These rollups are always a HUGE hit with the kids as well as the adults. A creamy, cheesy salsa mixture provides the filling. They are easy to make and may be prepared in advance.

1 (8 ounce) package cream cheese, softened
1 cup sour cream
1 (1 ounce) package dry fiesta-style ranch dressing mix
1 cup chunky salsa
1 ½ cups shredded Cheddar cheese
10 (10 inch) flour tortillas

Steps:

  • In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
  • To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

One 8-ounce package cream cheese, softened
2 tablespoons finely chopped fresh chives
1 small jar pimentos, patted dry
20 thin slices salami

Steps:

  • Mix together the cream cheese and chives in a bowl. Cut the pimentos into small pieces.
  • Spread a thin layer of the cream cheese mixture onto a salami slice; fold in half, then half again to form a wedge shape. Thread 2 pieces of pimento onto toothpicks and use to secure the roll-up. Repeat for the remaining salami slices.
  • Slice the roll-ups in half and serve on a platter.

1/2 cup chopped drained roasted red bell peppers (from 7.25-oz jar)
1/4 cup chopped ripe olives
1/4 cup chopped fresh basil leaves
1/4 cup shredded Parmesan cheese
4 spinach-flavor flour tortillas (8 to 10 inches in diameter)
Ripe olive pieces

Steps:

  • In medium bowl, mix all ingredients except tortillas and olive pieces. Divide mixture among tortillas, spreading to edges of tortillas. Roll up tightly. Press each tortilla roll into triangle shape, using fingers. Wrap in plastic wrap. Refrigerate at least 2 hours but no longer than 24 hours.
  • To serve, cut rolls into 1/2-inch slices. Place olive piece at bottom of each triangle to look like tree trunk; secure with toothpick.

These are absolutely delightful ! A friend of mine gave this recipe to me recently and I have already made these 3 times in 1 week! You can make these with plain tortillas but I used the red (sundried tomato tortilla) and green (spinach tortilla) to add some festive colour to the Holiday season! These have been gobbled up quickly wherever I take them and will not disappoint. They are almost too pretty to eat...but just try and stop them! Easy to make, festive looking and totally delicious ! What more could you ask for in an appetizer?

8 ounces light cream cheese
1 cup shredded cheddar cheese
2 green onions, finely chopped
1/2 cup finely chopped bell pepper (red and green)

4 tortillas

Steps:

  • Blend all ingredients together, except tortilla shells.

1 -1 1/2 lb boneless skinless chicken breast
2 (10 ounce) cans cream of chicken soup
5 ounces chicken broth, and
1/4-1/2 cup milk
1 cup of shredded cheddar cheese (or more... add to taste)
2 (8 ounce) cans crescent rolls

Steps:

  • Cut the chicken into small strips, or use breast tenders.
  • Add the chicken to a large pot, and cover with water.
  • boil the chicken for 45 minutes to an hour, or until it is cooked thoroughly.
  • Drain the chicken, and after it cools, shred it (remove any fat that is on it).
  • Wrap some of the chicken in each crescent roll, and place them in a casserole dish (spray the dish with cooking spray first), and sprinkle the remaining chicken evenly in the pan. Set the pan aside.
  • In a medium saucepan, heat the cream of chicken soup, broth, and milk over medium - medium high heat. When it is heated, add the cheese, and stir constantly until it is melted.
  • Pour the mixture over the "chicken roll-ups" in the pan, and bake at 350 degrees for 30 minutes, or until the tops of the rolls are slightly brown.
