Here's what you need: whole wheat bread, green bell peppers, flank steak, salt, pepper, vegetable oil, medium white onion, provolone cheese

1 loaf whole wheat bread
2 green bell peppers
1 lb flank steak
1 teaspoon salt, plus more to taste
1 teaspoon pepper, plus more to taste
1 tablespoon vegetable oil
1 medium white onion, thinly sliced
13 slices provolone cheese

Steps:

  • Place the loaf of bread on a cutting board with a chopstick on either long side of the loaf. Make 9 equal slices crosswise through the loaf, using the chopsticks to keep from cutting all the way through.
  • Cut around the sides of the bell peppers, discarding the centers with the ribs and seeds, then thinly slice.
  • Season the flank steak all over with salt and pepper.
  • Thinly slice the steak at a 45-degree angle into ½-inch (1 ¼ cm) thick pieces.
  • Heat the oil in a large cast-iron skillet over high heat. Cook the steak for 4 minutes on each side, or until a nice brown crust forms. Remove the steak from the pan and set aside.
  • Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Add the onion to the pan and cook for 5 minutes until it starts to soften and brown on the edges.
  • Move the onions to one side of the pan and add the peppers to the other side. Season with salt and pepper to taste. Cook the peppers and onion for another 5 minutes, or until caramelized. Remove the pan from the heat.
  • Set the sliced loaf of bread on the prepared baking sheet.
  • Fold 9 provolone slices in half and place in between the slices of bread. Place 2 pieces of flank steak in every other slit. Place peppers and onion in the slits with the steak. Place the remaining 4 slices of provolone over the loaf of bread.
  • Bake for 20 minutes, or until the cheese is browned.
  • Pull apart the sandwich at the slits with just cheese.
  • Enjoy!

1 shallot, finely chopped
2 cloves garlic, chopped
2 cups mushroom, quartered
1 teaspoon salt

4 oz cream cheese, softened
2 egg yolks
¼ cup fresh chives, chopped
1 sirloin steak
2 teaspoons salt
2 teaspoons pepper
2 tablespoons canola oil
¼ cup grated parmesan cheese

Steps:

  • Heat oil in a pan over medium heat. Add shallots and garlic, cooking until translucent. Add mushrooms, salt, and pepper, cooking until mushrooms are golden brown. Remove from heat.
  • In a medium bowl, combine mushrooms, cream cheese, egg yolks, and chives, stirring until evenly incorporated. Set aside.
  • Preheat oven to 400°F (200°C).
  • On a cutting board, season both sides of the steak with salt and pepper.
  • Cut about ¾ of the way through the steak, making the incisions 1-inch (2 cm) part.
  • Pack a spoonful of the mushrooms mixture into each cut in the steak.
  • Heat the oil in a pan over high heat. Sear the steak for about 30 seconds, then bake for 10-15 minutes, depending on how you like your steak cooked. Slice and serve.

4 medium potatoes
3 tablespoons olive oil
4 cloves garlic, thinly sliced
1 pinch smoked paprika
salt to taste
2 tablespoons grated Parmesan cheese, or more to taste
2 teaspoons chopped fresh chives, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place a potato between 2 wooden spoons. Slice potato crosswise at 1/8-inch intervals, cutting until you hit the spoon handles, being careful not to cut all the way through. Repeat with remaining potatoes and transfer to a baking sheet.
  • Combine olive oil, garlic, paprika, and salt in a small bowl. Brush mixture over the top and in between the slits of potatoes.
  • Bake in the preheated oven until potatoes have fanned out a bit, and are cooked through on the insides but a bit crispy on the outsides, about 45 minutes. Sprinkle 2 tablespoons Parmesan cheese over top and bake until melted, 2 to 3 minutes.

4 large long russet potatoes, scrubbed and patted dry
⅓ cup extra-virgin olive oil, or more to taste
1 teaspoon garlic powder
1 teaspoon Italian seasoning
¾ teaspoon red pepper flakes, or to taste
sea salt and freshly cracked black pepper to taste
4 medium vine-ripened tomatoes, thinly sliced
1 (8 ounce) container small fresh mozzarella balls (bocconcini), thinly sliced
¼ cup fresh basil leaves, or to taste
2 tablespoons balsamic glaze, or to taste
2 tablespoons finely grated Grana Padano cheese

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Set potatoes on a cutting board. Starting from one end, cut slices that are roughly 1/4-inch thick into each potato, stopping about 1/2-inch from the bottom to keep potato slices connected. Transfer prepared potatoes to a baking sheet.
  • Stir together olive oil, garlic powder, Italian seasoning, and red pepper flakes in a small bowl. Brush olive oil mixture onto the potatoes using a basting brush, making sure to coat the outer sides and in between the slices. Season liberally with sea salt. Set aside remaining oil mixture.
  • Bake potatoes in the preheated oven for 25 minutes. Remove from the oven and brush once again with remaining oil. By now the potatoes will have opened a bit, allowing for more oil to slip between the slices. Sprinkle a little more sea salt onto each potato, making sure to sprinkle salt in the slices.
  • Return to the oven and bake until potatoes are cooked through, 25 to 30 more minutes. Remove from the oven and let cool for 5 minutes. Leave oven on.
  • Leave a few potato slices unstuffed on both ends of each potato, starting somewhere about 1/4 of the way through the potato. Start by slipping a tomato slice in between your first 2 slices of potato, skip 2 slices, and stuff the next slice with mozzarella cheese and a fresh basil leaf. Skip 2 more, add a tomato slice, and continue alternating tomato and mozzarella cheese/basil leaf until you reach the other end of the potato. Continue until all potatoes have been stuffed. Season each potato with sea salt and cracked pepper.
  • Return potatoes to the oven and bake until mozzarella has melted, about 5 minutes.
  • Drizzle with balsamic glaze, sprinkle with grated Grana Padano cheese, and garnish with fresh basil.

¼ cup fresh spinach
¼ cup ricotta cheese
2 chicken breasts
¼ cup cheddar cheese
1 teaspoon paprika

Steps:

  • Cook the spinach on a medium heat in a splash of oil for 3-5 minutes until it is slightly wilted.
  • Stir in the ricotta and cook for a further 30-60 seconds. Allow to cool.
  • Cut slits into the chicken breasts about 1cm (½ inch) apart but don't cut all the way through - about 75% of the way down is what you should aim for.
  • Stuff all of the spinach and ricotta mixture into the slits.
  • Season the chicken with salt and pepper.
  • Grate the cheddar and sprinkle it generously on top.
  • Shake the ground paprika over the chicken to add some colour and flavour.
  • Bake in the centre of a pre-heated oven for 20-25 minutes 400°F (200°C) until the cheese has melted and the juices are clear.

For just a little more effort than a plain baked potato, you can make these showy Hasselback potatoes. They are easy to make and encompass two favorite potato textures - edges that are crispy like your favorite French fries with a creamy center reminiscent of mashed. These basic Hasselback potatoes will make you look like a cooking whiz and using Idaho® Potatoes will prove that you clearly have discerning taste!

4 large Idaho® Russet Potatoes
lemon juice
4 tablespoons butter or oil
fresh rosemary
1 large clove garlic, sliced
salt

fresh parsley, chopped, for garnish

Steps:

  • Preheat oven to 400 degrees F.
  • Prepare a bowl of cold water with a squeeze of lemon juice in it. Slice off the bottom of each Idaho® Russet Potato lengthwise to make them steadier for cutting. Place potato between two chopsticks. Cut slits 1/4 apart using the chopsticks as a guide to keep from cutting all the way through. The slices should stay connected at the bottom. Carefully fan out the sliced pieces without breaking them apart. Place the cut potato in the prepared bowl of water while you cut the remaining potatoes.
  • Melt butter in a saucepan over medium heat. Add a couple of sprigs of rosemary, the sliced garlic, and a sprinkle of salt and pepper. Let sit a few minutes to season the butter.
  • Remove potatoes from water and dry thoroughly. Place on a baking sheet. Brush potatoes with some of the melted butter and bake for 1 hour. Halfway through cooking, the potatoes will start to fan out. When this happens, brush with some more of the melted butter.
  • Remove from the oven. Brush with remaining butter, sprinkle with salt, and garnish with chopped parsley. Serve right away.

2 Bartlett pears, halved and cored
2 d'Anjou pears, halved and cored
1 red pear, halved and cored
2 tablespoons white sugar
½ lemon, juiced
½ (8 ounce) package cream cheese, softened
½ cup confectioners' sugar
½ teaspoon vanilla extract
1 tablespoon turbinado sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Fit puff pastry into a 10-inch square tart pan with removable sides.
  • Place a pear half, cut-side down, onto a work surface. Place a chopstick above and below the pear half, so the pear is framed on the top and bottom. Thinly slice the pear half lengthwise, stopping when the knife hits the chopstick and leaving the bottom 1/4 inch of the pear intact. Repeat with the remaining pear halves.
  • Place hasselbacked pears in a bowl; add white sugar and lemon juice and gently toss to coat. Let hasselbacked pears stand for 5 minutes.
  • Mix cream cheese, confectioners' sugar, and vanilla extract together in a bowl; spread over puff pastry. Arrange hasselbacked pears over cream cheese layer, cutting some of the halves into quarters if needed to fit them in. Slightly fan out each pear and drizzle any accumulated juices from the pear bowl over pears. Sprinkle turbinado sugar over tart.
