1 (8 ounce) jar spicy salsa
cooking spray
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place the chicken breast, smooth-side up, on a work surface. Holding it down with one palm, slice breast horizontally, stopping 3/4 of the way through. Open like a book. Spread some salsa on one half, then close. Coat with cooking spray and sprinkle with salt and pepper. Transfer to a baking dish and top with more salsa.
  • Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Filled with ricotta, these sage and Parma ham-wrapped chicken breasts are just too tasty! Serve with steamed greens and light mashed potatoes or a zesty couscous. Time does not include chilling.

4 large chicken breasts
8 sage leaves
6 tablespoons ricotta cheese
sea salt and black pepper
8 parma ham slices
1 1/2 teaspoons olive oil
handful fresh thyme sprig

Steps:

  • Cut a deep slit along one side of each chicken breast, without slicing right through, then open it out like a book. On a clean chopping board, finely chop 4 sage leaves, then mix into the ricotta and season with salt and pepper to taste.
  • Lay two Parma ham slices on the board, overlapping them slightly. Put a sage leaf in the middle and lay an open chicken breast on top. Spoon a quarter of the ricotta mixture onto the middle of the chicken, then fold the sides together again, to enclose the filling. Now wrap the Parma ham slices around the stuffed chicken breast. Wrap in cling film. Repeat with the rest of the chicken breasts and chill for 1-2hrs to firm up slightly.
  • Heat the oven to 350F and place a roasting pan in the oven to heat up. Heat a heavy-based frying pan and add the olive oil. When hot, fry the Parma-wrapped chicken, in batches if necessary, for 2 mins on each side until browned.
  • Lay a few thyme sprigs on each chicken breast, then place in the hot roasting pan. Cook in the oven for 12-15 mins, depending on size, or until the meat feels just firm when lightly pressed.
  • Rest the chicken, covered with foil, in a warm place for 5-10 minutes Slice each stuffed breast thickly on the diagonal and arrange on warm plates.

3 cups unseasoned stuffing croutons
1/2 cup chopped celery
1/2 cup chopped fresh mushrooms
1/4 cup chopped sweet red pepper
1/2 cup cubed fully cooked ham
1/4 cup chopped green onions
4 teaspoons minced fresh savory or 1 teaspoon dried savory
3/4 teaspoon salt
1/2 teaspoon pepper
3 tablespoons canola oil
1 to 1-1/2 cups chicken broth
1 roasting chicken (6 to 7 pounds)

Steps:

  • In a large bowl, combine cornbread crumbs and croutons. In a large skillet, saute the celery, mushrooms, red pepper, ham, onions, savory, salt and pepper in oil until vegetables are tender. Add to crumb mixture. Stir in enough broth to moisten. , Stuff chicken. Place breast side up on a rack in a large roasting pan. , Bake, uncovered, at 350° for 2-1/4 to 3 hours or until a thermometer reads 180° for chicken and 165° for stuffing. Let stand for 10-15 minutes before removing stuffing and carving.

I was really craving baked goat cheese with bruschetta from a restaurant I regularly go to, so I decided to make a chicken dish inspired by this craving. It's delicious and so simple!

4 boneless skinless chicken breast halves
2 slightly beaten eggs
1/2 cup breadcrumbs (or crushed corn flakes)
2 teaspoons dried parsley
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil or 2 tablespoons cooking oil
1 cup soft fresh goat cheese
1/2 cup all-purpose flour
2 cups chunky salsa (store bought or homemade)
8 asparagus spears (optional)

Steps:

  • Using a sharp knife, carefully cut a pocket in the side of each breat half. Stuff or spread each with about 1/4 cup of goat cheese and if you want, place 2 sticks of asparagus inside as well.
  • Combine flour, salt, and pepper. Coat stuffed chicken breasts with flour mixture.
  • Dip floured chicken breats in beaten eggs, then coat generously with bread crumbs mixed with dried parsley.
  • Preheat oven at 375 degrees. Meanwhile, in a large ovenproof skillet, cook chicken in hot oil over medium heat for 4 to 6 minutes or until browned, only turning once.
  • Transfer skillet to oven when heated. Bake, uncovered for 15-18 minutes, or until chicken is no longer pink.
  • Serve with salsa or bruschetta on the side, or on top, and enjoy!
