One 750-milliliter bottle red wine, such as Cabernet
1 cup diced carrots
1 cup diced Spanish onions
1 cup chopped celery
8 sprigs fresh thyme
6 cloves garlic
2 bay leaves
6 chicken thighs, bone-in and skin-on
2 cups button mushrooms, cleaned and cut in half
2 tablespoons olive oil
Kosher salt and freshly cracked black pepper
1/2 cup all-purpose flour
2 tablespoons canola oil
8 ounces thick bacon, cut into 1/2-inch lardons
2 cups frozen pearl onions, thawed (they can be left to thaw overnight during prep)
1 1/2 cups chicken stock
Buttered egg noodles, for serving
1 bunch fresh parsley, chopped

Steps:

  • In a large resealable container, combine the red wine, carrots, onions, celery, thyme, garlic and bay leaves. Add the chicken thighs, seal the container and marinate in the refrigerator overnight.
  • When ready to cook, preheat the oven to 400 degrees F.
  • Toss the mushrooms with the olive oil on a baking sheet and roast until brown, 10 to 15 minutes. Set aside.
  • Drain the chicken and vegetables thoroughly in a colander, reserving the wine mixture. Pat the chicken dry with a paper towel (reserve the vegetables and aromatics). Season the chicken with salt and pepper and transfer to a clean bowl. Add the flour and toss until thoroughly coated.
  • In a large Dutch oven, heat the canola oil over medium-low heat. Add the bacon and cook, stirring often, until caramelized and the bacon has released its fat, 5 to 8 minutes. Set the lardons aside. Turn the heat up to medium high and shake the excess flour off the chicken. Brown the chicken on all sides, 2 to 3 minutes per side. Remove the chicken and set aside.
  • Add the pearl onions and drained vegetables and aromatics to the same pot and cook over medium heat until caramelized, 8 to 10 minutes. Add the reserved red wine mixture and cook until reduced by half, 10 to 15 minutes. Add the chicken stock and bring to a simmer. Season with salt and pepper. Return the chicken to the pot and cover.
  • Transfer to the oven and cook until the chicken is tender and the sauce has thickened, 30 to 40 minutes. If necessary, finish the dish on the stove by simmering it uncovered to reduce the mixture further, depending on how thick you'd like the sauce.
  • Serve with buttered egg noodles on the side and chopped parsley. Garnish with the reserved lardons and mushrooms.

3 tablespoons extra-virgin olive oil
2 cups all-purpose flour
½ teaspoon salt
½ teaspoon ground black pepper
1 cup milk
2 pounds skinless, boneless chicken breast halves
1 (8 ounce) package button mushrooms, sliced
2 cups halved baby carrots
1 onion, chopped
2 cups red wine
2 cups low-sodium chicken broth, or as needed
2 teaspoons Italian seasoning
½ teaspoon dried rosemary
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat. Mix flour, 1/2 teaspoon salt, 1/2 teaspoon pepper together in a shallow bowl. Pour milk into a separate bowl. Dip chicken in the milk, allowing excess milk to drip back into bowl. Dredge chicken through flour mixture until evenly coated.
  • Cook 1/2 of the chicken in the hot oil until browned, 2 to 3 minutes per side. Remove chicken from pot and brown remaining chicken. Return all the chicken to the pot.
  • Mix mushrooms, carrots, and onion into chicken, stirring gently to distribute vegetables among the chicken. Pour wine over chicken and vegetables, stirring with a wooden spoon to scrape up any browned bits from bottom of pot. Add enough chicken broth to nearly cover the chicken and vegetables.
  • Stir Italian seasoning, rosemary, salt, and pepper into broth mixture; bring to a boil. Cover pot, reduce heat to low, and simmer, stirring occasionally, until chicken is cooked through, about 1 hour. Remove lid and turn heat up to medium-high; boil, stirring occasionally, until sauce is reduced and thickened, about 15 minutes.

Everything from the chicken and bacon to the mushrooms and cannellini beans roasts on a single baking sheet. Serve up this chicken stew with mashed potatoes for a cozy Sunday supper or an elegant dinner party.

4 medium carrots, sliced
1 large shallot, thinly sliced
4 cloves garlic, minced
3 tablespoons olive oil
1 teaspoon kosher salt, divided
½ teaspoon freshly ground black pepper
4 slices bacon, cut into ½-inch (1 1/4 cm) pieces
4 bone-in, skin-on chicken thighs
½ cup chicken stock, divided
4 sprigs fresh rosemary
8 sprigs fresh thyme
1 ½ cups mushroom, sliced
1 can cannellini bean, drained
½ cup pinot noir wine
4 cups mashed potato, warmed

Steps:

  • Preheat the oven to 400°F (200°C).
  • On a rimmed baking sheet, combine the carrots, shallot, garlic, olive oil, ½ teaspoon salt, and the pepper. Toss until well coated, then spread in an even layer.
  • Arrange the bacon and chicken thighs on top of the carrots and season the chicken with the remaining ½ teaspoon salt. Drizzle with ¼ cup (60 ml) of chicken stock. Top with the rosemary and thyme.
  • Roast the chicken and vegetables for 20 minutes.
  • Reduce the oven temperature to 350°F (180°C). Remove the pan from the oven and add the mushrooms and cannellini beans. Drizzle with the remaining ¼ cup (60 ml) chicken stock and the Pinot Noir.
  • Return to the oven and bake for 20 minutes. Turn the broiler to high and broil for 4-5 minutes, until the bacon and chicken skin are crispy and golden brown.
  • Spoon the coq au vin over the mashed potatoes and serve warm.

1/4 cup all-purpose flour
1 teaspoon dried thyme
1 teaspoon salt, divided
6 boneless skinless chicken thighs (4 ounces each)
1 tablespoon olive oil
6 cups quartered cremini mushrooms
2 cups sliced fresh carrots
3 pieces Canadian bacon, chopped
1 tablespoon tomato paste
1 cup chicken broth
1 cup dry red wine
Chopped fresh thyme, optional

Steps:

  • In a shallow dish, combine flour, thyme and 1/2 teaspoon salt. Dip chicken in flour mixture to coat both sides; shake off excess., In a Dutch oven or high-sided skillet, heat oil over medium-high heat. Cook chicken until golden brown, 3-4 minutes per side. Remove from pan; keep warm. , In same pan, cook mushrooms, carrots, bacon, tomato paste and remaining 1/2 teaspoon salt for 2 minutes. Add broth and wine; bring to a boil. Return chicken to pan; reduce heat. Cook until chicken reaches 170° and carrots are just tender, 8-10 minutes. If desired, top with chopped fresh thyme.

This dish should be prepared at least one day before serving which puts it high on my list of dishes to prepare for company. All of the work is done before hand. The recipe is from a restaurant in Julienas France, "Le Coq au Vin" and I found it in Bon Appetit.

1 (750 ml) bottle beaujolais wine
1 large onion, thinly sliced
1 large carrot, thinly sliced
5 sprigs parsley
4 sprigs thyme
1 bay leaf
5 lbs broiler-fryer chickens, cut up
7 slices bacon
2 tablespoons butter
2 garlic cloves, finely chopped
2 tablespoons flour
20 white pearl onions, blanched in boiling water 2 minutes and peeled
1 lb small whole mushroom
8 slices baguette, 3/4 in thick toasted
chopped fresh parsley

Steps:

  • In a large bowl, combine the first 5 ingredients and refrigerate covered overnight.
  • Transfer chicken to a plate.
  • Strain and reserve the wine and veggies in separate containers.
  • In a large heavy pot over medium heat, cook bacon until crisp.
  • Transfer bacon to a paper towel to drain, then crumble.
  • Reserve 2 tablespoons of drippings in a small bowl.
  • Discard remaining drippings.
  • In the same pot,combine 1 tablespoon butter with 1 tablespoon drippings over medium high heat.
  • Add chicken in batches and brown on all sides,about 8 minutes per batch.
  • Transfer chicken to a large bowl.
  • In the same pot, add the reserved veggies and herbs, brown well, about 8 minutes.
  • Mix in the garlic and the flour.
  • Cook, stirring about 2 minutes.
  • Whisk in the wine and return the chicken to the pot.
  • Cover and simmer about 45 minutes, or until chicken is cooked through.
  • Meanwhile, in a large heavy skillet over medium heat, saute the onions until brown, about 10 minutes.
  • Add the mushrooms and saute until golden, about 10 more minutes.
  • Transfer chicken to a bowl.
  • Strain cooking liquid and return to the pot.
  • Boil until reduced to saucy consistency, about 8 minutes.
  • Season.
  • Add chicken, onions, mushrooms and bacon to the sauce.
  • Stir to serving temperature.
  • Serve topped with toast and sprinkled with parsley.
