Crustless Quiche image

This healthy crustless quiche has rich quiche flavor without the fuss of crust! Customize it with broccoli, bacon, spinach- anything you like!

6 large eggs
2/3 cup whole milk
¼ cup half-and-half
½ teaspoon kosher salt
¼ teaspoon black pepper
1 teaspoon Dijon mustard (optional)
Pinch ground nutmeg (optional)
1 1/2 cups mix-ins of choice: See below for suggestions and ingredient notes for a broccoli bacon version
2/3 cup grated Gruyère cheese (or swap fontina, sharp cheddar, or smoked mozzarella)
2 tablespoons chopped fresh chives
Cooked (crumbled bacon)
Chopped and sautéed broccoli
Caramelized onions
Cubed leftover ham
Roasted vegetables (roughly chopped)

Steps:

  • Place a rack in the center of your oven and preheat the oven to 350 degrees F. Coat a deep 9-inch pie dish with nonstick spray.
  • Prepare any mix-ins (see recipe notes for a broccoli bacon version and the blog post above for more suggestions).
  • In a large mixing bowl, whisk together the eggs, milk, half-and-half, salt, pepper, mustard, and nutmeg.
  • Scatter the mix-ins evenly across the bottom of the prepared pie dish.
  • Sprinkle the cheese on top.
  • Carefully pour the egg mixture into the dish. Place the dish on a rimmed baking sheet. Sprinkle the chives over the top.
  • Bake the quiche on the baking sheet until the center is set, about 35 minutes. It should look puffed and golden at the edges, and when a thin, sharp knife is inserted in the center, the center should be cooked through without visible liquid. Let cool a few minutes. Cut into big wedges. Enjoy warm.

1 cup Shamrock Farms® Cottage Cheese
cooking spray
1 cup frozen mixed vegetables, cooked and drained
4 eggs
¼ cup unbleached all-purpose flour
1 teaspoon salt
¼ teaspoon freshly ground black pepper
2 cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spray an 8x8-inch baking dish with cooking spray.
  • Allow mixed vegetables to cool once cooked.
  • Combine eggs, Shamrock Farms Premium Sour Cream, Shamrock Farms Cottage Cheese, flour, salt, and pepper in a medium bowl. Stir together or blend in a food processor until the mixture is smooth, about 1 minute.
  • Pour the egg mixture into a bowl with the vegetables. Add 1 cup cheese and mix. Pour the mixture into the baking dish and smooth out the top. Top with remaining cheese.
  • Bake until set, about 45 minutes. Remove the baking dish from the oven. The quiche will be puffed up, but will fall slightly as it cools. Allow it to cool, then refrigerate. Cut into squares and serve.

1 to 2 tablespoons olive oil
1 yellow onion
diced
2 cups chopped mushrooms
1 bell pepper
diced
1 ½ cups chopped broccoli
broccoli slaw
or shaved Brussels sprouts
2 large eggs
3 egg whites (about ½ cup)
1 cup grated fat-free or reduced-fat cheddar cheese or cheese blend of your choice
One 3.5-ounce container reduced-fat feta cheese
1 tablespoon chipotle seasoning or other spicy seasoning or sauce (such as red pepper flakes
chipotle powder
or sriracha)
to taste
½ teaspoon sea salt
¼ teaspoon black pepper
Giant handful of spinach
Cooking spray
Olive oil spray
2 tablespoons breadcrumbs (preferably gluten-free)

Steps:

  • Preheat the oven to 350˚F
  • In a large skillet, heat the olive oil over medium heat
  • Add the onion and cook, stirring until translucent, about 5 minutes
  • Throw in the mushrooms, bell pepper, and broccoli and cook, stirring often, until the vegetables are tender, 7 to 10 minutes
  • While the veggies cook, put the eggs and egg whites in a bowl and mix with a fork until they are fully combined
  • Stir in the cheddar and feta and set aside
  • When the veggies are soft, season with the chipotle seasoning, sea salt, and black pepper
  • Add the spinach and stir until wilted
  • Turn off the heat and let the veggie mixture cool while you prepare the "crust
  • " Spray a glass pie dish lightly with cooking spray, then coat it lightly with olive oil spray
  • Scatter the breadcrumbs across the bottom and then shake and swirl the pie dish until the crumbs evenly cover the bottom
  • Add the veggie mixture to the egg-cheese mixture and stir to combine, then pour it all into the prepared pie dish
  • Bake the quiche for about 30 minutes, until firm in the center
  • Serve warm, or let the quiche cool for 10 to 15 minutes, cover, and refrigerate for up to 2 days
