A quick and easy steak dinner from Dr. Ian Smith

Number Of Ingredients 12

1 London broil (top round beef steak)
about 1 1/2 pounds
1 tablespoon extra-virgin olive oil
1 tablespoon red wine vinegar
3 garlic cloves
minced
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh oregano
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Cooking spray

Steps:

  • Put the steak in a shallow dish
  • In a small bowl, whisk together the oil, vinegar, garlic, parsley, thyme, oregano, salt and pepper
  • Pour the marinade over the steak and toss to coat
  • Let stand at room temperature, turning occasionally in the marinade, for 15-20 minutes
  • Arrange an oven rack 4 inches from the heating element and preheat the broiler
  • Spray a broiler pan with cooking spray and place the steak on top
  • Transfer pan to the oven and broil steak until the top begins to brown, about 4 minutes
  • Carefully flip the steak and continue broiling until the meat is browning on the surface and cooked to desired doneness, about 4-5 minutes more for medium
  • Remove the steak from the broiler pan, cover it with aluminum foil and let stand for 10 minutes
  • Thinly slice the steak against the grain with a sharp knife and serve

LONDON BROIL WITH HERB BUTTER

1 beef bouillon cube
3 tablespoons extra-virgin olive oil
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 tablespoons fresh lemon juice
Kosher salt and freshly ground pepper
1 top round London broil steak (about 2 pounds)
4 tablespoons unsalted butter, softened
1 1/2 tablespoons chopped fresh chives
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chervil or tarragon
Kosher salt and freshly ground pepper
1 tablespoon fresh lemon juice

Steps:

  • Prepare the steak: Dissolve the bouillon cube in 3/4 cup hot water in a bowl; set aside to cool. Whisk in 2 tablespoons olive oil, the soy sauce, Worcestershire sauce, lemon juice, 1 teaspoon salt and 1/2 teaspoon pepper. Place the steak in a large resealable plastic bag, pour in the marinade and seal, squeezing out the air. Refrigerate for at least 4 hours or up to 1 day.
  • Prepare the herb butter: Mix the butter with the chives, parsley, chervil, a pinch of salt, 1/2 teaspoon pepper and the lemon juice in a bowl.
  • About 30 minutes before cooking, remove the meat from the bag (discard the marinade), dry it well and bring to room temperature. Heat a large heavy skillet over high heat, about 2 minutes. Rub the steak with the remaining 1 tablespoon olive oil. Sprinkle 1 tablespoon salt over the surface of the pan; add the meat and set a heavy skillet on top to weigh it down. Sear for about 7 minutes; turn the steak, replace the weight and cook until a thermometer inserted into the side reads 110 degrees for medium-rare, about 5 minutes.
  • Transfer the steak to a cutting board; brush with some of the herb butter, tent with foil and let rest for about 10 minutes. Thinly slice against the grain; top with more herb butter and drizzle with the pan juices.

This steak turns out moist and flavorful. I found this recipe in my local newspaper many years ago.

1/4 cup honey
3 tablespoons vegetable oil
3 tablespoons Worcestershire sauce
1 tablespoon reduced sodium soy sauce
1 lime, juice of
2 teaspoons bottled minced garlic
1 teaspoon onion powder
2 -2 1/2 lbs flank steaks

Steps:

  • Pour the honey into a 2-cup glass measure. Microwave the honey, uncovered, at high, 30 seconds to make it pour easily.
  • Remove the measure from the microwave and add the oil, Worcestershire sauce, soy sauce, lime juice, garlic and onion powder. Whisk to blend well.
  • Place the meat in a gallon-size zipper-top plastic bag. Whisk the marinade once more and pour it over the meat. Seal the bag and turn the bag several times to cover the meat with marinade. Refrigerate 8 to 24 hours, turning the bag at least once, if possible.
  • Turn on a gas grill to medium high.
  • Remove the meat from the marinade and discard the marinade. Grill the meat, covering the grill to the desired doneness, 7 to 10 minutes per side for medium-rare, depending on the thickness. Do not overcook.
  • Remove from the grill and slice across the grain. Serve at once, or let stand until ready to serve. Refrigerate leftovers, covered, up to 3 days.

1 teaspoon dried basil, divided in half
1 teaspoon crushed dried oregano, divided in half
1 tablespoon minced garlic
1/4 cup olive oil
1/4 cup red wine vinegar
3 tablespoons fresh lemon juice
2 lbs london broil beef, trimmed of fat
1 cup diced roma tomato
1 large shallot, diced
1/2 cup sliced kalamata olive
1/4 cup crumbled feta cheese

Steps:

  • In a small bowl, whisk together half each of basil and oregano; the garlic, olive oil, vinegar and lemon juice. Before placing the meat inside a resealable plastic bag, lightly score both sides with a sharp knife diagonally against the grain. This will allow the marinade to seep more easily into the meat, and can be used as a guide for slicing later on. Pour the marinade over the meat, massage it onto the meat, seal the bag and refrigerate for two hours; after one hour, turn bag over.
  • Also after one hour, prepare the "salsa" by lightly combining the tomatoes, shallot, olives and remaining half teaspoon of the basil and oregano; cover with plastic wrap and refrigerate. Add the feta cheese to the mixture just before serving with the meat.
  • Line a roasting pan with aluminum foil, spray the rack with nonstick spray and insert into the pan. Take the meat out of the bag (discard the bag and excess marinade), place on the rack and place the pan on the center rack inside the oven. After 20 minutes, turn the roast over; after 15 minutes the meat will be rare, 20 minutes for medium-rare. Remove to a cutting board and let it rest for 5-7 minutes to allow its juices to settle within itself before slicing; slice against the grain and thinly. Serve with the Greek "salsa".

1 2- to 2 1/4-pound top sirloin steak, about 1 1/4 inches thick
1/4 cup olive oil
1/4 cup fresh lemon juice
6 large garlic cloves
2 tablespoons Dijon mustard

Steps:
