16 fresh asparagus spears, trimmed
3 tablespoons Dijon mustard
16 thin slices fully cooked ham
16 slices Swiss cheese
2 large eggs, beaten
1 cup dry bread crumbs
Canola oil

Steps:

  • In a large skillet, cook asparagus in a small amount of water until crisp-tender, about 6-8 minutes; drain well. Spread about 1 teaspoon of mustard on each ham slice. Top with one slice of cheese. , Place an asparagus spear at one end (trim to fit if needed). Roll up each ham slice tightly; secure with three toothpicks. Dip ham rolls in egg, then roll in bread crumbs. , In an electric skillet, heat 1 in. of oil to 350°. Fry rolls, a few at a time, until golden brown, about 3-4 minutes. Drain on paper towels; keep warm. , Cut each roll between the toothpicks into three pieces.

8 fresh asparagus spears, trimmed
1 tube (8 ounces) refrigerated crescent rolls
1 carton (8 ounces) spreadable chive-and-onion cream cheese
4 thin rectangular slices deli ham
2 tablespoons butter, melted
1/4 teaspoon garlic powder

Steps:

  • Place asparagus in a skillet; add 1/2 in. of water. Bring to a boil. Reduced heat; cover and simmer for 3-5 minutes or until crisp-tender. Drain and set aside., Separate crescent dough into four rectangles; seal perforations. Spread cream cheese over each rectangle to within 1/4 in. of edges. Top each with ham, leaving 1/4 in. uncovered on one long side. Place two asparagus spears along the long side with the ham; roll up and press seam to seal., Cut each roll into seven pieces. Place cut side down 1 in. apart on greased baking sheets. Combine butter and garlic powder; brush over spirals. Bake at 375° for 10-12 minutes or until golden brown.

1 bunch large asparagus
2 tablespoons extra-virgin olive oil
1 1/2 teaspoons salt
1 1/2 teaspoons coarse ground black pepper
1/4 pound thinly sliced capicola ham, halved

Steps:

  • Preheat grill to medium.
  • Trim asparagus approximately 1 1/2 inches from the bottoms. Slightly peel the asparagus from just below the tip to the end. Put into a large bowl and drizzle with olive oil. Season with salt and pepper and toss.
  • Wrap the ham tightly around each asparagus stalk. Put on the grill and cook the asparagus turning frequently until slightly charred, 2 to 3 minutes. Transfer to a serving platter and serve.

1/2 cup dark brown sugar
1/2 cup honey
1/2 cup fresh orange juice
1/2 cup peach nectar
4 to 5 chipotles, minced
5 pound spiral cut smoked ham

Steps:

  • Preheat the oven to 375 degrees F.
  • In a small bowl, mix together the brown sugar and honey. Set aside.
  • In another small bowl, mix together the orange juice, peach nectar and chipotles.
  • Arrange the ham, cut end down, in a large baking dish. Pour a few tablespoons of the juice mixture over the ham and in between the layers. Bake for 30 minutes, basting every 10 minutes with the remaining juice mixture.
  • Remove the ham from the oven. Reserve about 1 1/2 cups of cooked juice from baking dish. Brush the honey mixture on the ham and return to the oven to bake for an additional hour until a crust forms and the ham begins to caramelize. Remove from the oven to a serving platter and serve with the reserved baking juice.

  • Fill 13x9-inch (3-quart) glass baking dish half full with water and ice; set aside.

good squeeze lemon juice

  • Cook asparagus for 1-2 mins in boiling salted water. Drain well and dry on kitchen paper. Group in twos, then roll up in a slice of ham. Mash the butter with some black pepper and the lemon juice. Split rolls down the middle, but don't cut completely in half. Spread with a little butter, then add an asparagus wrap to each like you would a hotdog. Add a squirt of salad cream, if you like.

Costco is a good place to get the supplies for these, as they sell almost all the ingredients (except maybe the squeeze cheese) in large quantities and at a decent price. These are also good just as a sandwich wrap. ;) Ingredient amounts are approximate, varying according to taste and quantities desired.

1 package 10-inch flour tortilla (burrito size)
8 -16 ounces cream cheese, softened (amount will depend on taste)
1 lb fresh spinach, prewashed and stems removed
1 lb sliced lean ham
1 (8 ounce) can processed cheese (in aerosol squeeze can, such as Nabisco EZ Cheese)
1 (2 lb) jar pickled asparagus spears, drained

Steps:

  • Lay a tortilla on a flat work surface, then spread with cream cheese, covering to the edge.
  • Spread a single layer of spinach on top of the cream cheese, then a layer of ham.
  • On the side closest to you, place an asparagus spear and a single line of squeeze cheese; roll it up and place seam side down.
  • If desired, these can be carefully rolled up and sealed in plastic wrap at this point, and refrigerated for a few hours or up to overnight.
  • When ready to serve, cut into 3/4"-1" slices.
  • Lay flat on a serving tray and serve immediately.

1 cup(s) onion and chive cream cheese
8 slice(s) boiled ham, sliced
8 - asparagus, fresh
2 tablespoon(s) butter
3/4 teaspoon(s) garlic powder

Steps:

  • Pre-heat oven 375 degrees. Unroll dough and seperate into 4 retangular shapes. Spread onion and chive cream cheese evenly on dough. Top cream cheese with 2 slices of ham so that they cover the rectangle without overhanging.
  • Steam 8 pieces of Asparagus 3-5 min. Place 2 pieces on each rectangle long way. Start at asparagus roll and seal.
  • Cut each log into 7 pieces. Mix 2 tablespoons mealted butter with garlic powder and baste top of each spiral.
  • Cook 10-12 min. at 375 degrees. Cool for 10 min. before eating.

1 cup whole milk
¼ cup butter
1 pound fresh asparagus, trimmed
4 slices deli-style honey ham, sliced in half lengthwise
½ teaspoon freeze-dried dill

Steps:

  • Whisk sauce mix and milk together in a saucepan over medium-low heat. Add butter. Bring to a boil, stirring until melted and smooth. Reduce heat and simmer, stirring occasionally, until thick, about 1 minute. Set aside to cool slightly.
  • Bring a large pot of salted water to a boil and cook asparagus for 3 minutes. Drain and run under cold water to stop the cooking process. Transfer to a cutting board and pat dry with paper towels.
  • Wrap a slice of ham around 4 asparagus spears and place on a serving tray. Repeat with remaining asparagus and ham. Drizzle hollandaise sauce over the asparagus bundles and garnish with dill.

Ham Asparagus Rolls image

This is a great way for me to get my daughter to eat a vegetable! Simple and fast this makes an elegant looking meal. I serve this on toast for lunch, or by itself with garlic bread is great as well. You can also make this with Grilled Ham Steaks, they are just not rolled up! Hope you like it as much as we do! From Company's Coming Cookbook.

12 slices of square cooked deli ham
4 tablespoons prepared mustard
36 fresh asparagus spears
3 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
3/4 teaspoon salt
1/4 teaspoon black pepper
1 1/4 cups grated medium cheddar
1/4 cup thinly sliced green onion

Steps:

  • Steam or boil asparagus until tender-crisp.
  • Spread each side of ham with mustard.
  • Lay 3 asparagus spears on each slice, alternating tips for appearance and ease of rolling.
  • Roll these up and place seam side down in casserole dish.
  • Melt butter in med size saucepan.
  • Stir in flour slowly, then add milk.
  • Stir and cook until boiling.
  • Add salt and pepper.
  • Stir in cheese until melted, add green onion slices.
  • Stir and pour over meat rolls.
  • Cover and bake in 350 F oven 30 minutes or until hot and bubbly.
