HOMEMADE FRENCH ONION DIP
Recipe video above. Classic French Onion Dip - made at home! The key to the amazing flavour base is to cook the onions slowly because they sweeten and caramelise.

- Melt the butter in a fry pan over medium heat.
- Add the onions, salt, pepper, onion powder and cayenne pepper. Cook for 5 minutes, stirring. Then reduce the heat to medium low and cook for 20 to 25 minutes, stirring occasionally. The onions should be sweet and golden. Remove from stove and allow to cool.
- Place the cream cheese, sour cream and mayo in a bowl, mix until smooth (use microwave in 10 sec bursts if needed to assist)
- Add the caramelised onions. Mix until just combined. Refrigerate at least 2 hours to allow flavours to develope, overnight is better!
- Serve at room temperature, garnished with chopped chives if desired. Best served with crinkle cut plain potato chips!

- Caramelize Onions: Heat oil over medium/low heat, preferably in a heavy-bottomed pan (like cast iron). Add onion, stirring to evenly coat with oil. Cook for 10 minutes, then sprinkle with salt. Continue cooking for 30 to 45 minutes, stirring every couple minutes, until onions are golden brown and caramelized.
- Add Garlic: Add garlic at the very end, cooking for just 2 or 3 minutes with the onions, then remove from heat. Roughly chop and allow to cool slightly.
- Stir: Combine cooled onion mixture with yogurt, Worcestershire, pepper, and salt in a medium bowl. Taste and adjust seasonings as needed.

HEALTHY FRENCH ONION DIP

- Add the oil and onions along with a big pinch of salt to a very large sauté pan. Cook over medium heat, stirring frequently until onions caramelize into a deep brown color. This may take 15 to 20 minutes or more. Keep an eye on them towards the end and add a splash of water or wine if the onions start to brown too much.
- Stir in the coconut sugar and let the onions caramelize further while stirring.
- Turn off the heat and stir in the Worcestershire sauce. Strip the leaves from the two sprigs of thyme and add to the onions. Transfer to a big plate to let cool.
- In a bowl, mix the cooled caramelized onions and the Greek yogurt until blended. The caramelized onions will create a very appetizing ripple effect so don't stir too vehemently - those streaks of caramel look oh so pretty in the dip. Stir in several turns of freshly ground black pepper. Taste for salt. If you are planning on serving this with salted chips, be sure to use a chip for your final tasting so you don't end up with too much salt in one bite. With veggie sticks, you can season the dip more liberally.
- Serve the onion dip garnished with a sprig of fresh thyme or some finely chopped chives, all surrounded by your dippers of choice.
- This dip firms up with time. If it gets too solid, stir in more yogurt or a splash of milk.

HEALTHY FRENCH ONION DIP

- Preheat a medium sized skillet over medium heat until hot.
- Turn heat to low, and add the oil, onion, and salt.
- Continue to cook over low heat, stirring occasionally, for about 20-25 minutes, until the onion is deeply browned and completely softened. If the edges start to burn, turn the heat down more and/or stir more frequently.
- Remove from heat, and cool completely.
- Remove any blackened pieces of onion, as those will be bitter.
- Mince the onion very finely, creating a lumpy paste. Alternatively, pop the onions in a small food processor and blitz them a time or two to create a paste.
- Mix the onion paste into the yogurt, and add the garlic powder. Stir to combine.
