HOLIDAY BROCCOLI-CAULIFLOWER CASSEROLE
This is a great side dish that is perfect for any holiday. It goes well with any dinner - ham, turkey, prime rib, etc. I have also done this using all cauliflower, so I suppose you could do all broccoli if you prefer. It is also fine to make this ahead and reheat. You couldn't ask for a more versatile recipe!

Steps:
- Preheat oven to 350 degrees. Cut broccoli and cauliflower into bite-sized pieces and set aside. Mince garlic, adding a pinch of salt.
- Combine evaporated milk with both cans of soup (and optional butter) in a medium-size bowl and mix well. Add spices and garlic.
- Add broccoli and cauliflower to a lightly-greased casserole dish and evenly pour the milk mixture on top. Sprinkle the Parmesan cheese over top, cover and bake for about 30-40 minutes, or until vegetables are to preferred texture.
CHEESY BROCCOLI CAULIFLOWER CASSEROLE

Steps:
- Steam the broccoli and cauliflower florets just until bright in colour and only slightly tender (3-4 minutes). Set aside.
- Preheat the oven to 375 degrees Fahrenheit and grease a large 9-inch by 13-inch baking dish.
- Heat a medium pot over medium-low heat and add the butter.
- Melt the butter in the pot and add the flour, whisking constantly for about 1-2 minutes.
- Slowly pour in the milk, whisking constantly to remove lumps.
- Add the nutmeg and salt and pepper, whisking to combine.
- Add the cheeses and stir gently until melted and the cheese sauce is smooth.
- Add the steamed veggies and the diced red pepper to the bottom of the baking dish, pouring the hot cheese sauce over the top.
- Stir just a little bit to be sure all the veggies are well coated in the sauce.
- Mix the breadcrumbs and parsley in a small bowl and sprinkle them evenly over the top of the veggie and sauce.
- Drizzle the melted butter over top of the breadcrumb topping and bake, uncovered, for 25-30 minutes or until the cheese sauce is bubbling and the topping is golden brown.

- Break the broccoli and cauliflower into small florets, cutting off the thick stalks as you go. Steam them for 3 to 4 minutes until the broccoli is bright green, then remove them from the heat. Set aside.In a large skillet, melt the 6 tablespoons of butter and saute the onion and garlic until the onion starts to turn translucent, about 3-4 minutes. Sprinkle the flour over the top, whisk to combine, and cook for another 45 seconds. Pour in broth, whisking constantly, then cook until the sauce thickens. Reduce the heat to low and add the softened cream cheese, salt, pepper, seasoned salt, and paprika. Stir to combine until the sauce is nice and smooth. Taste and adjust seasonings, making sure it's nice and flavorful! Keep warm.In a small bowl, stir together the breadcrumbs and melted butter. Set aside.Layer half the broccoli and cauliflower in a small casserole dish. Pour on half the cream sauce, then sprinkle on half the cheese. Sprinkle a little paprika on the cheese, then repeat with another layer of broccoli, sauce, and cheese. End with a sprinkling of breadcrumbs. Bake in a 375 degree oven for 25-30 minutes, until cheese is melted and bubbly and the breadcrumbs are golden brown. Serve warm.

- In a saucepan,combine egg, mayo, soup, milk, onion, bell pepper and cheese and mix well. Heat just enough till well mixed.

This is my Mom's, (in Heaven now) famous recipe. It was always requested by her to make it, now it's requested from me to always bring to family gatherings. I vamped it up the other night and turned it into a Chicken, Broccoli, and Cauliflower Casserole with left-over Rotisserie chicken, and it was a very hearty one dish dinner! I highly recommend trying it both ways!

- Drain.
- Reserve one cup of cooking water when draining.

- Preheat oven to 350 degrees F (175 degrees C).
- Put broccoli and cauliflower in separate saucepans and pour enough water into the saucepans to cover the vegetables completely; bring each to a boil and cook until tender, 3 to 4 minutes. Drain each and mix in a 11x7-inch baking dish.
