1 (8 ounce) bottle CARNATION BREAKFAST ESSENTIALS® Powder Drink Mix
½ cup butter, melted
2 teaspoons vanilla
1 ½ cups fresh blueberries
Vanilla-flavored low-fat Greek yogurt
Additional fresh fruit

Steps:

  • Preheat oven to 350 degrees F. Spread oats and pecans in a shallow baking pan. Bake 10 to 15 minutes or until lightly toasted. Transfer oat mixture to a large bowl and add brown sugar, baking powder, salt, cinnamon, and nutmeg.
  • In a medium bowl, combine eggs, Carnation Breakfast Essentials® Classic French Vanilla Ready-To-Drink, butter, and vanilla. Add egg mixture and 1 cup of the blueberries to the oats mixture and stir to combine.
  • Transfer mixture to a 2-quart square baking dish. Top with remaining 1/2 cup blueberries. Bake 30 minutes or until the top is golden brown and a knife inserted near the center comes out clean.
  • Serve warm. If desired, serve with yogurt and/or additional fruit.

1/3 cup unsweetened applesauce (or mashed ripened banana. Swap with pumpkin puree for low carb.)
1/3 cup pure maple syrup
1 1/2 cups unsweetened almond milk ( or any other milk of your choice)
1 1/2 teaspoons pure vanilla extract
1/2 tsp baking powder
1 teaspoon ground cinnamon
1 teaspoon ground flax seeds (optional, for added fiber. Swap with hemp seeds, chia seeds or plant-based protein powder if desired.)
3 1/4 cups gluten-free old fashioned rolled oats
1/4 cup unsweetened shredded coconut
1 cup fresh blueberries
maple syrup
fresh blueberries
dairy-free yogurt or whipped coconut cream
splash of milk
extra sprinkle of cinnamon

Steps:

  • Preheat the oven to 350°F. Lightly grease a 9x13-inch baking dish with avocado oil spray or olive oil spray. Set aside.
  • In a large mixing bowl, whisk together the eggs, applesauce, maple syrup, vanilla and milk until combined. Add baking powder, cinnamon and flax seeds.
  • Stir in the oats, shredded coconut and blueberries.
  • Spread batter evenly into a casserole dish. Top with additional blueberries.
  • Bake in a preheated oven until just set and no longer jiggly - about 30-35 minutes.
  • Cool for 5 minutes before serving. Top with a drizzle of maple syrup, dairy-free yogurt or whipped coconut cream, a splash of milk and more fresh blueberries, if desired.

Steps:

  • Preheat oven to 350 degrees.
  • To a large mixing bowl, add the eggs, almond milk, maple syrup, melted butter, and vanilla extract. Whisk all of the wet ingredients together until well combined.
  • Next, add the gluten free oats, baking powder, ground cinnamon, and salt to the mixing bowl and stir until well combined.
  • Lastly fold the fresh blueberries into the oat batter.
  • Transfer the blueberry oatmeal batter to a greased 11×7 baking dish.
  • Bake at 350 degrees for 25-30 minutes until the oatmeal is just almost set.

1 cup applesauce
1 1/2 cups milk
3 cups quick oats or 3 cups regular oats

1 teaspoon cinnamon
1 cup blueberries

Steps:

  • Mix butter, brown sugar, eggs, applesauce and milk.
  • In separate bowl mix oats, baking powder, salt and cinnamon. Combine with wet mixture and add blueberries. May add more cinnamon to taste.
  • Pour into greased 9 x 9 inch baking dish. May be placed in refrigerator overnight. (If so, allow 5 to 8 minutes additional baking.).
  • Bake in a 350 degree oven for 35 minutes.
