- For making the rice khichu, in a deep non-stick pan, take cumin seeds. Also, you can toss some sesame seeds for an added flavour. Add green chillies. You can add more or less chillies as per the spice level you can handle. Alternatively, you can add green chilli paste or even put some ginger to make the khichu recipe more delightful. Add soda bi-carb and salt. My grandmother makes use of papad khar while preparing the khichu. Also, be cautious while adding salt as soda will also make khichu a bit salty. Pour 4 cups of water and mix well. While you are stirring, within a minute, the rice flour will absorb most of the water and becomes a thick, sticky dough. Khichu can be prepared with other flour like bajra flour, jowar flour, nachni flour or whole wheat flour. For variation, you can even use a combination of flour. Cook on a low flame for another 3 to 4 minutes or till the mixture leaves the sides of the pan, while stirring it continuously to ensure that it is not sticking to the bottom of the pan. Switch off the flame and it is ready to serve! Divide the gujarati rice khichu into 4 equal portions.
