HAWAIIAN DINNER ROLLS
Pineapple and coconut give a subtle sweetness to these golden homemade rolls. If there are any leftovers, they're great for sandwiches. -Kathy Kurtz, Glendora, California

- In bread machine pan, place the first 10 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1-2 tablespoons of water or flour if needed). Just before final kneading (your machine may audibly signal this), add coconut., When cycle is complete, turn dough onto a lightly floured surface. Cover and let rest for 10 minutes. Divide into 15 portions; roll each into a ball. Place in a greased 13x9-in. baking pan. , Cover and let rise in a warm place for 45 minutes or until doubled. Bake at 375° for 15-20 minutes or until golden brown.

HOMEMADE KING HAWAIIAN ROLLS OR LOAF
As far as homemade bread goes, this is fairly easy to make. The results are unlike any other bread we've made. It is sweet and rich in flavor. If you make rolls, they're buttery, light, and fluffy. A loaf will make the perfect grilled cheese or french toast. We could not stop snacking on this.

- 1. In a small bowl beat your eggs.
- 2. Add the pineapple juice, sugar, vanilla extract, and melted butter. Mix well.
- 3. Put 3 cups of flour into a large bowl.
- 4. Stir in your egg mixture until well combined.
- 5. Sprinkle in the yeast packets, one at a time, mixing well.
- 6. Add the remaining 3 cups of flour and mix well. If it becomes to difficult to stir with a wooden spoon, just use your hands! Make sure all of the flour is well incorporated.
- 7. The dough should be tacky to the touch but not overly sticky. If it appears too wet, sprinkle in a bit of extra flour. Just a tablespoon or so at a time.
- 8. Cover your bowl with a clean kitchen towel. Set it in a warm place to rise for 1 hour.
- 9. Remove your dough from the bowl and knead in an additional 1/2 cup of flour. I kneaded mine 10 to 15 times, making sure the flour was well incorporated.
- 10. Form the dough into rolls or loaf and place in buttered pans.
- 11. Cover and place in a warm place to rise until the dough doubles in size. If making rolls, let rise for 1 hour. For loaves, let rise for 90 minutes.
- 12. Bake at 350 degrees for 25 to 30 minutes or until golden brown.
- 13. Brush tops with melted butter. Serve warm.

Steps:
- Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle for a 2 pound batch; press Start. The dough can be a bit sticky, so you may want to add a little bit more bread flour as it mixes.
- When the dough cycle is complete, turn the risen dough out on a lightly floured surface and divide into twelve equal pieces. Form the pieces into rounds and place on lightly greased baking sheets. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven for 15 minutes, until golden brown.

- First, combine the sponge ingredients in the bowl of a stand mixer (if using) or a mixing bowl. Let sit for 15 minutes (see note below about what it means to make a sponge for a dough).
- Add the pineapple juice, softened butter, brown sugar, and eggs to the bowl, and mix until everything is well incorporated. If you are using a stand mixer, I used my paddle attachment for this stage.
- Mix together well, at first using the paddle attachment on medium speed for a couple minutes, then switching to the dough hook and kneading for about 5-7 more minutes (or knead by hand.) This dough is VERY sticky, so don't worry if it seems very wet, but you can also add 1-2 tablespoons more flour here if it seems like it needs it.
