2 tablespoons olive oil
3 eggs
2 egg whites
½ cup milk
1 cup all-purpose flour
2 tablespoons cold water

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Drop 1 teaspoon olive oil each into 6 muffin cups.
  • Beat eggs, egg whites, and milk together in a glass bowl until smooth.
  • Heat egg mixture in microwave oven until warmed, about 1 minute.
  • Stir flour into the egg mixture until completely incorporated into a batter.
  • Heat muffin cups in preheated oven until the oil is smoking, 2 to 3 minutes.
  • Stir cold water into batter. Pour 1/4 cup batter into each muffin cup.
  • Bake in the preheated oven until risen and cooked in their centers, about 25 minutes.

Here is recipe I came up with while cooking roast beef dinner. These Yorkies stay tall and have a perfect hollow centre for lots of yummy gravy.

4 eggs
2 cups all-purpose flour
2 cups milk
¼ cup vegetable oil

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • In a large bowl, whisk together the eggs and milk until well blended. Whisk in the flour one cup at a time until frothy and well blended. Set aside.
  • Distribute the oil equally among 12 muffin cups, a little over a teaspoon per cup. Place in the oven for 5 to 10 minutes, until smoking. Remove from the oven and quickly ladle about 1/4 cup of batter into each cup.
  • Bake for 30 to 35 minutes in the preheated oven. Serve immediately. I turn my oven off and leave the door partially open with the yorkies inside to keep them from deflating while waiting for everyone to ask for seconds.

Steps:

  • Preheat oven to 450 degrees F.
  • Mix the batter ingredients together. Let rest for 10 minutes
  • Preheat a Yorkshire pudding tray or muffin tin with 1/2-inch (1 centimeter) of oil in each section. After the 10 minutes divide the batter into the tray. Cook for around 15 to 20 minutes until crisp and puffy, don't open the oven door before then or they won't rise.

140g plain flour (this is about 200ml/7fl oz)
4 eggs (200ml/7fl oz)
200ml milk
sunflower oil , for cooking

Steps:

  • Heat oven to 230C/fan 210C/gas 8.
  • Drizzle a little sunflower oil evenly into two 4-hole Yorkshire pudding tins or two 12-hole non-stick muffin tins and place in the oven to heat through.
  • To make the batter, tip 140g plain flour into a bowl and beat in 4 eggs until smooth.
  • Gradually add 200ml milk and carry on beating until the mix is completely lump-free. Season with salt and pepper.
  • Pour the batter into a jug, then remove the hot tins from the oven. Carefully and evenly pour the batter into the holes.
  • Place the tins back in the oven and leave undisturbed for 20-25 mins until the puddings have puffed up and browned.
  • Serve immediately. You can now cool them and freeze for up to 1 month.

This recipe is from the British-born chef April Bloomfield, who says it dates back to an era when an English pub might cook a hunk of meat by dangling it from a hook above a roaring fire. The "pudding" emerged from a pan full of runny batter that would have been placed beneath the meat to soak up the juices. "The heat of the fire would make the Yorkshire pudding rise up, and all the fat would seep in," she said. (Life back then was "nasty, brutish, and short," as Thomas Hobbes once griped, but apparently there were upsides.) Of course, making Yorkshire pudding these days is a more domesticated undertaking. "Now what happens is you kind of recreate that," said Ms. Bloomfield, who serves it as part of an order-ahead prime-rib feast at the Breslin Bar & Dining Room in the Ace Hotel in Manhattan. "It's very soulful," she said. "Give me 10 Yorkshire puddings and a thin sliver of beef, and I'll be very happy."

  • Measure Your Ingredients. Always use equal volumes of egg, milk, and all-purpose flour. If you use too much flour, the resulting pudding will be heavy and dense.
  • Mix Thoroughly. Thoroughly beat the batter so it's totally free of lumps. If you're not sure the batter is smooth enough, strain it through a sieve before cooking.
  • Let the Batter Rest. To help puddings rise, let the batter sit for a minimum of 30 minutes—longer if possible (up to several hours is ideal). You can cook the puddings right away, but there is a chance they will not be as big as they should be.
  • Use the Right Fat. The fats need to reach a high temperature so only use lard, beef drippings, or vegetable oil in the tins and heat in the oven until the fat is smoking.
  • Then Stir Again. After the batter has rested, give it another good whisk to ensure there are no lumps. Add 2 tablespoons of cold water to help cool down the mixture before pouring it into the smoking hot fat.
  • Wipe Instead of Washing. If you plan to clean your pudding tins before using them, never wash them with soap and water. This spoils the surface of the tins and can cause the batter to stick and thus prevent puddings from rising.
  • Don't Fill to the Rim. Filling the tins with batter a third to half full is usually sufficient. If you use too much batter, the puddings will begin to rise but then soon collapse because of the weight.
  • Keep Batter Cool and Oven Hot. A successful rise will come from the combination of a cold batter going into a very hot oven. The oven should be as hot as possible—the highest setting your oven can handle (450 F to 500 F) without burning everything to a crisp.
  • Don't Use Convection. If possible, avoid using a convection oven, as the forced air in a fan oven can sometimes be too strong and cause the puddings to collapse.
  • Don't Open the Oven Door. Avoid opening the oven door during cooking because the cooler air will make the puddings collapse. Sometimes they make a recovery but will never rise quite as high as they should.
