3 teaspoons olive oil, divided
2 medium zucchini, halved lengthwise and cut into half-moon slices
1 (8 ounce) package button mushrooms, thinly sliced
4 large carrots, shaved into strips using a vegetable peeler
salt and ground black pepper to taste
6 tablespoons soy sauce, divided
2 tablespoons sesame oil
2 tablespoons white sugar
4 cloves garlic, minced
2 (1 inch) pieces fresh ginger, peeled and minced, or more to taste
2 pounds ground beef
4 teaspoons Sriracha sauce

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to low, cover, and simmer until rice is tender and water has been absorbed, about 15 minutes. Remove from the heat and let sit, covered, for 10 minutes. Gently fluff with a spoon and keep warm.
  • While the rice is cooking, combine scallion whites, vinegar, and salt for the pickled scallions in a small bowl. Set aside to pickle while you start the stir-fry.
  • Heat 1/2 of the olive oil in a large skillet over medium-high heat. Add zucchini, mushrooms, and carrots; season with salt and pepper. Stir-fry until crisp-tender, 3 to 5 minutes.
  • Combine 1/2 of the soy sauce with sesame oil and sugar in a small bowl; whisk until well blended. Pour over vegetables in skillet and toss to coat. Remove vegetable mixture from the skillet and keep warm.
  • Heat remaining olive oil in the same skillet over medium-high heat. Add garlic and ginger and cook until fragrant, about 1 minute. Add beef; cook and stir in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in remaining soy sauce.
  • Ladle rice into bowls. Top with beef, vegetables, and pickled scallions. Sprinkle with scallion greens and drizzle Sriracha over top.

ASIAN GROUND BEEF STIR FRY

Asian Ground Beef Stir Fry image

This is my first ever recipe submission! I actually totally improvised this recipe today and thought it turned out well enough to share. I named it "Asian" because of the soy sauce, sesame oil and ginger. I highly recommend using a cast iron skillet because it holds heat much better than a standard pan which is important for a stir fry. It also helps to add a hint of toasty, smoky flavor. Use any standard cooking potatoes. I actually used 3 small red potatoes. You can also try adding green pepper, peas or chopped tomatoes for more flavor. Feel free to use regular soy sauce but it's saltier, so watch the salt you add during cooking. I always use low sodium due to dietary restrictions. If you like things spicy, add more cayenne.

Provided by Chef MoJoey

Categories     Meat

Time 35m

Yield 4 serving(s)

Number Of Ingredients 14

1 lb ground beef (preferably 80% lean)
1 medium russet potato, peeled and diced
1 medium onion, chopped
4 garlic cloves, minced
3 -4 tablespoons low sodium soy sauce
2 tablespoons rice wine vinegar
2 teaspoons ground ginger
1 tablespoon paprika
1/2 teaspoon cayenne pepper
1 teaspoon sesame oil
salt
ground pepper
olive oil
1 bunch cilantro, small bunch, roughly chopped

Steps:

  • Heat skillet to medium heat and add about 3 tbsp olive oil.
  • Add the onions and a little salt and pepper.
  • Cook a few minutes until onions are almost translucent.
  • Add garlic.
  • Add potatoes and about 1 tablespoons more olive oil.
  • Stir with onions and garlic.
  • Cover skillet and let cook 4-5 minutes, stirring a couple times. Potatoes should now be slightly fork tender.
  • Add ginger, paprika and cayenne and stir.
  • Make a "hole" in the mixture, exposing a small circle of the bottom of the skillet and add sesame oil to it.
  • Stir ingredients well and let cook another couple minutes.
  • Remove ingredients from skillet to a bowl and set aside.
  • Add a little more olive oil and brown the ground beef.
  • Mix in a dash of salt and pepper.
  • Drain liquid, leaving a little bit in the pan.
  • Add the onion/garlic/potato mixture back to pan and combine with beef.
  • Add soy sauce and rice wine vinegar and stir well.
  • Taste mixture and add whatever you think it needs. I usually add a little more ginger at this point. Soy sauce adds tangy/salty flavor, rice wine vinegar is sour, etc.
  • After cooking a couple more minutes, add cilantro and stir well.
  • Serve by itself or over steamed rice.
  • Enjoy!
