HEALTHY DRIED ZUCCHINI SIDE DISH-MALEUN HOBAK NAMUL
Korean Dried Zucchini Side Dish that is healthy, delicious and so easy to prepare. Great on Bibimbap and in Fried Rice.

Steps:
- Soak dried zucchini (마른 호박 maleun hobak) in warm water for 1 hr.
- Strain zucchini slices and discard the water. Squeeze excess water from zucchini by squeezing them gently with your hands.
- Season rehydrated zucchini with guk kanjang, mirin and salt. Mix seasoning into zucchini by mixing them gently with your hands.
- Heat a pan with 1 tsp perilla oil (or sesame oil) and saute zucchini on medium heat for 2 min.
- Add garlic, green onions and 2-3 Tbs water (depending on how dry or wet you like it). There should not be much extra liquid when you are done.
- Saute for another 3-4 min. until zucchini slices are tender and seasoned. You can also brown it a little by sauteeing on med high heat instead.
- Taste and adjust seasoning if needed. Sprinkle sesame seeds.

- Cut the zucchini in half lengthwise (cut into quarters if using a round zucchini). Then cut crosswise into about 1/4 to 1/3-inch thick slices.
- You can use saeujeot as is or finely chopped. This is very salty, so use 2 teaspoons first and add more if needed.
- Heat a pan with the oil over medium high heat. Add the zucchini, garlic and saeujeot (or salt or fish sauce) to the pan. Cook for 2 to 3 minutes, stirring well. Add 2 tablespoons of water to the pan while stir frying. You can add another spoon or two of water if the pan is dry.
- Add the scallion, sesame oil and sesame seeds. Continue to cook until the zucchini is softened and turns translucent, about 2 to 3 minutes. Do not overcook. Taste and add more salted shrimp or salt if necessary.

- Sprinkle 1 ½ tsp fine sea salt over sliced zucchinis and use your hands to gently rub the salt evenly into each slice. Set it aside for about 20 minutes. This will help bring out the extra moisture from the zucchini. After 20 minutes, gently squeeze out the water.
- Heat 1 ½ tbsp avocado/coconut oil over medium heat, when hot, lower the heat to medium-low, add zucchinis and stir-fry for about 3 minutes or until the zucchinis turn slightly softer.
- Add minced garlic, chopped green scallions, sesame oil, and sesame seeds. Stir-fry another 2 minutes and turn off the heat. Taste and see if more salt is needed.

- Cut squash/zucchini into 0.25 inch/6 mm thick slices which is a pretty thick slice. Don’t cut too thin. Then cut into equal sizes. If using Korean round Aehobak like this one, cut into quarters like below. If using common long zucchini, cut into 1/2 circle.
- Chop Saewoojeot (fermented shrimps) until it looks like this. When scooping out Saewoojeot from the jar, try to take out the shrimps but not the brine. Too much of the additional brine will make it too salty.
- In a bowl, add cut squash and chopped saewoojeot and mix gently. – with your hands or a spoon. Try not to damage the squash as you mix. Let it sit for 30 minutes. Turning over 2-3 times during.
- While you wait, chop fresh garlic and green onions. Optionally, you can also add some thin slices of fresh red chili peppers. Measure water and have it ready.
