Loaded Mashed Potatoes are creamy and buttery, topped with cheddar cheese, bacon and scallions. They're a breeze to make and perfect for making ahead.

8 ounces bacon (or more to taste)
3 pounds russet potatoes (peeled and cut into 1" cubes)
1 stick butter
1 container (16 oz) sour cream
4 teaspoons Kosher salt (divided)
1/2 teaspoon coarse ground black pepper
8 ounces shredded Cheddar cheese
1/4 cup green onions (sliced)

Steps:

  • Preheat the oven to 375 degrees.
  • Put the potatoes into a large pot and cover with water and 2 teaspoons of the salt.
  • Bring to a boil then reduce to a simmer and cook for 20 minutes.
  • Drain the potatoes and put them back into the pot with the butter and sour cream.
  • Mash them well and add in the remaining salt and the pepper.
  • Scoop the potatoes into a 9x13 casserole dish and top with the cheese and bacon.
  • Cook the potatoes for 5-10 minutes covered with foil, or until the cheese is fully melted.
  • Garnish with green onions before serving.

4 slices bacon, or more to taste
3 pounds potatoes, or more to taste, peeled and cut into chunks
½ cup butter
1 (16 ounce) container sour cream
8 ounces shredded Cheddar cheese
½ chopped fresh chives
salt and ground black pepper to taste

Steps:

  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.
  • Place potatoes into a large pot of lightly salted water; bring to a boil, reduce heat to medium-low, and simmer until tender, about 20 minutes. Drain potatoes and return them to the pot.
  • Mash butter into the potatoes with a potato masher or electric hand mixer until melted completely into the potatoes; add sour cream and continue to beat until combined. Crumble bacon into the potato mixture; add Cheddar cheese and chives and stir. Season potatoes with salt and pepper.

3 lbs. all-purpose potatoes, peeled and cubed
1-1/2 cups shredded cheddar cheese (about 6 oz.), divided
1 cup Hellmann's® or Best Foods® Real Mayonnaise
1 cup sour cream
3 green onions, finely chopped (optional)
6 slices bacon, crisp-cooked and crumbled

Steps:

  • Preheat oven to 375 degrees. Spray 2-quart shallow baking dish with nonstick cooking spray; set aside.
  • Cover potatoes with water in 4-quart saucepot; bring to a boil over high heat. Reduce heat to low and cook 10 minutes or until potatoes are tender; drain and mash.
  • Stir in 1 cup cheese, Hellmann's® or Best Foods® Real Mayonnaise, sour cream, green onions and 4 strips crumbled bacon. Turn into prepared baking dish and bake 30 minutes or until bubbling.
  • Top with remaining 1/2 cup cheese and bacon. Bake an additional 5 minutes or until cheese is melted. Garnish, if desired, with additional chopped green onions.

Homemade Loaded Mashed Potatoes image

This has been a Holiday hit since I made this about ten years ago. I got the idea from several sources including soups, and instant potato packets. And while the history of the dish might send one into a coma, the dish itself is sure to please and everyone will ask for more! Remember to use FRESH ingredients for this to maximize the return trip! For the potatoes, I use Russet...but that's because the skin comes off so easily after they're boiled. If you want the more "Homemade" or "Rustic" look, use a smaller Red potato and mash it with the skin intact (but you'll have to add five pounds of the Red Potatoes due to the smaller size). The Cheese part is slightly flexible because not everyone likes Cheddar (my wife prefers Mozzarella more than anything and I'm a Colby-Jack fan), but try to stay with a Yellow Cheese since it's usually served traditionally on Loaded Baked Potatoes

10 lbs potatoes
1 pint heavy cream
1 (15 ounce) can chicken broth
1 lb sour cream
2 cups bacon, cooked & chopped
2 cups shredded cheddar cheese
6 -8 green onions, washed & chopped
1/2 cup butter or 1/2 cup margarine
2 tablespoons garlic powder
1 teaspoon salt (optional)

Steps:

  • Wash the potatoes & green onions thoroughly, taking note to any and all darker spots on the potatoes (you don't want to serve "black eyes", they really taste awful!).
  • Put the potatoes into a pot of water to boil, occasionally checking the potatoes for tenderness.
  • While the potatoes boil, cook the bacon to your liking (try to avoid crispy bacon at all costs!), dry the bacon, chop into small pieces and set it to the side.
  • Chop the green onions into small pieces - DO NOT MINCE!
  • When the potatoes are near being done, gently heat the Heavy Cream/Chicken Broth mixture (cold broth/cream mixture delays the entire cooking process).
  • When the potatoes are done, drain potatoes into a colander and start to flake away the skin, setting the skinned potatoes into a bowl.
  • Mash potatoes, adding the warm Cream/Broth mixture in slowly, followed by the onions, bacon, cheese, butter, garlic powder, and salt.
  • Stir thoroughly and enjoy!

5 pounds potatoes, peeled and cubed
8 strips bacon
⅔ cup chopped green or red bell pepper
½ cup chopped onion, or more to taste
¾ cup hot milk
6 tablespoons butter, plus more for greasing
1 teaspoon salt
½ teaspoon ground black pepper, or to taste
1 (10 ounce) package sharp Cheddar cheese, cut into chunks
3 large eggs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter 2 large casserole dishes.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes. Drain and transfer to a large bowl.
  • While the potatoes are cooking, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle. Leave 2 tablespoons bacon drippings in the skillet and discard the rest.
  • Add bell pepper and onion to the drippings; cook and stir over medium heat until tender, about 5 minutes. Remove from the heat.
  • Combine potatoes, hot milk, butter, salt, and pepper in the bowl of a stand mixer fitted with the paddle attachment; beat first on slow speed, then increasing to medium speed until fluffy, 2 to 3 minutes. Add Cheddar cheese, eggs, bell pepper-onion mixture, and bacon. Beat again at medium speed until cheese is in smaller pieces, about 3 minutes. Fill each of the prepared casserole dishes 2/3 full of potatoes.
  • Bake in the preheated oven until heated through and potatoes have puffed up, 30 to 35 minutes.

I'm showing you an amazing, no-deep-fry, no-air-fry, no-oven method for making perfectly crisp potato chips in your microwave. Not only is this method fast and easy, but this produced one of the best tasting potato chips I've ever had. I know it sounds too good to be true, but it is.

1 large russet potato, scrubbed
2 tablespoons canola oil
salt to taste

Steps:

  • Fold a piece of parchment paper into eighths, paper airplane-style. Place the tip of the folded parchment in the center of a microwave-safe plate and measure the radius; cut remaining parchment off and unfold into a circle to fit the plate.
  • Slice potato thinly using a mandolin and transfer to a bowl of cold water; rinse off as much starch as possible. Transfer potato slices to a clean kitchen towel to dry; blot tops as well to ensure they are as dry as possible.
  • Brush some oil over the parchment paper. Working in batches, place as many potato slices on the oiled parchment that will fit; brush tops of slices with more oil.
  • Cook in a microwave for 3 ½ minutes. Flip and continue to cook until browned and stiff, about 4 minutes more, checking the appearance often to make sure they don't burn.
  • Transfer chips to a cold plate and season with salt. Let cool before serving. Continue with remaining potato slices.
