3-CHEESE MASHED POTATO BAKE

3-Cheese Mashed Potato Bake image

The potatoes can be prepared one day ahead just before the point where there are baked. After placing in the baking dish and topping with the remaining cheese and bread crumbs, cover and chill the potatoes. Bake for about 10 minutes longer to compensate for the potatoes being cold.

Time 1h15m

Yield 8 servings

Number Of Ingredients 11

6 strips bacon
Fresh breadcrumbs from 10 slices white bread
Nonstick cooking spray
2 cups milk
4 tablespoons unsalted butter
5 pounds russet potatoes, peeled and cut into chunks
Kosher salt
1 cup shredded Cheddar
4 ounces cream cheese, at room temperature
Freshly ground black pepper
3 tablespoons chopped fresh chives

Steps:

  • In a large skillet over medium heat, cook the bacon until crisp. Drain on brown paper. Remove all but 1 tablespoon of fat from the pan. Place the bread slices in a food processor and pulse until coarse crumbs are formed. Reserve 1 cup breadcrumbs for Round 2 Recipe, Fried Potato Cakes. Add the remaining breadcrumbs to the skillet and cook until they are lightly toasted, about 5 minutes. Set aside
  • Preheat the oven to 350 degrees F. Spray a 9 by 13-inch baking dish with nonstick spray.
  • In a small saucepan over low heat, warm the milk and butter.
  • Place the potatoes into a large pot, cover with cold water, add a generous pinch of salt, and bring to a boil over medium-high heat. MASHED POTATO CASSEROLE

Mashed Potato Casserole image

This casserole may upset some mashed potato purists, but take heart: one bite and they'll be won over. The genius of this recipe, besides its utter deliciousness, is that it can be made the day before, or even two. Cook the potatoes, assemble the casserole, wrap tightly and store it in the refrigerator. When dinnertime comes, dust it with the cheese, butter and bread crumbs and bake the whole thing off. BAKED MASHED POTATOES WITH PARMESAN

Baked Mashed Potatoes With Parmesan image

The combination here of baked and mashed potatoes can be made in advance and reheated at serving time. A food mill or old-fashioned food ricer yields the best texture, but you can also mash the potatoes in any way you are accustomed. I like to use Idaho potatoes because they are less moist than many other types.

Provided by Pierre Franey

Categories     side dish

Time 40m

Yield 4 servings

Number Of Ingredients 8

4 large Idaho potatoes, about 1 1/2 pounds
4 garlic cloves, peeled
Salt to taste
1 cup milk
2 tablespoons butter
1/2 teaspoon nutmeg, freshly grated
Freshly ground black pepper to taste
3 tablespoons grated Parmesan or other cheese

Steps:

  • Peel potatoes and rinse well.
  • Place potatoes and garlic in a saucepan with water to cover. Add salt and bring to a boil. Simmer 15 to 20 minutes or until potatoes are tender. Drain and mash and place in a saucepan.
  • Preheat broiler.
  • Heat milk in a saucepan.
  • Add butter and nutmeg to milk. Stir with a wooden spatula until butter melts. Add milk gradually to the potatoes, stirring with a spatula. Add salt, if desired, and pepper.
  • Spoon potatoes into a heatproof serving dish measuring 1 1/2 by 6 1/2 by 10 1/2 inches.
  • Smooth top with a spatula and sprinkle with cheese. Place potatoes under broiler until nicely browned.
