My husband and I enjoy cooking together. One night, we were craving grilled steak and cheese-stuffed baked potatoes, but we didn't want to wait for the potatoes to cook. Here's what we invented instead. -Judy Armstrong, Prairieville, Louisiana

2 tablespoons butter
1 small onion, chopped
3 garlic cloves, minced
2 cups frozen shredded hash brown potatoes, thawed
3/4 teaspoon salt, divided
1 cup shredded Jarlsberg cheese
1 beef top sirloin steak (1 inch thick and 1-1/2 pounds), cut into 4 portions
1/2 teaspoon pepper
2 tablespoons minced fresh chives

Steps:

  • In a large skillet, heat butter over medium-high heat. Add onion; cook and stir 2-3 minutes or until tender. Add garlic; cook 2 minutes longer., Stir in hash browns and 1/4 teaspoon salt; spread in an even layer. Reduce heat to medium; cook 5 minutes. Turn hash browns over; cook, covered, 5-6 minutes longer or until heated through and bottom is lightly browned. Sprinkle with cheese; cover and remove from heat. Keep warm., Sprinkle beef with pepper and remaining salt. Grill, covered, over medium heat 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Remove steaks from heat; top each with a fourth of the potato mixture. Sprinkle with chives.

2 lb yukon gold potato, peeled and cut into 1/2 in (1 1/2 cm)
cold water, for cooking potatoes
1 ½ tablespoons kosher salt, divided
1 top sirloin steak
1 ½ teaspoons freshly ground black pepper, divided
2 tablespoons unsalted butter, divided
1 tablespoon canola oil
½ small yellow onion, thinly sliced
8 oz cremini mushroom, steemed and quartered
1 small red bell pepper, seeded and diced
1 teaspoon fresh oregano, chopped
1 cup cherry tomato, halved
4 large eggs
1 tablespoon fresh parsley, minced

Steps:

  • Add the potatoes to a large pot and fill with enough cold water to cover by 1 inch (2 ½ cm). Season with 1½ teaspoons of salt and bring to a boil over medium-high heat. Boil for 5 minutes, then drain and run under cold water to stop the potatoes from cooking further. Dry the potatoes with paper towels and set aside.
  • Place a rack in the lower third of the oven. Preheat the oven to 350°F (180°C)
  • Blot the steak dry with a paper towel and season on both sides with 1½ teaspoons of salt and 1 teaspoon black pepper.
  • Heat a 10-inch (25 cm) cast iron skillet over high heat until smoking. Reduce the heat to medium-high. Add 1 tablespoon of butter and the canola oil to the pan and melt the butter completely, about 1 minute. Add the seasoned steak and cook, without disturbing, for 2 minutes on each side. The steak will be rare, but will finish cooking in the oven. Transfer to a cutting board to rest for at least 5 minutes before slicing into ¼-inch (6 mm) strips.
  • Reduce the heat to medium and melt the remaining tablespoon of butter in the same skillet. Add the onion, mushrooms, red bell pepper, and ½ teaspoon of salt. Cook, stirring occasionally, until the onions are slightly caramelized and the mushrooms have released their liquid, 8-10 minutes.
  • Add the potatoes to the skillet and season with the remaining teaspoon of salt, ¼ teaspoon black pepper, and the oregano. Stir to combine and cook, without disturbing, for 4 minutes, until the potatoes are golden brown and crisp on one side. Add the cherry tomatoes and stir to combine.
  • Make 4 wells in the hash using the back of a spoon and carefully crack an egg into each well.
  • Scatter the sliced steak on top of the hash and transfer to the oven. Bake for 10 minutes, or until the egg whites are set but the yolks are still runny.
  • Remove the hash from the oven and season with the remaining ¼ teaspoon pepper. Garnish with the parsley.
  • Serve warm.

2 medium russet potatoes, shredded
½ medium onion, finely chopped
¼ cup all-purpose flour
1 egg
1 cup oil for frying, or as needed
salt and pepper to taste

Steps:

  • Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
  • Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
  • Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

This is a quick and tasty dinner that's sure to please a hungry family in a hurry. This is a variation of the usual "hashbrown casserole" that I tend to see everywhere. I guess you can say this is more of a skillet. It avoids the casserole dish and the cooking time but with all the flavour and less fat as I don't use soup, gravy or cream. My kids never say no to this. I use either pre-marinaded steak from the grocery store or marinade my own steak and have them frozen in the marinade.

1 lb steak, marinaded in teryaki sauce
1 red onion, large and finely chopped
2 -3 garlic cloves, crushed
1/2 lb hash brown
1 teaspoon seasoning salt
1 teaspoon garlic powder
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
4 ounces aged cheddar cheese, grated
2 tablespoons canola oil

Steps:

  • Cut steaks into bite-size pieces.
  • In a large frying pan, heat 1 tablespoon of the oil at medium-high heat.
  • When oil is hot, put in steak, onion and garlic.
  • After a minute, add in worchestershire sauce and soy sauce.
  • Fry until onion is translucent and steak chunks are just underdone to how you desire (I prefere medium-rare so when the steak is rare, I'm done).
  • Put meat mixture aside, preferably a metal bowl so as to retain some heat and the steak will continue to cook to how you like it.
  • Put the remaining oil in the frying pan. Don't rinse the frying pan, you want all the juices and flavour from the meat mixture to remain.
  • Put in the hashbrowns, seasoning salt and garlic powder.
  • Fry until crispy.
  • Mix back in the meat mixture with the hashbrowns.
  • Fry for a minute to warm everything back up and then sprinkle the cheese over the mixture.
  • Reduce heat to minimum and cover the frying pan. (I use a baking sheet but if you're lucky enough to have a lid, use that.).
  • Once cheese is melted, serve!

1 small onion, chopped
2 tablespoons canola oil
3 medium potatoes (about 1 pound), peeled, cooked and diced
1 cooked steak, diced (about 1 cup)
1/4 to 1/2 teaspoon garlic powder

1/4 cup shredded Monterey Jack cheese
4 eggs

Steps:

  • In a large skillet, saute the green pepper and onion in oil until tender. Stir in potatoes. Without the green bean addition, this tastes very much like the famous cheesy hashbrown casserole everyone seems to like so well. If you add the green beans and onions, it tastes a lot like the holiday green bean casserole. The pork steak is a delicious blend of flavors either way! I have a VERY PICKY 13 year old son who hates mushrooms or mushroom soup, and won't even eat green bean casserole, but LOVED this dish because he didn't realize it had mushroom soup in it. He even asked for seconds, then wanted the left-overs the next day. Hubby said this was one of the BEST casseroles I had ever made. No leftovers for the son, as hubby had already eaten it for breakfast the next morning! If you have never cooked with pork steak before, as I hadn't till I tried this recipe, try this. You will be surprised how EASY and TASTY this is! FIVE STARS for my family! Quick to throw together after work... about 15 minutes.... then relax for a little over an hour, and supper is ready!!! My pork steak was even frozen when I first found this recipe, and so I defrosted the meat package a little bit in microwave and then sliced the meat up while still half frozen. Worked well. I will make this again as I can keep the ingredients on hand, and even if the meat is frozen, I can still make it quickly.

20 ounces frozen hash browns
16 ounces sour cream
10 3/4 ounces cream of mushroom soup
4 ounces mushrooms (optional)
15 ounces french-sliced green beans, drained (optional)
8 ounces grated cheddar cheese
2 teaspoons chives (optional)

Steps:

  • Cut pork steak into bite-sized strips or larger as desired, and coat with flour, salt and pepper in a large bowl. Heat oil in large skillet or dutch oven and brown meat. Saute onions with meat half way through if you want onions added. (Don't have to cook meat throughly, as it will finish cooking in oven.) Combine in saucepan sour cream, mushroom soup, mushrooms, and half of cheese. Stir and heat mixture, do not boil. Place hash browns in bottom of Pam-sprayed casserole dish or 9 x 13 inch cake pan. Add green beans on top if desired. Pour sour cream mixture over this and place pork steak on top. Sprinkle with remaining cheese and bake, covered with foil in 350 degree oven for 1 1/2 hours.
  • I prefer to use the Southwestern type of shredded hashbrowns that already has some onion and green pepper in it if I don't add the green beans. Without the green bean addition, this tastes very much like the famous cheesy hashbrown casserole everyone seems to like so well. If you add the green beans and onions, it tastes a lot like Durkee's green bean casserole. The pork steak is a delicious blend of flavors either way!
