- Combine pineapple juice, brown sugar, bourbon, soy sauce, pepper and garlic powder in a bowl. Stir to dissolve sugar. Add the oil. Remove skin and bones from salmon fillets. Put fillets in baking dish and pour marinade over and let sit in the fridge for one hour or longer. Note: do not use a metal baking dish, glass baking dish recommended. The longer it can sit the more the marinade seeps into the fillets. Cook the salmon filets on the grill or on the stove top on medium heat. 5 to 7 minutes per side or until the fillets are cooked to your desire. Brush the extra marinade over the fillets as they are cooking. Arrange the fillets on a plate and sprinkle with the chopped chives.
HICKORY SMOKED SALMON SKEWERS

- Cut the salmon into 2-inch chunks. Fold the lemon coins in half and thread the salmon and lemon onto the soaked skewers, alternating between the salmon and lemon. Place the salmon skewers in a shallow dish and set aside.
- In a large bowl, whisk together the mustard, vinegar, honey, Worcestershire sauce, hot sauce, salt and pepper to taste. Pour marinade over the skewers, turning to coat, and marinate for 15 to 30 minutes.
- While the skewers are marinating, prepare your grill. Cut a large piece of Reynolds Wrap® Non-Stick Foil and firmly fit it over the grill grate. Preheat the grill to medium heat. For a charcoal grill, place 4 to 5 hickory wood chunks on top of hot coals and close the grill cover to let the smoke accumulate. For a gas grill, place wood chunks in a smoker box or in a large piece of foil; fold up side to make a packet. Poke holes with a fork and place on the grill. Close the cover to let smoke accumulate.
- Open the grill and lightly oil the foil.
- Cook the salmon skewers for 4 to 5 minutes per side, until fish is opaque in color. Plate the salmon skewers and sprinkle with parsley. Serve hot.

- Melt butter in a large heavy skillet over medium heat. Stir in brown sugar. Place salmon fillets on top of brown sugar mixture. Cook for 5 minutes on medium heat. Turn salmon, and pour bourbon around the fillets. Continue cooking for 5 minutes, or until fish flakes easily with a fork. Spoon glaze over the salmon, and serve.

- In a small saucepan, combine butter and garlic; cook and stir over medium heat until butter is melted. Drizzle 2 tablespoons butter mixture over salmon; top with lemon slices. Set aside remaining butter mixture for basting., Coat grill rack with cooking spray before starting the grill. Add wood chips to grill according to manufacturer's directions. Place salmon skin side down on grill rack. Grill, covered, over medium heat for 5 minutes., Carefully spoon some reserved butter mixture over salmon. Cover and grill 15-20 minutes longer or until fish flakes easily with a fork, basting occasionally with remaining butter mixture., Meanwhile, in a small bowl, combine the tartar sauce ingredients. - Sauté shallots in vegetable oil until medium brown. Add apple juice concentrate, balsamic vinegar, liquid smoke, and onion powder. Stir to combine ingredients. Simmer 7 minutes.
- Combine water and cornstarch, mix well and whisk into simmering liquid. Simmer 5 more minutes, stirring occasionally. Place in appropriate container and allow to cool.
- Preheat oven to 450 degrees. Oil bottom of roasting pan. Place salmon fillets on pan. Liberally brush each piece of salmon with the Hickory Glaze.
- Roast salmon for 15 to 20 minutes, depending upon thickness (approximately 10 minutes per inch of thickness).
