BAKED HALIBUT WITH WINE AND HERBS

- Preheat oven to 450 degrees F.
- In a medium gratin dish or baking dish, make a bed of herbs with the thyme, parsley and bay leaves, scatter the garlic on top. Reserve 4 parsley sprigs, for garnish. Season both sides of the fish with salt and pepper and lay on top of the herbs. Add in the vermouth, and drizzle 2 tablespoons of the oil over the fish, cover loosely with foil. Bake until the fish is opaque, about 20 to 22 minutes.
- Carefully, pour the pan juices into a small saucepan and set the fish aside. Keep the garlic and 4 thyme sprigs for garnish. Bring the sauce to a boil, over high heat, reduce by about 1/2, about 5 minutes. Whisk in the remaining 2 tablespoons olive oil and the lemon juice. Season with salt and pepper, to taste. Set aside. De-bone the fish; running a spoon handle along each side of the center bone, then lift the bone out. Peel side off and discard. Divide fish steaks in half crosswise, among 4 serving plates. Pour sauce over fish and serve with a dollop of tapenade, if using, on top and garnish with the thyme sprigs, garlic, and tomatoes.
- To make the tapenade: Combine the olives, oil, thyme, and lemon zest, stir to combine. Season with pepper and set aside.
HALIBUT WITH CREAMY GARLIC AND HERB SAUCE
This fresh dish is sure to please at your next dinner party! The red pepper flakes add a little kick, and toasted almonds add a delicious crunch. I like to serve this with orzo pasta or rice pilaf. - Preheat oven to 350 degrees F (175 degrees C). Grease a shallow baking dish.
- Rub the halibut fillets with 1 tablespoon of lemon juice, then season with salt and pepper. Place the fillets into the prepared baking dish, then press the cilantro leaves onto the top of the halibut. Bake the halibut in the preheated oven until the fish flakes easily with a fork, 15 to 20 minutes.
- Meanwhile, melt the butter in a skillet over medium heat. Stir in the green onions, red bell pepper, garlic, and red pepper flakes until the vegetables have softened, about 5 minutes. Pour in the white wine, and season with dill and tarragon. Simmer for 2 minutes, then add the chicken broth, half-and-half, Parmesan cheese, and remaining 1 tablespoon of lemon juice; season with salt and pepper to taste. Bring to a boil over medium-high heat, then dissolve the flour into the water, and stir into the boiling sauce. Return to a boil, then reduce the heat to medium-low, and simmer until the sauce has thickened, about 10 minutes. Spoon the sauce over the halibut to serve.

Steps:
- Rinse the halibut steaks and pat dry. Season with salt and pepper, then dust with flour.
- Melt the butter in a large skillet over medium-high heat. Fry the halibut steaks in the butter for 4 to 5 minutes, until nicely browned. Remove from the skillet and keep warm.
- Reduce the heat to medium, and stir the wine into the pan, scraping up any browned bits stuck to the bottom. Mix in the lemon juice, then stir in the cream. Simmer for 2 to 3 minutes or until it starts to thicken. Season with parsley, basil and capers, and stir for another minute. Serve halibut with sauce spooned over it. Garnish with additional parsley if desired.

- Sprinkle cayenne over fillets.
- Heat oil in large frying pan over medium heat, add halibut and cook for 5 minutes.
- Carefully turn fish over and add remaining ingredients, except the butter.
- Cook for a further 5-7 minutes or until fish is cooked.
- Remove fish from pan and cover with foil.
- Increase heat to high and cook sauce until it is slightly thickened.
- Stir in butter until melted, pour over fish and serve immediately.

- Preheat oven to 400°F. Sprinkle halibut with salt and pepper. Spread 1/2 tablespoon hot ajvar on each side of each fish fillet. Set aside.
- Heat oil in heavy large ovenproof skillet over medium heat. Add carrots, potatoes and celery; sauté until tender, about 8 minutes. Mix in beans, clam juice, parsley, garlic and cup hot ajvar. - Preheat oven to 425.
- In a large skillet, heat the olive oil over medium heat. Add more oil if necessary.
- Sprinkle halibut lightly with salt and a good shaking of freshly ground pepper. (watch the salt as the capers can be on the salty side).
- Sear the halibut lightly on both sides. Remove the halibut to a large dish with sides.
- Deglaze the skillet with the white wine and lemon juice. Pour over the halibut.
- Cook the fish for 12 - 15 minutes or until it lightly flakes.
- Serve with some of the browned wine/caper sauce over the fish.

HALIBUT ROASTED WITH GARLIC-PARSLEY BUTTER
It takes a very hot oven to roast this fish, and the results are incredible! The halibut is gently browned on the outside. You'd never be able to accomplish this "blast of hot air" in a conventional oven because the circulating heat hits everything at one time. Sometimes I add a few baby potatoes, scrubbed and quartered, or a quartered fennel bulb, tossed in melted butter and scattered around the fish. They'll be done at the same time as the halibut.

- Position the oven racks so that the top rack is 5 to 6 inches from the top of the oven. Preheat the oven to convection roast at 500°F. Cover a shallow-rimmed roasting pan with foil and coat with nonstick spray.
- Rinse the fish and pat dry with paper towels. Center it on the pan. Mix the butter, parsley, and garlic together. Brush the fish on both sides with the mixture.
- Roast the fish for 10 minutes, until it flakes when tested with a fork. Brush with any remaining butter mixture and sprinkle with salt and pepper. Transfer it to a warm serving platter.
HALIBUT WITH PARSLEY-SHELLFISH SAUCE

- Cut halibut in half at central ''seam,'' then cut each half in 8 slices about 1/4-inch thick. Brush slices with olive oil on both sides. Place 4 slices side-by-side on a 6-inch-square piece of parchment paper. Top with another piece of parchment. Repeat with remaining halibut. Set packages aside.
- With food processor running, drop 1/4 cup parsley through feed tube. Process until minced. Add butter to processor and process until well blended. Remove to a dish.
- Place wine, bay leaf, fennel, shallot and garlic in a saucepan with tight-fitting lid. Cook uncovered over medium-high heat until wine is reduced to about 1/2 cup. Add cockles, cover, lower heat and simmer until they open, about 5 minutes. Remove cockles, shuck into small bowl and cover with plastic wrap. Set aside.
- Strain cooking liquid, pressing on solids, into clean saucepan. Simmer until reduced to 1/4 cup. Over very low heat, whisk in parsley butter about a tablespoon at a time. Add lemon juice. Taste for seasoning, adding white pepper. Fold in cockles and crab meat and cover to keep warm.
- Place a 10- to 12-inch nonstick skillet over medium heat. Place one package of halibut in pan, cook 30 seconds on each side and remove from pan with spatula. Repeat with remaining fish. Peel off paper and arrange four slices of fish on each of four warm plates, making a square. Season lightly with fleur de sel and pepper.
- Spoon warmed seafood butter sauce into the center of each square, then spoon a little around the outside. Garnish with parsley and serve.
