1/4 cup chopped onion
2 tablespoons chopped fresh cilantro
1/4 teaspoon coarse (kosher or sea) salt
1 clove garlic, finely chopped
1 small fresh jalapeño chile, seeded, finely chopped
3 ripe large avocados (about 1 1/2 lb) pitted, peeled
2 tablespoons fresh lime juice
1/2 teaspoon coarse (kosher or sea) salt
1/2 teaspoon red pepper sauce
1 clove garlic, finely chopped

Steps:

  • In medium bowl, mix salsa ingredients.
  • In another medium bowl, place avocados; coarsely mash. Stir in remaining guacamole ingredients.
  • Spoon guacamole into shallow serving bowl; top with salsa. Serve with tortilla chips as desired.

This is a green salsa I learned while in Mexico. It is a green salsa with avocado and it is delicious! I always make it when we do carne asada. I am always begged for the recipe. Enjoy!

10 fresh tomatillos, husks removed
2 fresh jalapeno peppers, stems removed
1 bunch fresh cilantro, stems trimmed
3 avocados, peeled and pitted
1 tablespoon garlic powder
salt to taste

Steps:

  • Bring a pot of water to a boil and stir in tomatillos and jalapenos. Boil until tomatillos turn bright green and soft, about 10 minutes.
  • Place cilantro, avocados, cooked tomatillos, and cooked jalapenos into a blender, working in batches if necessary. Blend until smooth, 1 to 2 minutes. Add about 1 tablespoon of tomatillo cooking water, or as needed, if salsa is too thick.
  • Stop the blender, and season the salsa with garlic powder and salt to taste. Blend again briefly to mix in the seasonings. Transfer to a bowl for serving.

5 to 6 Roma tomatoes, diced
8 to 10 scallions, chopped to just past where they turn green
1 cup loosely packed fresh cilantro leaves and stems, finely chopped
1 cup loosely packed fresh cilantro leaves and stems, finely chopped
2 teaspoons red wine vinegar
1 to 2 cloves garlic, finely chopped to almost a paste
Zest of 1 lime and juice of 2 limes
Zest of 1 lime and juice of 2 limes
1/2 jalapeno chile pepper, seeded and finely chopped
1/2 teaspoon kosher salt
1/2 teaspoon ground white pepper
1 ripe avocado, roughly mashed

Steps:

  • Combine the tomatoes, scallions, cilantro, red wine vinegar, garlic, lime zest and juice (to taste) and chile pepper (to taste) in a medium serving bowl. Add the salt and pepper. Stir to combine. Let sit at room temperature for 10 minutes, then stir again.
  • Divide the salsa into 2 bowls. Serve one as traditional salsa. To the other bowl, add the avocado and mix to combine.

TOMATILLO GUACAMOLE SALSA



Tomatillo Guacamole Salsa image

3/4 pound fresh tomatillos (available at specialty produce markets and some supermarkets), husked and rinsed
1/4 to 1/3 cup packed fresh coriander
1 garlic clove
3 avocados (preferably California)

Steps:

  • In a saucepan simmer the fresh tomatillos in salted boiling water to cover for 8 to 10 minutes, or until they are tender, transfer them with a slotted spoon to a bowl, and let them cool. (Alternatively, use a drained 11-ounce can tomatillos, see note above.) In a food processor or blender purée the tomatillos with the coriander to taste, the garlic, and salt to taste and transfer the mixture to a bowl. Halve and pit the avocados, chop the flesh, and stir it into the tomatillo mixture. Serve the salsa with tortilla chips or with hamburgers, grilled meat, or fish.

1 cup heavy whipping cream
1/3 cup mayonnaise
4 teaspoons finely chopped onion
2 envelopes unflavored gelatin
1/4 cup cold water
3 tablespoons minced fresh cilantro
SALSA:
5 plum tomatoes, seeded and diced
2 medium sweet red peppers, diced
1 to 2 medium jalapeno peppers, seeded and minced
1/4 cup finely chopped onion
4 teaspoons lime juice
4 teaspoons olive oil
1/8 to 1/4 teaspoon salt

Steps:

  • In a food processor, cover and process the avocados, lemon juice, chili powder, salt and pepper until smooth. Place in a bowl; add tomatoes, sour cream, cream, mayonnaise and onion. , In a small saucepan, sprinkle gelatin over cold water; let stand 1 minute. Cook and stir over low heat until gelatin is dissolved. Stir into avocado mixture. Pour into a 6-cup mold coated with cooking spray; sprinkle with cilantro. Chill until set. , Meanwhile, combine salsa ingredients; chill. To serve, unmold mousse onto a platter; serve with the salsa.
