PENNE PASTA SALAD
I came up with this recipe one day while experimenting in my kitchen. This salad makes a great side dish with just about any kind of meat.

Steps:
- Cook pasta according to package directions; drain and rinse in cold water. Meanwhile, combine tomatoes, green pepper, onions and olives. Stir in pasta. Combine remaining ingredients; pour over salad and toss to coat. Cover; refrigerate at least 2 hours before serving.

- In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
- In a large bowl, mix together the salad dressing, mustard, cheese and dill.
- Add pasta, red onion and bell peppers. Toss well; season with salt and pepper. Chill before serving.

Steps:
- Cook rotini as pkg. directs. Rinse under cold water; drain. Cut broccoli into flowerets; cook in small amount of boiling water for 3 to 5 minutes or til crisp tender. Drain. Remove chicken from bones, cut into bite size pieces. In large bowl, mix pasta, broccoli, chicken, red pepper, ripe olives, and green onion. Toss lightly.
- In a small bowl, stir together sour cream, mayonnaise, wine vinegar, cream, sugar, salt, tarragon, and pepper. Pour over pasta mixture and toss. Cover and chill. Makes 4 main dish servings.

- Add tomatoes to the baking sheet and drizzle with a little oil and a pinch each salt and pepper. Arrange cut side up and roast for 20-25 minutes or until golden brown on the bottom and slightly shriveled. Set aside.
- Bring a large pot of water to a boil and add a generous pinch of salt. Once boiling add pasta of choice and cook according to package instructions. Then drain and set aside. Drizzle with a little olive oil and toss to prevent sticking.
- Make pesto by adding basil, garlic, pine nuts, lemon juice, vegan parmesan cheese, and salt to a food processor and blending to combine. Stream in the olive oil until creamy and smooth, scraping down sides as needed. If too dry, add a little water. It should be thick but pourable (see first photo).
