Ingredients

125 g butter
1 teaspoon cocoa
125 g sugar
1 cup mixed fruit
100 g glace red cherries
1 egg, beaten
250 g biscuits, crushed
1 teaspoon vanilla
2 cups icing sugar
50 g butter
1 lemon, juice and zest of

Steps:

Place butter, cocoa and mixed fruit in a saucepan and bring to the boil over a moderate heat.
Add the egg whilst whisking and boil for another two minutes.
Remove pan from the heat and add biscuits, vanilla and halved cherries.
Press mixture into a lamington tin and let cool.
Mix together the icing sugar, melted butter and lemon zest, add enough juice to make a smooth icing, spread over the slice then chill.

3 c. flour
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
12 oz. butter
2 tsp vanilla
2 c sugar
3 eggs
2 c. apple sliced very thinly
1 c. toasted chopped pecans

Steps:

Grease a bundt cake pan with butter. Sift the flour, soda, salt and cinnamon tog. Set aside. Cream the butter and sugar; add eggs and vanilla and mix all tog. Mix the dry with the wet until well blended. Stir in the apples and pecans. Bake for 1 hr. at 375. Let cake rest in pan for 30 min then turn it onto a cooling rack.
