A great answer to that eternal question - "What do I do with all these apples?" - apple butter is a sweetened, concentrated, lightly spiced spread that's smoother than jam and thicker than applesauce and fantastic on buttered toast, thinned with vinegar as a sauce for pork chops, or used to top breakfast treats like pancakes, waffles or biscuits. The apples here are intentionally left unpeeled and uncored to take advantage of the extra flavor in the peels and pectin-rich cores. (A pass through a food mill or sieve after cooking will pull them out.) As for the ideal apple butter apple - well, there is none. Use nearly any variety: This recipe is only improved by mixing and matching. Note, too, that this can be made on the stovetop or in the oven. The oven method may take longer, but it can be worthwhile if only to avoid the inevitable splattering of the stovetop method.

4 pounds apples (about 10 to 12 medium), washed, unpeeled, uncored, cut into 1-inch chunks
1/2 cup apple cider vinegar
3 allspice berries (optional)
2 cinnamon sticks (optional)
1 2-inch piece of ginger, peeled and sliced (optional)
1 star anise pod (optional)
1 1/4 cups granulated sugar
1 cup light brown sugar
Small pinch kosher salt

Steps:

  • Combine apples, vinegar, allspice berries (if using), cinnamon sticks (if using), ginger (if using), star anise pod (if using) and 4 cups water in a large, heavy bottomed pot over high heat. Bring to a simmer and reduce heat to medium-low. Cook, stirring occasionally, until the apples are completely softened and the liquid has reduced by half, 30 to 40 minutes. (Some pieces of apple might float at first; they will sink and become submerged as they soften.) Remove from heat and let cool slightly.
  • Leaving behind allspice berries, cinnamon sticks and star anise pod, pass the apples through a food mill. (Alternatively, working in batches, ladle apples into a strainer or colander, and using a ladle, wooden spoon or spatula, press apples to pass pulp through, leaving behind seeds and skin.)
  • To finish on the stovetop: Place apple pulp in the same large, heavy-bottomed pot, add granulated sugar and light brown sugar and stir to dissolve. Cook on medium-low heat, stirring occasionally, until mixture is thick, glossy and a deep golden brown (somewhere between honey and molasses), 2 to 2 1/2 hours. (Around the 1 1/2-hour mark, things will start to bubble rather violently. Stirring constantly will help, but expect, and be careful of, a few splatters.) To test the thickness, spoon a bit onto a plate: The mixture should set almost immediately with no spreading or wateriness. If it's not there yet, cook another 8 to 10 minutes and test again. When the desired consistency is reached, season with kosher salt.
  • To finish in the oven: Heat oven to 300 degrees. Place apple pulp in a 9-inch by 13-inch (3-quart) baking dish, add granulated sugar and light brown sugar and stir to dissolve. Place in oven and let cook, stirring every 30 minutes or so, until mixture is thick, glossy and a deep, golden brown color (somewhere between honey and molasses), 3 to 3 1/2 hours. To test the thickness, spoon a bit onto a plate: The mixture should set almost immediately with no spreading or wateriness. If it's not there yet, cook another 20 to 30 minutes and test again. When the desired consistency is reached, season with kosher salt.

5 pounds apples (cored and cut into 8 wedges - Use one of those apple slicers if you have one.)
1/2 cup apple cider (or natural apple juice)
1/4 cup maple syrup (up to 1/2 cup, depending on the tartness of the apples, Grade B recommended for strongest flavor )
4 whole cinnamon sticks
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice

Steps:

  • Preheat the oven to 350° F/175° C.
  • In the large roasting pan, toss the apples with the cider and maple syrup, then lay the cinnamon sticks around in the apples. Roast until the apples are very soft and mash easily, 30 to 45 minutes.
  • Remove the cinnamon sticks. If you left the peels on, mash the apples slightly with a potato masher, then run them through the food mill. Use the fine blade for apple butter and the coarse blade for apple sauce. If you peeled the apples before roasting, then process the cooked apples in a food processor. Applesauce is finished, just set aside to cool, then put into containers and refrigerate or freeze. You can also keep a cup or two of applesauce and turn the rest of the mixture into apple butter, just make sure that the mixture is finely ground so that you get that nice, smooth texture for which apple butter is famous.
  • Reduce oven temperature to 300° F/150° C. Stir the milled apples with any remaining liquid from the roasting pan and the ground cinnamon, cloves, and allspice. Add more maple syrup if desired.
  • Spread the mixture into the roasting pan, making sure to spread evenly throughout the pan. Cook in the oven for 1 to 1-1/2 hours, depending on how much you started with. Stir every 30 minutes, working the edges into the middle. Test for doneness by dropping a spoonful onto a plate. If no liquid is released, then the apple butter is ready.
  • Remove from oven and allow to cool completely. Spoon into containers and refrigerate or freeze.
  • To can the apple butter, prepare the jars according the directions for boiling water canning. Skip step 6 above (cooling) and add the hot apple butter to the hot jars, leaving 1/4-inch (0.5 cm) head space. Remove the air bubbles and adjust the air space by adding more butter if necessary. Make sure head space is precisely 1/4-inch (0.5 cm), or the jars will not seal properly. Wipe the rim clean and center the lid on the jar. Screw the band on just until finger tight. Do not over tighten.
  • Process jars according to the boiling water canning directions for 10 minutes with the lid on. Remove the canner lid and wait 5 more minutes, then remove the jars. Allow them to cool completely, then store in a dark location for up to one year.

Steps:

  • Preheat the oven to 250 degrees F. Combine the apples, apple cider, brown sugar and 1/2 teaspoon salt in a large ovenproof pot or Dutch oven over medium heat. Bring to a simmer, partially cover and cook until the apples are soft, about 20 minutes.
  • Remove from the heat and stir in the lemon juice, cinnamon, vanilla and cloves. Puree the mixture in a blender in batches until smooth (or use an immersion blender).
  • Return the mixture to the pot and bake, uncovered, stirring every 30 minutes, until thickened and deep amber, 2 1/2 to 3 1/2 hours (the timing will depend on the kind of apples you use). Remove from the oven and let cool completely, then transfer to an airtight container and refrigerate up to 5 days.

5 pounds McIntosh apples, chopped
1 cup white sugar
1 cup brown sugar
¼ cup butter
1 tablespoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground nutmeg
3 (1 pint) canning jars with lids and rings, or as needed

Steps:

  • Place apples in a large pot and cover with water; bring to a boil. Reduce heat to low; simmer, stirring occasionally, until apples are softened, 5 to 10 minutes.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Press apples through a food mill to separate seeds, cores, and skin from apple pulp and transfer pulp to a bowl. Stir white sugar, brown sugar, butter, cinnamon, ginger, and nutmeg into apples. Pour apple mixture into a 9x13-inch baking pan.
  • Bake in the preheated oven, stirring and scraping sides every 20 to 30 minutes, until apple butter is red and thickened, 2 to 4 hours.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack apple butter into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 30 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

I went apple picking and knew I wanted to make apple butter, but I also knew I didn't want to stir it for hours on the stove. I was glad to find recipes for baking it at a low temperature instead. I adapted one I found to make this spiced, not-too-sweet treat! I like it on toast or over oatmeal. Keep refrigerated for a few days, or freeze for later use.

1 star anise
2 whole cloves

Juice of 1/2 lemon
1 teaspoon lemon zest

  • In a Dutch oven over medium heat, melt butter and add apples. Cook apples until slightly softened, about 5 minutes. Add cider, bring to a boil, and reduce heat to a simmer. Let simmer, partially covered and stirring occasionally, until soft, about 30 minutes.

500 g cleaned and cut apples (preferably a variety of tart apples)
100 ml apple cider vinegar
100 ml water
250 g brown sugar
1 cinnamon stick
Half of a vanilla pod
1/4 teaspoon ground cloves
Pinch of salt

Steps:

  • Wash apples and remove any damaged parts. Place the apple pieces in a medium-sized oven dish. Add liquids and mix sugar within the apples. Add spices and salt. Cut the vanilla pod in half, use both the seeds and the pod in cooking.
  • Cook 3 hours 165 °C / 320°F (adjust if using the fan, middle rack). Give apples a couple of stirs and turns so that they cook evenly.
  • When the butter has caramelized, you can purée and push it through a sieve and cook 15 minutes more. If using peeled apple chunks, a hand-mixer is also an option to smooth the butter to the final texture.
  • Can the butter in clean sterilized jars. A wide steel canning funnel* is a great help if you don't want to mess with the jar sides and lids. Let the apple butter jars cool before transferring into the fridge.

1 c cider vinegar (replace with water if you want it sweeter)
2 c light or dark brown sugar
1 1/4 tsp ground cinnamon

  • 1. Place apples and vinegar in large stainless stell pot with 2 cups water. Cover, and bring to a boil. reduce heat to medium, and cook 45 minutes to 1 hour, or until apples have applesauce-like consistency. Run mixture through food mill or press through sieve to separate pulp from skin and seeds; discard skin and seeds. transfer pulp (you should have about 5 cups) to large ovenproof dish or Dutch oven.
