4 medium apples, peeled and chopped
2 tablespoons butter
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
2 teaspoons cornstarch
1 sheet frozen puff pastry, thawed
Egg wash (1 egg beaten with 1 teaspoon water)

Steps:

  • Heat oven to 400°F. Line cookie sheet with cooking parchment paper.
  • In 2-quart saucepan, heat apples, butter, brown sugar, cinnamon and cornstarch to boiling over medium-high heat. Reduce heat; simmer about 5 minutes or until thickened and apples are tender. Set aside to cool slightly.
  • Sprinkle work surface lightly with flour. Roll out thawed puff pastry into 15-inch square. Cut into 4 smaller squares.
  • Brush each square with egg wash; spoon apple mixture onto center of each. Fold each in half diagonally to form a triangle; press edges together to seal. Use back of fork to crimp edges. Transfer to cookie sheet; brush with egg wash. Use sharp knife to cut a few vents into each turnover.
  • Bake 25 to 30 minutes or until golden.

1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
4 cups chopped peeled apples
1 package (17.3 ounces) frozen puff pastry, thawed
TOPPING:
3 tablespoons butter, melted
2 tablespoons sugar
1/4 teaspoon ground cinnamon
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine the sugar, flour and cinnamon; add apples and toss to coat. On a lightly floured surface, roll out each pastry sheet into a 12-in. square. Cut each into four squares. , Spoon 1/2 cup apple mixture into the center of each square; fold diagonally in half and press edges to seal. Place on a parchment-lined baking sheet., In a small bowl, combine the butter, sugar and cinnamon; brush over pastry. Bake at 400° for 12-16 minutes or until golden brown. 1 teaspoon grated orange zest
3 tablespoons freshly squeezed orange juice
1 1/4 pounds tart apples, such as Empire or Granny Smith (3 apples)
3 tablespoons dried cherries
3 tablespoons sugar, plus extra to sprinkle on top
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Pinch kosher salt
1 package (17.3 ounces, 2 sheets) frozen puff pastry, defrosted
1 egg beaten with 1 tablespoon water, for egg wash

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the orange zest and orange juice in a bowl. Peel, quarter, and core the apples and then cut them in 3/4-inch dice. Immediately toss the apples with the zest and juice to prevent them from turning brown. Add the cherries, sugar, flour, cinnamon, nutmeg, and salt.
  • Flour a board and lightly roll each sheet of puff pastry to a 12 by 12-inch square. Cut each sheet into 4 smaller squares and keep chilled until ready to use.
  • Brush the edges of each square with the egg wash and neatly place about 1/3 cup of the apple mixture on half of the square. Fold the pastry diagonally over the apple mixture and seal by pressing the edges with a fork. Transfer to a sheet pan lined with parchment paper. Brush the top with egg wash, sprinkle with sugar, make 2 small slits, and bake for 20 minutes, until browned and puffed. Serve warm or at room temperature.

1/2 tsp Salt
170 g Unsalted butter (3/4 cup or 1 and 1/2 sticks chilled, cut into small pieces)
25 g Sugar (2 tbsp)
120-135 ml Water (8-9 tbsp)
2 Apples ((peeled, cored and diced small))
50 g Granulated sugar (1/4 cup)
1/2 tsp Ground cinnamon
Pinch of salt
1 tbsp Corn flour
60 ml Water (1/4 cup)
1 tbsp Lemon juice (optional)
1 Egg
1/2 tbsp Milk
12 g Sugar (1 tbsp for sprinkling on top)

Steps:

  • In a large bowl, whisk together the flour, sugar and salt. Add the cold butter and, toss it into the flour mixture and try to incorporate the butter into the flour.Add cold water, little by little into the flour mixture and, using a fork, gently toss and stir together until large lumps form and all of the flour has been moistened. Using your hands, pat the dough into a ball and wrap with plastic wrap or parchment paper. Refrigerate for 30 minutes or more until the dough is firm
  • In a small pan, add the sugar, cinnamon powder,salt,corn flour and water and bring it to boil .When it get thickened,stop cooking and take it out from the stove.
  • Line a baking sheet with parchment paper.
  • On a lightly floured work surface, roll out one half of the dough to ⅛-inch thickness. Cut the pie dough sheet into circles using a cookie cutter or into long rectangles or squares using a pizza cutter.Spoon about 1 to 2 tablespoons filling onto each dough sheet and fold it in half so the other side comes down over the filling. Seal the hand pie, and make a decorative edge by pressing the edges of the dough together with the tines of a fork.Transfer them to the parchment-lined baking sheet.
  • Freeze for 20 minutes or Refrigerate the assembled hand pies for 30 minutes.
  • Preheat oven to 400 degrees F
  • In a small bowl, whisk together an egg and milk for the egg wash. Remove the chilled hand pies from the refrigerator, and lightly brush with the egg wash. Using a sharp knife, cut a few small slits on the top of each hand pie, then sprinkle generously with coarse sugar.
  • Bake @400 F for 10 minutes and then reduce the temperature to 375 F and bake for another 18-20 minutes or Bake until the hand pies are golden brown, the baking time vary according to how thick we rolled the dough.
  • Remove the pies from the oven, and let stand to cool slightly before serving.Enjoy!

2 medium-large Bramley apples, peeled, cored and roughly chopped
50g golden caster sugar
½ tsp ground cinnamon
1 tbsp butter
1 Gala or sweet dessert apple, peeled, cored and cut into 1cm dice
320g pack puff pastry
2 tbsp milk to glaze
2 tsp demerara sugar

Steps:

  • Put the Bramley apple, sugar and cinnamon in a small pan with 1 tbsp water. Cover with a lid and simmer over a low heat for 10-15 mins until the apple breaks down and turns into a compote.
  • Stir in the butter and the Gala apple and cook for a further 5 mins, uncovered, until the Gala apple is just soft but retaining its shape, and any excess water has evaporated to make a thick compote around the Gala chunks. Remove from the heat and leave to cool.
  • Heat the oven to 220C/200C fan/gas 7. Unravel the puff pastry sheet out on a work surface, and cut into 4 even rectangles. Divide the apple filling to one side of each of the puff pastry rectangles, leaving a 1cm border. Brush the border with milk and fold over the empty side of pastry over the filling and crimp together. Brush with more milk and sprinkle over the sugar. Make a small steam hole in the middle of the turnovers.
  • Transfer to a parchment-lined baking sheet and bake for 20-25 mins until golden and puffed up. Leave to cool for 10 mins on a wire rack (the filling will be molten when it first comes out the oven) before serving warm with a scoop of vanilla ice cream, or serve at room temperature. Keep for 2 days in an airtight container.

Homemade Apple Turnovers with a filling that tastes like Apple Pie in flaky puff pastry dough.

1 lb puff pastry ((2 sheets) thawed according to package instructions)
1 Tbsp all-purpose flour (for dusting)
1 1/4 lb Granny Smith apples
1 Tbsp unsalted butter
1/4 cup brown sugar (lightly packed)
1/2 tsp ground cinnamon
1/8 tsp salt
1 egg+ 1 Tbsp water for egg wash
1/2 cup powdered sugar
1-2 Tbsp heavy whipping cream

Steps:

  • Preheat Oven to 400˚F. Remove puff pastry from the freezer and thaw according to instructions while making and cooling the apple filling.
  • In a medium pot, melt 1 Tbsp butter over medium heat. Add diced apples and cook, stirring occasionally until softened (5 min).
  • Reduce heat to low and stir in 1/4 cup brown sugar, 1/2 tsp cinnamon, and salt. Continue to simmer 3 minutes until apples are soft and caramelized. Remove from heat and set aside to cool.
  • Use a rolling pin to roll the first sheet of thawed pastry to an 11" square. With a pizza cutter, cut into 4 equal-sized squares. Place cooled apple mixture over half of each square, leaving at least a 1/2" border.
  • Thoroughly Beat together 1 egg and 1 Tbsp water. Brush eggwash lightly on edges of the pastry (just enough to seal), bring the edges together and crimp tightly along the edges with a fork to seal. Repeat steps 4 and 5 with the second sheet of puff pastry to make 8 turnovers.
  • Transfer to a parchment-lined baking sheet, keeping them at least 1" apart. With a paring knife, cut 2-3 small slits in the top of each turnover.* Brush the tops with egg wash and bake 20-23 minutes or until golden and puffed.
  • While turnovers are still warm, stir together powdered sugar and heavy whipping cream (adding to your desired consistency) and drizzle glaze over turnovers.

2 1/4 cups + 2 tablespoons flour ((300 grams))
2 tablespoons sugar
3 teaspoons baking powder
1 pinch salt*
1/4 cup butter (frozen and shredded)** ((50 grams))
3/4 cup milk (whole or 2 %) ((180 grams))
1 large egg beaten
2-3 apples peeled and diced
1/2 - 1 teaspoon cinnamon
1/4-1/2 cup packed brown sugar ((55-110 grams))
2 teaspoons corn starch
1/4 cup water ((58 grams))
1/2 cup powdered / icing sugar
3/4 teaspoon vanilla
1 tablespoon cream (whole or whipping)

Steps:

  • Pre-heat oven to 375° (190° celsius). Line 2 cookie sheets with parchment paper.
  • TURNOVER DOUGH
  • In a large bowl whisk together the flour, sugar, baking powder and salt. Add the butter and mix with a fork. Add the milk and egg, and quickly mix together, move to a lightly floured flat surface, and knead lightly until dough comes together (dough might be too sticky, if so add a little more flour until it is just manageable, it must remain soft and a little sticky). Wrap in plastic and refrigerate while you make the apple pie filling.
  • APPLE PIE FILLING
  • In a small pot add the small diced apples, cinnamon, brown sugar, corn starch and water, stir to combine, heat on low heat until thickened, approximately 10 minutes. Remove from heat and let cool.
  • PUTTING IT TOGETHER
  • Remove the dough from fridge and roll flat, about pie crust thickness or even a little thicker if you want (be sure to lightly flour flat surface, top of dough and rolling pin). Roll the dough about pie crust thickness or even a little thicker if you want, and roll into a square shape (as much as possible).
  • With a sharp knife cut out squares, medium to large are the best size. Brush the squares with melted butter(melt 1-2 tablespoons butter), and place approximately 1-2 heaping teaspoons of the apple pie filling on one side of square.
  • Fold one corner over the other (to form a triangle) and seal edges with a fork dipped in flour (or use a pasta wheel). Place the turnovers on a parchment paper lined cookie sheet. Brush the turnovers lightly with milk and bake for approximately 15 minutes or until golden. Let cool slightly, eat plain or dust with powdered sugar or drizzle with vanilla glaze. Enjoy!
  • VANILLA GLAZE
  • In a small bowl whisk together powdered sugar, vanilla and cream, whisk until smooth (if you like it thinner add more cream). Drizzle over turnovers before serving.

2 tablespoons lemon juice
4 cups water
4 Granny Smith apples - peeled, cored and sliced
2 tablespoons butter
1 cup brown sugar
1 teaspoon ground cinnamon
1 tablespoon cornstarch
1 tablespoon water
1 (17.25 ounce) package frozen puff pastry sheets, thawed
1 cup confectioners' sugar
1 tablespoon milk
1 teaspoon vanilla extract

Steps:

  • Combine the lemon and 4 cups water in a large bowl. Place the sliced apples in the water to keep them from browning.
  • Melt butter in a large skillet over medium heat. Drain water from apples, and place them into the hot skillet. Cook and stir for about 2 minutes. Add brown sugar, and cinnamon, and cook, stirring, for 2 more minutes. Stir together cornstarch and 1 tablespoon water. Pour into the skillet, and mix well. Cook for another minute, or until sauce has thickened. Remove from heat to cool slightly.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Unfold puff pastry sheets, and repair any cracks by pressing them back together. Trim each sheet into a square. Then cut each larger square into 4 smaller squares. Spoon apples onto the center of each squares. Fold over from corner to corner into a triangle shape, and press edges together to seal. Place turnovers on a baking sheet, leaving about 1 inch between them.
  • Bake for 25 minutes in the preheated oven, until turnovers are puffed and lightly browned. Cool completely before glazing.
  • To make the glaze, mix together the confectioners' sugar, milk and vanilla in a small bowl. Adjust the thickness by adding more sugar or milk if necessary. Drizzle glaze over the cooled turnovers.
