SLOW COOKER: Put in the crock pot on LOW for 6 hours! Strain the juices and reduce them and pour back over the pot roast; serve with mashed potatoes. You can substitute the beer with beef broth or non-alcoholic beer.

- Preheat oven to 300 degrees F. (Or you can also use stove top or crock-pot.)
- Heat 2 Tbsp. oil in a wide frying pan over a high heat. Brown the meat on all sides; heavily salt and pepper both sides. [Optional to pat the beef with flour before browning for a thicker gravy.]
- Remove the meat and set aside.
- In a separate small bowl, add to 1 1/2 cups of hot water the tomato paste, instant coffee, and chili flakes. Mix well.
- In the same frying pan, heat the remaining oil and sauté the garlic for 1-2 minutes, adding the tomato paste mixture. Mix together and cook for a few minutes (will be thick).
- Chop the onions, and place in the bottom of a Dutch oven. Place the cooked piece of meat on top. Spread the paste on top of the meat. Add fresh herbs for additional flavor.
- Place the chopped carrots on top of the meat and sauce. Pour the Guinness beer around the meat.

- Mix beer, cream of mushroom soup, onion soup mix, onion, and garlic together in a slow cooker. Season beef chuck roast with salt and pepper, and place in the slow cooker. Arrange the carrots and potatoes around the meat.

- 1. NOTE: I used a 6 quart HAMILTON BEACH STAY OR GO Crockpot, and it held my complete recipe. Although I cooked this roast on HIGH and It was ready in 5 hours, you may want to cook it on LOW FOR 8 OR 9 HOURS or longer. THIS CROCKPOT HAS A WARMING FEATURE AND WILL KEEP THE FOOD WARM FOR A LEAST 14 ADDITONAL HOURS AFTER COOKING. This is my favorite crockpot of all the ones that I have, I use this one the most. It was a gift from my daughter Briana in 2009.
- 2. I prefer to cut this cut of meat into serving size portions before COOKING for easier serving.
- 3. Season meat with desired spices and allow to marinate if time permits for an extra boost of flavor, at least an hour or two. I prefer to bring my roast to room temperature before cooking.
- 4. Dredge roast in flour and remember to coat all sides of the meat. Reserve the remaining flour to add to crock pot.
- 5. These are the main ingredients starring in this recipe.
- 6. Prep the veggies for the roast.
- 7. Line the bottom of the crock pot with the vegetables. Then add in the meat portions, onion soup mix, brown sugar, remaining flour, and beer.
- 8. NOTE: I DID STIR THE MEAT AFTER 3 HOURS OF COOKING, BUT IT IS NOT NECCESSARY. THIS IS WHAT THE MEAT & VEGGIES LOOKED LIKE AT THAT TIME.
- 9. Close lid and use directions with your crockpot to cook roast until done. If you are not in a big hurry you may choose the low setting for cooking to cook for a longer period of time. I needed 5 hours on high and my roast was done and the vegetables were tender.
- 10. Serve and enjoy with your favorite sides, because this is a very tasty and comforting meal.
GUINNESS BRAISED POT ROAST

- Heat a large Dutch oven and add a tablespoon of olive oil.
- If you have a big piece of meat, cut it in half or in quarters.
- On high heat, brown each side of the meat and sear it so you get burnt little bits stuck to the bottom of your pan. This will create deep flavor!
- Add the onions all around the meat, and saute for a few minutes, or until the onions begin to soften. Turn the heat to medium if the onions are scorching, but keep stirring them around.
- Once the onions are near translucent, pour both bottles of Guinness over the meat.
- Add the thyme and other spices and stir.
- Cover and cook on low heat, simmering, for about 2 hours. At this point, your meat should shred slightly when poked with a fork. If it doesn't, let it cook for another half hour, and check again.
- Once the meat is at the just shredding point, make a slurry of the cornstarch and a bit of water and poor into the pot and gently stir.
- The sauce should thicken a bit as it continues to cook over the next few minutes.
- Season the gravy with salt and pepper to your liking.
- Serve with mashed potatoes and veggies for true comfort food!

BEER-BRAISED CHUCK ROAST AND ONIONS

- Put oven rack in middle position. Preheat oven to 325F. Pat beef dry and rub with 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Heat oil in oven proof, 5-quart, wide heavy pot over medium high heat until hot - not smoking - and brown beef on all sides, about 15 minutes total. Transfer beef to a plate.
- Add onions to pot and saute, stirring, until pale golden, about 10 minutes. Add garlic, thyme, rosemary, and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring, for two minutes. - Bring the beef to room temperature before you handle it.
- Mix flour, salt and pepper and coat the beef all over.
- Preheat the oven to 275-300 F (depending on your oven's calibration).
- Heat a Dutch oven or similar heavy duty oven safe pot with a lid over medium-high heat. Add cooking oil and sear beef on all sides until nicely browned. Remove temporarily and lower the heat to medium.
- Saute the onions briefly, add the tomato paste and minced garlic and give everything a nice stir, cook about 1 minute. Deglaze with some porter and scrape brown bits from the bottom of the pot. Add the rest of the porter, then the beef broth, brown sugar and thyme. Stir.

- Check after 2 hours to make sure that there is sufficient liquid remaining. If needed add a bit more ale or stock or water. Continue braising until the beef is very tender** and can easily be broken up with a fork.
- Reserve the juices to use in gravy (optional) and break up the roast before serving.

- Heat the oil in a large flameproof casserole and brown the meat on all sides; remove from pan and drain.

- Place the beef in a roasting pan and pour the beer over the meat. Cover the pan with plastic wrap, and marinate in the refrigerator overnight, turning once.
- Preheat an oven to 250 degrees F (120 degrees C).
- Remove the roast from the stout and pat dry. Heat the olive oil in a large frying pan over medium-high heat. Brown the roast on all sides. Set the browned roast on plate.
- Crush the rosemary, thyme, steak seasoning, and pepper in a mortar and pestle. Add the minced garlic and stir to make a paste. Spread the paste over the outside of the roast. Place the roast back into the roasting pan with the stout and cover loosely with foil. Bake in the preheated oven for 2 hours. Add the potatoes to the roasting pan and leave off the foil to let the roast get a crispy coating.
- Bake to your desired degree of doneness, or an internal temperature of 145 degrees F (65 degrees C) for medium, about another hour. Remove from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area 20 minutes before slicing.
- Pour the pan juices into a pot and bring to a boil over medium heat. Simmer until the juices have reduced and thickened, about 10 minutes. Season to taste with salt and pepper. Strain the juices and serve with the beef and roasted potatoes.

- Cut roast into large 2 - 2 1/2" chunks. Trim excess fat while prepping.
- Cut unpeeled carrots into 2 inch pieces and cut onion into eighths.
- Place beef pieces in bowl, salt & pepper aggressively and sprinkle with brown sugar. Allow beef to rest for a few minutes if time permits.
- Preheat oven to 275 degrees F.
- Heat 2 tablespoons oil in heavy dutch oven over medium high heat until the oil shimmers. Brown beef in three batches, making sure all sides of the beef cubes are seared. Remove beef to platter.
- Add remaining 2 tablespoons of oil to pan to heat. Add carrot and onion and cook over medium high heat for 4 to 5 minutes until slightly browned. Sprinkle flour over vegetables then stir and cook for another 2 - 3 minutes.
- Add Guinness to pan and scrape brown bits from bottom. Add beef broth and return beef to pan. Bring to a boil. Once beef comes to heat, cover tightly with lid, and place in preheated oven. Cook for at least 3 hours, checking occasionally that the juice is holding up.
- If the gravy is too thin, remove the lid from the pan and turn up the heat to 350 degrees F for the last half hour of cooking.
INSTANT POT POT ROAST (TAVERN STYLE)

- Set Instant Pot on "Saute" mode and allow to heat until the display reads "HOT".
- Meanwhile, combine flour salt and pepper in a large bowl and place beef into the seasoned flour, coating the entire roast. Reserve remaining flour.
- Add oil to the Instant Pot, heat until it shimmers, and add roast to the pan, cooking until it's browned on all sides. Add remaining flour to the pot, followed by the onions. Stir to combine and cook until onions start to become tender and flour starts to brown.
- Pour the beer and beef broth over the meat and onions, followed by the carrots. Stir to combine and place lid on the Instant Pot.

- Remove roast from the post and place on a cutting board. Set aside.
- Combine gravy mix with cream and whisk until combined. Slowly whisk gravy mixture into the juices in the pot and bring to a simmer to thicken.
- Cut meat into smaller portions and place back into the gravy. Serve over mashed potatoes, pasta or rice and top with french fried onions and chopped fresh parsley.
