These are yummy, kid-friendly, vegan chocolate chip cookies! Add in any other mix-ins of your choosing. Remember, the texture of the cookies will be different from regular baked goods because of the lack of dairy and eggs. The dough may be a little crumbly, but just smoosh it together and it will work fine!

½ cup coconut oil
1 cup brown sugar
¼ cup almond milk
1 tablespoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup vegan chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cream coconut oil and brown sugar together in a bowl with an electric mixer until thoroughly mixed, about 5 minutes. Mix in almond milk and vanilla until incorporated, 1 to 2 minutes.
  • Whisk flour, baking powder, baking soda, and salt together in a bowl. Add the flour mixture to the almond milk mixture, stirring until combined; dough will be crumbly. Fold in chocolate chips.
  • Roll the dough into tablespoon-sized balls and place on ungreased or parchment-lined baking sheets. Flatten each ball out a bit with your palm, pressing any crumbs back together.
  • Bake in the preheated oven until the edges are golden brown and set, about 8 minutes.

½ cup sugar
¾ cup dark brown sugar, packed
1 teaspoon salt
½ cup refined coconut oil, melted
¼ cup non-dairy milk
1 teaspoon vanilla extract
1 ½ cups flour
½ teaspoon baking soda
4 oz vegan semi-sweet chocolate, chunks
4 oz vegan dark chocolate, chunks

Steps:

  • In a large bowl, whisk together the sugar, brown sugar, salt, and coconut oil until combined.
  • Whisk in non-dairy milk and vanilla, until all sugar has dissolved and the batter is smooth.
  • Sift in the flour and baking soda, then fold the mixture with a spatula, being careful not to overmix.
  • Fold in the chocolate chunks evenly.
  • Chill the dough for at least 30 minutes.
  • Preheat oven to 350°F (180°C).
  • Scoop the dough with an ice cream scoop onto a parchment paper-lined baking sheet. Be sure to leave at least 2 inches of space between cookies and the edges of the pan so cookies can spread evenly.
  • Bake for 12-15 minutes, or until cookies just begin to brown.
  • Cool completely.

1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup vegan butter
1/2 cup sugar
1 1/2 teaspoons Ener-G Egg Substitute
2 tablespoons water
1/2 teaspoon vanilla
3/4 cup carob chips

Steps:

  • Preheat oven to 375 degrees.
  • In a medium sized bowl, sift together flour, baking soda, and salt. Set aside.
  • In another bowl combine the vegan butter, sugar, vanilla, egg replacer (mixed with the water beforehand. Mix well.
  • Add the dry ingredients. Mix.
  • Add carob chips (and nuts if desired).
  • Drop teaspoonfulls on a greased cookie sheet and bake 8-10 min(i like my cookies more chewy, so about 8 minutes works great.
  • Cool on a rack and try not to eat them all up too fast!

1 1/2 cups sugar
2 cups brown sugar
2 teaspoons vanilla (double, sometimes triple to enhance flavor)
3 eggs
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
4 1/2 cups flour
3 cups oatmeal
3 cups chocolate chips

Steps:

  • Add all ingredients. If you don't want oatmeal, do 6 cups flour.
  • Beat for 5 minutes. Note: with a Bosch Universal you may cut blending time in half.
  • Add chocolate chips. Mix.
  • Drop by spoonfuls onto cookie sheet.
  • Bake at 350°F for 10 minutes.
  • Notes � if dry, add a tbsp of water.
  • - if sticky add more flour.

Stir in the carob or chocolate chips until distributed. Form the dough into a disc shape and cover with plastic. Refrigerate at least 24 hours, 48 is way better. If you’re really feeling crazy, go for 72, but no more. Dough must be chilled at least 24 hours though.
  • When ready to bake, preheat oven to 350 degrees F. Line two cookie sheets with parchment. Form the dough into golf ball sized portions and place well spaced on the sheets. Sprinkle with salt (I actually like pink salt, but whatever finishing salt floats your boat will work).
  • Bake about 13 minutes. Cookies should look rather underdone – that is okay. Serve warm or cool completely on the tray. Cookies may be stored in an airtight container for up to 5 days or frozen, wrapped in parchment and foil, and placed in a zipper bag for up to 3 months.
