HERB AND GARLIC ROASTED RED POTATOES



Herb and Garlic Roasted Red Potatoes image

Crispy and flavorful on the outside, soft and delicious on the inside, these herb and garlic roasted red potatoes are an easy side dish you're sure to love.

Number Of Ingredients 7

2 pounds small red potatoes (cut in half)
2-3 tablespoons olive oil
4 large garlic cloves (minced )
1 teaspoon dried dill
1 teaspoon dried parsley
1 tablespoon flaked sea salt
1/2 teaspoon black pepper

Steps:

  • Preheat your oven to 400°. Get out a large rimmed baking sheet.
  • In a large bowl place the potatoes, olive oil, garlic, dill, parsley, salt and pepper. Toss until the potatoes are coated in the spices and olive oil.
  • Place the potatoes onto the baking sheet, ensuring that they are in one layer.
  • Roast the potatoes in the oven for 20 minutes, then flip to brown the other side. Continue roasting, flipping every 15 minutes until the potatoes are crisp on the outside and cooked through.
  • Remove from the oven and serve hot.

- These roasted potatoes will become your replacement for French fries. Sometimes I cut them into strips and serve them with a garlic mayonnaise as an appetizer.

3 lbs. small new potatoes
2 tablespoons olive oil
1 tablespoon salt
1/2 teaspoon black pepper
2 tablespoons fresh rosemary
coarsely chopped or 1 teaspoon
dried (use your favorite herb)
4 cloves garlic thinly sliced

Steps:

  • Cut potatoes into 1" pieces (if potatoes are small, leave whole) and place in a large bowl. Toss with olive oil, salt, pepper, herbs and garlic. Place on the 4" rack and cook on power level HI for 20 to 25 minutes, depending on the size of your potatoes. Halfway through, push the PAUSE button, turn the potatoes, and then hit START button to resume cooking. (6 servings)

I got this recipe from a company that sold herbs in bulk. It was in their catalog. This is my favorite way to make potatoes.

2 lbs red potatoes
2 tablespoons olive oil
1 -2 teaspoon salt
1/2 teaspoon thyme
1/2 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon rosemary
1/4 teaspoon pepper
1/4 teaspoon garlic powder

Steps:

  • Clean potatoes.
  • Cut 1/2" slices into potato but do not cut all the way through. You should have a whole potato when done.
  • Put potatoes in a bowl and pour oil over them.
  • Mix the rest of the seasonings together.
  • Sprinkle over potatoes.
  • Wrap potatoes in foil.
  • Bake in 350 oven until done. 40 to 50 minutes.

2 pounds red potatoes, halved
⅓ cup olive oil

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a large plastic bag, combine the soup mix, red potatoes and olive oil. Close bag, and shake until potatoes are fully covered.
  • Pour potatoes into a medium baking dish; bake 40 minutes in the preheated oven, stirring occasionally.
