  • Add the orange juice and grapefruit juice to a 10- to 14-ounce Tom Collins glass. Add crushed ice to fill the glass. Top off with the seltzer. Garnish with the orange twist.

Steps:

  • Add the gin, lemon juice, simple syrup and egg white to a shaker and vigorously dry-shake (without ice) for about 15 seconds.
  • Add 3 or 4 ice cubes and shake vigorously until well-chilled.
  • Double-strain into a chilled Collins glass and top with club soda.

2 ounces gin
3/4 ounce​ lemon juice (fresh; or lime juice)
3/4 ounce simple syrup (1:1 ratio)
Optional: 1​ egg white
2 ounces soda water (or enough to fill)
Garnish:​ lemon peel

Steps:

  • Gather the ingredients.
  • Pour the gin, lemon or lime juice, simple syrup, and egg white (if using) into a cocktail shaker filled with ice.
  • Shake vigorously , about 15 seconds if using the egg white, to ensure it is mixed thoroughly with the other ingredients. For an extra-frothy drink, discard the ice and dry shake for a few more seconds.
  • Strain into a chilled highball glass over fresh ice cubes.
  • Top with soda and garnish with a lemon or lime peel. Serve and enjoy.

Steps:

  • Pour the gin, lemon juice and sugar syrup in a cocktail shaker and fill up with ice cubes. Shake well until the outside of the shaker feels cold then strain into a tall glass filled with more ice and top up with sparkling water. Garnish with a lemon slice.

Fizzes, which have been popular drinks in the late morning and afternoon, are usually served in highball glasses. They are made from liquor, citrus juices and sugar, shaken with ice. The mixture is strained into glasses, which are then filled with club soda or other carbonated drink, including Champagne. Egg, both yolk and white, is used in some fizzes.

1 tablespoon superfine sugar
2 tablespoons lemon juice
1 tablespoon lime juice
3 or 4 ice cubes

Steps:

  • Combine all ingredients except the soda in a cocktail shaker and shake vigorously. Strain into a highball glass and fill with soda.

1 cup water
1 (5-inch) piece ginger, sliced
1/4 cup gin
2 tablespoons lime juice
Soda water

Steps:

  • In a small saucepan, over medium heat, add the sugar, water and ginger. Stir until the sugar dissolves. Reduce the heat and simmer, stirring continuously, until thickened. Remove from the heat and set aside to cool.
  • Pour the gin into a glass filled with ice. Add 1/4 cup of simple syrup and the lime juice. Top with soda water and serve.
