This was always a lunchtime favorite with my gal pals. It's simple, delicious, and refreshing! The measurements for the ingredients are all approximate, as this sandwich is best when tailored to personal taste. Particularly scrumptious on potato, oat, or country white bread. Enjoy!

  • Lay 1 slice bread on a plate. Place provolone cheese on bread and top with avocado and tomato slices, respectively. Drizzle balsamic vinegar over tomato and top with remaining slice of bread.

9 grain bread with sprouts, tomato and red onion
2 Avocados, diced
2 scallions, diced
1 cucumber, diced
4 radishes, diced fine
2 tablespoons tamari
2 teaspoons sesame oil
1/4 teaspoon garlic, minced
2 tablespoons nutritional yeast
1/2 cup bean or radish sprouts
1/2 teaspoon sesame meal

Steps:

  • In a blender place peeled avocado, add a pinch of chile powder, juice of one lime, salt and pepper, and add some nonfat yogurt. Thin with ice water if necessary. Blend to a pouring consistency. Serve over mesclun, pink grapefruit segments and diced red pepper.
  • Cut avocados in half; remove pits and gently scoop out insides, leaving shell intact. Combine the avocados, scallions, cucumbers, radishes, tamari, oil, garlic, and add to shells. Top with yeast, sprouts and sesame meal.
  • Oxygen, or exposure to air is what causes your guacamole to turn brown. Making guacamole, or any avocado dish in advance make certain that you block out the air by making sure the surface of your dip is in contact with the plastic wrap.

2 tablespoons chopped fresh dill
1 firm-ripe California avocado (8 to 10 ounces)
1 teaspoon fresh lemon juice
4 slices whole-grain bread, toasted
1/2 cup radish sprouts

Steps:

  • Cook bacon in a 12-inch heavy skillet over moderate heat, turning occasionally, until crisp, then transfer with tongs to paper towels to drain.
  • Stir together mayonnaise, chives, dill, and salt and pepper to taste in a small bowl.
  • Halve, pit, and peel avocado, then slice lengthwise. Gently toss slices with lemon juice.
  • Make sandwiches with toast, herb mayonnaise, avocado, bacon, and sprouts, seasoning with salt and pepper.

I don't remember where I got this recipe but it is one of the meatless sandwiches that I like. The cook time doessn't include the time it takes to cook the bacon if you are adding this to your sandwich. I don't use as much mayonnaise as listed so add it to your own taste

2 slices whole wheat bread
2 tablespoons mayonnaise
6 slices avocados, tossed with a little
lemon juice
1/3 cup fresh mushrooms, sliced
3 slices tomatoes
3 tablespoons mozzarella cheese, shredded
1 tablespoon sunflower seeds
2 slices bacon, cooked and cut in half (optional)

Steps:

  • Preheat the broiler.
  • Spread one side of each slice of bread with mayonnaise.
  • On one slice lay the 6 slices of avocado, mushroom slices, tomato slices,bacon slices if using, mozzarella cheese and the sunflower seeds.
  • Put the layered avocado half of the sandwich 4-6 inches from the heat and cook until the cheese is melted and the sunflower seeds are lightly toasted. This will take about 3-4 minutes.
  • Cut sandwich in half to serve if desired.

8 slices bacon or 1 1/2 cups ham, pieces
4 large green onions with tops, chopped
3/4 cup colby or 3/4 cup monterey jack cheese
4 large romaine lettuce leaves
4 tablespoons guacamole, any brand
1/2 cup finely shredded cabbage (optional)
4 kaiser rolls or 4 split buns
1/2 cup mayonnaise or 1/2 cup Miracle Whip

Steps:

  • In frying pan saute bacon or ham pieces along with chopped green onions, drain.
  • Chop cooked bacon slices.
  • Spread each roll half or bun half with mayonnaise or Miracle Whip.
  • Place a lettuce leaf on each bun or roll.Then top with sauted bacon/ham/green onion mixture equally on 4 buns or rolls.
  • Add 1 tblsp guacamole dip, then cabbage if desired. Add shredded cheese on top.
  • Top with other half of bun.
  • Note: You can use more guacamole dip if desired. You can also use hot sauce when you saute meat if you desire.
