HIBISCUS-LIME TEA

Steps:
- Bring 4 cups of water to a boil in a medium saucepan. Add the hibiscus flowers, agave syrup and lime zest and let steep 7 to 10 minutes.
- Strain through a sieve into a pitcher, discarding the solids. Add the lime juice, 2 cups cold water and 2 cups ice. Serve over ice and garnish with lime.

HIBISCUS LIME MARGARITA
Homemade hibiscus syrup adds bright flavor and vibrant color to a fresh lime margarita.

Steps:
- To make Hibiscus Simple Syrup, mix sugar, hibiscus flowers and water in 2-quart saucepan. Heat just to boiling over medium-high heat, stirring until sugar is dissolved. Remove from heat; let stand 30 minutes. Strain mixture; discard solids. Transfer to storage container. Cover and refrigerate up to 3 days. Makes 1 1/3 cups.
- To make margarita, add 1 oz of the simple syrup, the tequila, orange-flavored liqueur and lime juice to cocktail shaker. Fill shaker with ice; cover and shake vigorously. Strain into cocktail glass filled with fresh ice. Garnish with lime slices.

HIBISCUS-MINT GRANITA
Granita is a light dessert, one you could enjoy any day of the week. The hibiscus flowers make it extra special and elevate the simple ice to dinner-party status. The trick to the granita's texture is to stir, or mash, it several times during freezing. This prevents it from freezing in a solid block.

- Method:
- Bring 2 cups water to a boil. Remove from the heat and steep the hibiscus flowers in the water for 5 to 7 minutes. Discard the hibiscus flowers. Add the sugar to the hot water and stir until melted. You may need to return it to the heat for a minute or two to dissolve the sugar. Remove from the heat and let cool to room temperature. Add the lime juice and chopped mint leaves.
- Pour the liquid into a shallow bowl and place in the freezer. Freeze for 3 to 4 hours while mashing the large chunks of ice every 30 minutes or so.
- Assembly:
- Spoon the granita into chilled glasses and garnish with the whole mint leaves.
