This is a version of cholesterol helping muffins that my MIL gave to me & then I have modified. It originates from the "Cholesterol Cure" book

3 2/3 cups oat bran
1/3 cup flax seed
1/2 cup honey
2 1/2 teaspoons cinnamon
2 tablespoons baking powder
1/2 cup sliced almonds
1 cup almond milk
1 cup prune juice
1 cup egg white
4 tablespoons canola oil
1 cup applesauce

Steps:

  • In a food processor mix oat bran & flax seed into a coarse flour.
  • Mix dry ingredients & wet ingredients separately, then combine.
  • Then I added
  • 2-3 mashed bananas.
  • 1 cup chopped carrots in food processor.
  • 4 scoops of vanilla protein powder
  • 1 cup of Blueberries, raisins, craisins, dates, or prunes.
  • Pour into 24 muffin tins. Bake at 425 for 14-15 minutes.

2 c Rolled oats
3 Egg whites
2 c Low-fat yoghurt
2 1/2 tb Baking Powder
1 c Oat bran
1 1/2 c Flour
1/2 c Sugar

Steps:

  • Preheat oven to 375F, prepare pans. Combine wet mix ingredients & mix well. Add the dry mix to the wet mix until just combined. Spoon into pans & bake for 20-25 mins. Makes 20 muffins. This is not OATMEAL, but oat BRAN muffins. I have made these for about five years now, and I really love them. They are great made with cinnamon or cranberry applesauce, as well as plain applesauce. My daughter loves them and I hope you will enjoy them, too!

½ cup dark brown sugar
1 ½ cups oat bran
1 ½ cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
½ teaspoon salt
2 eggs
1 cup chilled applesauce
4 tablespoons vegetable oil

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
  • Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.
  • Bake at 400 degrees F (205 degrees C) for 15 minutes or until golden brown.
  • VARIATIONS: Add 1 cup plumped raisins, with a little bit of raisin water (approximately 2 tablespoons). Or, before baking, sprinkle mixture of sugar and cinnamon over the tops of the muffins. Or, add 1 teaspoon cinnamon or nutmeg to flour mixture.

2 mashed bananas
1/4 cup skim milk
1/4 cup egg substitute
2 tablespoons oil (cooking)
1 teaspoon vanilla

Steps:

  • In a large mixing bowl, stir together flour, oat bran, brown sugar, baking powder, cinnamon, baking soda, and allspice.
  • In a medium mixing bowl combine mashed bananas, milk, egg substitute, cooking oil and vanilla.
  • Add all at once to the flour mixture. Stir until moistened.
  • Put into muffin pans you have sprayed with cooking spray.
  • Bake at 400 degrees for 18 to 20 minutes.
  • Makes 12 muffins. You can add raisins, nuts, shredded carrots, etc.
