OVEN HOME FRIES WITH PEPPERS AND ONIONS

- Preheat oven to 500 degrees F.
- Coarsely chop potatoes and transfer to a nonstick cookie sheet. Toss with oil, peppers, onions and seasonings and place in the oven 25 minutes, turning twice with spatula. Serve hot.
HOME FRIES WITH ONIONS
The recipe has been handed down at least three generations and it always gets oohs and aahs from my family when I decide to make it. I either serve it with steak or ham chops. Be careful when cooking the potatoes as they sometimes pop right out of the skillet. One of those screen covers would work really well.

Steps:
- Open cans and remove water.
- Dump potatoes out on a paper towel and blot excessive moisture off.
- Slice the onion and then chop it the other direction.
- In a skillet on medium-high heat melt 1-tablespoon of margarine.
- Saute the onion until tender.
- Remove onion from skillet and set aside.
- Add another tablespoon of margarine and melt it.
- Spread melted margarine so it coats bottom of the skillet.
- Place potato slices on to the skillet so each piece is touching the surface.
- As potatoes brown (golden), turn them over.
- (Since I double the recipe, I remove the browned potatoes and add more.
- uncooked ones to the skillet as they all don't fit in the pan at once.).
- Add the rest of the margarine to the skillet.
- After all of the potatoes have reached a golden brown on both sides, add.
- sauteed onions and fold into potatoes.
- Sprinkle garlic powder over cooking potatoes.
- Heat the onions & potatoes for another 20 minutes, flipping them every 5-minutes.
- Serve. Yum!

HOME FRIES RECIPE
Quick and easy home fries made from scratch. I'm using boiled potatoes, but you could use raw potatoes if you allow a bit more cooking time. Perfect side for breakfast.

- Cut the boiled and cooled potatoes into cubes.
- Slice the onion.
- Place skillet over Medium heat and let warm up.
- Add bacon grease or oil.
- Add the onions.
- Add the cubed potatoes.
- Add garlic powder.
- Add black pepper.
- Add salt.
- Stir together well.
- Stir and cook until onions are translucent and potatoes are browned.
- Add the ketchup.
- Stir and let cook and brown about two more minutes.
- Serve warm
- Enjoy!

- Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
- Cook the bacon in a large cast iron skillet over medium heat until crisp, about 4 to 5 minutes. Transfer to a paper towel-lined plate. Pour all but 1 tablespoon of the bacon drippings into a small bowl and set aside. Add the onion and cook, stirring, until golden brown, about 8 minutes. Transfer to a bowl.
- Wipe out the skillet and return to medium-high heat. Heat the remaining bacon fat and 2 tablespoons vegetable oil in the skillet. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on 1 side, about 4 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, about 6 minutes or until well browned. Stir in the onions, heat through, and sprinkle with the parsley and cayenne, if desired. Transfer to a warm platter and crumble the bacon on top, serve. Copyright 2005 Television Food Network, G.P. - Cover potatoes with salted cold water by 1 inch in a large pot, then boil until just tender when pierced with a knife, about 20 minutes. Drain potatoes and cool completely, then chill, wrapped in plastic wrap, at least 8 hours.
- Quarter potatoes lengthwise and cut crosswise into 1/2-inch pieces.
- Cook onions with 1/4 teaspoon salt and 1/4 teaspoon pepper in 1 tablespoon butter in a 12-inch nonstick skillet over moderately low heat, stirring occasionally, until pale golden, 10 to 15 minutes, then transfer to a bowl.
- Heat 1 tablespoon butter and 1 tablespoon oil in skillet over moderately high heat until foam subsides, then sauté half of potatoes with 1/4 teaspoon salt and 1/8 teaspoon pepper, stirring occasionally, until golden, 8 to 12 minutes. Add half of onions and sauté, stirring occasionally, until potatoes are golden brown, about 3 minutes. Transfer to a bowl and keep warm, covered. Cook remaining potatoes and onions in same manner.
- Return all vegetables to skillet and gently toss with remaining tablespoon butter and chives until butter is melted. Season with salt and pepper.

Steps:
- In a large skillet, cook chopped bacon over medium-low heat until crisp. Remove bacon from pan with slotted spoon and drain on paper towels. Remove bacon drippings from pan and reserve. , Working in batches, add 1/4 cup bacon drippings, potatoes, onion, salt and pepper to pan; toss to coat. Cook and stir over medium-low heat until potatoes are golden brown and tender, 15-20 minutes, adding more drippings as needed. Stir in cooked bacon; serve immediately.

- Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
- Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.

- Cut potatoes into 3/4-inch cubes. Cut onion into 2 or 3 slices, then cut rings in half and separate the layers.
- Heat oil in a 10-inch nonstick skillet over medium-high heat. Add cubed potatoes to the hot skillet and season with garlic salt and seasoned salt. Spread them out evenly over the bottom and allow to cook for 5 to 8 minutes without turning. Turn, and continue cooking, turning every 5 to 8 minutes, until evenly browned.
