This is a marvelous autumn potluck dinner. Everyone will be very impressed with this thick beef stew made and served in a pumpkin shell! Use a 10- to-12 pound pumpkin; be sure not to overbake!

2 pounds beef stew meat, cut into 1 inch cubes
3 tablespoons vegetable oil, divided
1 cup water
3 large potatoes, peeled and cubed
4 carrots, sliced
1 large green bell pepper, chopped
4 cloves garlic, minced
1 onion, chopped
2 teaspoons salt
½ teaspoon ground black pepper
1 (14.5 ounce) can whole peeled tomatoes, chopped
2 tablespoons beef bouillon granules
1 sugar pumpkin

Steps:

  • Heat 2 tablespoons oil in a large saucepan over medium-high heat. Place beef in the saucepan and cook until evenly brown. Mix in the water, potatoes, carrots, green bell pepper, garlic, onion, salt and pepper. Bring to a boil. Reduce heat and simmer approximately 2 hours.
  • Dissolve the bouillon into the beef mixture. Stir in the tomatoes.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Cut top off the pumpkin and remove seeds and pulp. Place the pumpkin in a heavy baking pan. Fill the pumpkin with the beef mixture. Brush outside of the pumpkin with remaining oil.
  • Bake in the preheated oven 2 hours, or until tender. Serve the stew from the pumpkin, scraping out some of the pumpkin meat with each serving.

2 pounds beef stew meat, cut into 1-inch cubes
3 tablespoons canola oil, divided
1 cup water
3 large potatoes, peeled and cut into 1-inch cubes
4 medium carrots, sliced
1 large green pepper, cut into 1/2-inch pieces
4 garlic cloves, minced
1 medium onion, chopped
2 teaspoons salt
1/2 teaspoon pepper
2 tablespoons beef bouillon granules
1 can (14-1/2 ounces) diced tomatoes, undrained
1 pumpkin (10 to 12 pounds)

Steps:

  • In a Dutch oven, brown meat in 2 tablespoons oil. Add water, potatoes, carrots, green pepper, garlic, onion, salt and pepper. Cover and simmer for 2 hours. Stir in bouillon and tomatoes. Wash pumpkin; cut a 6 to 8 in. circle around top stem. Remove top and set aside; discard seeds and loosen fibers from inside. , Place pumpkin in a shallow sturdy baking pan. I am not sure where this recipe originated, but it has been a Halloween tradition in my husband's family for at least 20 years. It is a dinner we look forward to all year. Served with cornbread or sourdough rolls. Yum!

6 pounds pumpkin with fairly straight sides
¾ pound lean ground beef
1 teaspoon oregano
½ teaspoon salt
¼ teaspoon ground black pepper
1 onion, diced
2 large stalks celery, diced
½ medium green bell pepper, diced
2 pounds mozzarella cheese, cubed
16 ounces tomato sauce
1 ½ cups water
1 (15.25 ounce) can corn, drained
6 large mushrooms, sliced
¾ cup instant rice

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with heavy duty aluminum foil.
  • Wash the pumpkin and cut off the top at an angle to form a lid that won't fall through. Clean out and discard seeds and string.
  • Heat a large skillet over medium-high heat. Cook and stir beef, oregano, salt, and pepper in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion, celery, and bell pepper; cook 3 minutes. Add mozzarella cheese, tomato sauce, water, corn, mushrooms, and instant rice. Stir well.
  • Pour mixture from the skillet into the pumpkin and replace lid.
  • Bake in the preheated oven for about 1 hour. When serving, scrape the insides of the pumpkin to get some of the soft flesh in each bowl.

Coarse salt and freshly ground pepper
10 brussels sprouts, trimmed
6 ounces green beans, trimmed
4 ounces sugar snap peas, trimmed
1 cheese pumpkin (about 10 pounds), seeded, top reserved
3/4 cup plus 1 tablespoon extra-virgin olive oil, plus more as needed
10 chicken thighs and legs, skin-on
1 cup homemade or store-bought low-sodium chicken stock
2 tablespoons unsalted butter
3 medium crisp baking apples (any type), cored and quartered
1 jar (7 ounces) vacuum-packed whole peeled chestnuts
12 ounces baby white potatoes, quartered
2 leeks, halved, light-green and white parts only, rinsed well and cut diagonally into 1 1/2-inch-thick slices
5 carrots, cut diagonally into 1-inch-thick slices
2 turnips, cut into eighths
4 parsnips, cut diagonally into 1-inch-thick slices
1/2 medium butternut squash, seeded and cut into 1-inch cubes
1/2 celery root, peeled and cut into 1-inch cubes
2 tablespoons thinly sliced garlic
1/2 cup packed fresh flat-leaf parsley, coarsely chopped

Steps:

  • Prepare an ice-water bath. Bring a large pot of salted water to a boil. Add brussels sprouts, and cook until bright green and crisp-tender, about 2 minutes. With a slotted spoon, transfer to ice-water bath. Repeat with green beans and snap peas. Drain.
  • Preheat oven to 375 degrees. Rub inside of pumpkin and cut side of its top with 3 tablespoons oil. Place pumpkin and top on a parchment-lined baking sheet, and roast until they are tender but still holding shape, about 1 hour.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Season chicken generously with salt and pepper. Working in batches, cook chicken until golden brown, 3 to 4 minutes per side. Remove excess fat from skillet. Repeat with remaining chicken, adding 1 tablespoon oil to skillet with each batch. Place chicken on a baking sheet. Add stock to skillet, and bring to a boil, scraping bottom. Pour stock into a small bowl.
  • Roast chicken until golden brown and cooked through, about 40 minutes. Reserve pan juices.
  • Heat butter in a large skillet over medium heat. Add apples, and cook, stirring occasionally, until golden and softened, about 10 minutes. Stir in chestnuts, and remove from heat.
  • Combine potatoes, leeks, carrots, turnips, parsnips, squash, and celery root in a large bowl. Toss with remaining 1/2 cup oil, and season with salt and pepper. Spread vegetables in a single layer on a rimmed baking sheet, and roast until golden and tender, about 40 minutes. Add brussels sprouts, green beans, snap peas, apple mixture, and the garlic, and toss. Roast until garlic is golden brown and vegetables are heated through, about 10 minutes.
  • Combine chicken, vegetables, parsley, stock, and 2 tablespoons reserved pan juices in a large bowl. Place mixture in pumpkin, and roast until heated through, about 15 minutes. Slice pumpkin into wedges. Serve each pumpkin wedge with some stew.

Steps:

  • In a dutch oven, brown meat in 2 tablespoons of the oil. Add water, potatoes, carrots, green pepper, garlic, onion, salt and pepper.
  • Cover and simmer 1 hour.
  • Wash pumpkin, cut an 8 inch circle around top of stem. Remove top; set aside.
  • Discard seeds and loose fiber from inside.
  • Place pumpkin in a sturdy shallow baking pan. Brush outside of pumpkin with remaining oil.
  • Spoon stew into pumpkin; replace top. Bake at 325°F for 2 hours or just until pumpkin is tender (do not overbake). Serve stew from pumpkin, scooping out a little pumpkin with each serving.

I invented this for a Halloween party at work several years ago. It is based on traditionsal Iranian "khoresh" (stew). It went over extremely well, and no one knew they were eating lamb.

Number Of Ingredients 10

1 lb cut up lamb
1 large onion, chopped
4 -5 garlic cloves, minced
lamb fat or olive oil, to coat bottom of pan
1 tablespoon turmeric
1 lime, juice of
3 quarts water
2 cups tender fresh pumpkin
salt
fresh ground pepper

Steps:

  • Saute the lamb in its own fat, or if you prefer, lamb with fat removed and a little olive oil to keep it from sticking to pot.
  • Cook on low heat in covered large pot. (about 10-15 min.).
  • Stir occasionally and cook until browned.
  • Add onion, garlic and turmeric.
  • Cook until onion is tender.
  • Add water. Cook until lamb is tender. (1-1 and 1/2 hrs).
  • Add pumpkin, salt and pepper.
  • Add lime juice. (Used as a salt substitute).
  • Cook until pumpkin is tender.
  • If you insist, this could be made with beef or chicken, sauted just like the lamb, but the lamb gives it an incredible rich flavor. The turmeric takes away the lamb taste, as does the lime juice.
  • Use a small pumpkin. it will be more tender and less stringy. And of course you could substitute butternut squash for the pumpkin.
  • For a heartier stew you can add other things such as potato, corn or other vegetables.
  • If you want a richer broth you can substitute a good beef or chicken broth for all or some of the water. (No cubes please!).
  • This will cook down. So don't add the salt, pepper and lime juice until the end to better judge the amount of seasoning needed.

3 tablespoons vegetable oil
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons curry powder
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1 teaspoon salt (optional)
1/2 teaspoon freshly ground black pepper
2 tomatoes, chopped
2/3 cup water
1 pound pumpkin, peeled and chopped
1 carrot, sliced
1 potato, chopped
1 green banana or Irish potato, chopped
1 whole Scotch bonnet pepper (green recommended)

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onion and cook, stirring, for 2 minutes. Add the garlic and cook 1 minute more. Add the curry powder, cinnamon, ginger, salt, and black pepper and cook, stirring, for 2 minutes. Add the tomatoes and stir until it is a thick, relishlike sauce.
  • Add the water, scraping the bottom of the pan to incorporate all the flavors. Add the pumpkin, carrot, potato, green banana, and Scotch bonnet pepper. Raise the heat to high and bring to a boil while gently blending the ingredients together. Cover, reduce the heat to medium-low, and simmer, stirring a couple of times, until the vegetables are tender, about 20 minutes. Remove the Scotch bonnet pepper before serving.
