HAM AND CHEESE BREAKFAST CASSEROLE
This ham and cheese casserole is very filling. It should be assembled and then refrigerated overnight. I usually make this Christmas Eve and serve it Christmas morning after we open our presents.

Steps:
- Lightly grease a 9x13 inch baking dish. Line the bottom of the dish with half the bread cubes. Sprinkle with ham, Cheddar cheese, and Swiss cheese, and top with remaining bread. In a bowl, beat together the eggs, milk, and onion powder. Pour evenly over bread. Cover, and refrigerate overnight.
- Preheat oven to 375 degrees F (190 degrees C). In a small bowl, blend the crushed cornflakes and melted butter. Spread evenly over the casserole.
- Bake 40 minutes in the preheated oven, or until bubbly and golden brown. Let stand 5 minutes before serving.

This delicious and easy breakfast casserole is a great way to use leftover cooked ham, but you can also substitute cooked bacon to change it up. You can make it the night before so all you have to do is bake it in the morning.

Steps:
- Spray a 9x13-inch baking dish with cooking spray.
- Arrange English muffin halves in a single layer in the bottom of the baking dish.
- Whisk together eggs, milk, salt, pepper, garlic powder, onion powder, and mustard in a bowl until well combined. Pour egg mixture over English muffins in the baking dish. Sprinkle chopped ham and 1 cup Cheddar cheese on top of the egg mixture.
- Cover with foil and refrigerate overnight.
- Preheat the oven to 400 degrees F (200 degrees C).
- Bake in the preheated oven until eggs are set, 30 to 35 minutes. Sprinkle with remaining 1/2 cup Cheddar cheese and chopped green onions. Slice and serve.

- In a greased 8-in. square baking dish, layer the hash browns, ham, chiles and cheeses. In a large bowl, whisk the eggs, milk and pepper; pour over the casserole. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, until a knife inserted in center comes out clean, about 1 hour. - Prepare a 9x13-inch pan with softened butter. Tear the bread slices into 1-inch pieces of bread and cover the bottom of the pan with half of the loaf, fitting the pieces tightly together like puzzle pieces.
- There are two ways you can do the next layering step: Layer the ground ham over the bread and then top with the cheese. Tear the rest of the bread slices into pieces and nestle them together over the ground ham but don't pack too tightly, but just so they fit together.
- In a 1 quart measuring cup, whisk the eggs and milk until smooth. In a small bowl, take 1 tablespoon of the egg and milk mixture and use a fork to mix the dry mustard into it until smooth. Add the mustard mixture into the quart measuring cup and mix well so that all of the mustard is incorporated. Add the chopped parsley and whisk.
- Starting at one end of the casserole, slowly pour the egg mixture over the the bread, evenly distributing the wet ingredients and making sure to get into the edges too. Cover with non-stick aluminum foil and refrigerate overnight.

- Warm the olive oil in a large nonstick skillet over medium-high heat. Toss in the ham in an even layer and don't touch for a minute, to develop a nice crust. Then stir for a minute.
- Add in the onions and bell pepper; cook until soft, stirring occasionally, about 3 minutes. Season with a little salt and pepper. Remove from the heat and stir in the scallions and parsley. Set aside.
- Lightly coat a 9×13 baking dish with nonstick cooking spray. Scatter the bread cubes on the bottom. Sprinkle with half the cheese, followed by all of the cooked ham mixture.
