QUICK AND EASY CHERRY BARS
With a busy family and no one knowing just who might be over to eat, this is a quick and easy great tasting bar dessert

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla. Combine the flour, baking powder and salt; stir into the creamed mixture. Reserve 1 1/2 cups of the dough and spread the rest into the bottom of the prepared pan. Cover this layer evenly with cherry pie filling. Drop the rest of the dough by spoonfuls on top of the cherry layer and spread to cover the best you can.
- Bake for 35 to 40 minutes in the preheated oven, until top is golden. Frost with a confectioners' glaze when cool for sweeter bars. Let cool completely before cutting into bars.

- Preheat oven to 350°. In a large bowl, cream butter, sugar and salt until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extracts. Gradually add flour., Spread 3 cups dough into a greased 15x10x1-in. baking pan. Spread with pie filling. Drop remaining dough by teaspoonfuls over filling. Bake 35-40 minutes or until golden brown. Cool completely in pan on a wire rack., In a small bowl, mix confectioners' sugar, extracts and enough milk to reach desired consistency; drizzle over top.

MERRY CHERRY BARS
Steps:
- Cream the sugar, margarine and vanilla until light and fluffy. Add the eggs, one at a time, beating well after each egg. Sift together the flour and baking powder and add to wet mixture. Mix well.
- Spread 2/3 batter on greased cookie sheet. Spoon on can of cherry pie filling. Top with remaining batter, swirling the batter some.
- Bake at 350 degrees F for 25-35 minutes. After cooled, drizzle glaze over entire dessert.

- Cream together butter and sugar. Add eggs and beat well. Beat in extracts. In a separate bowl combine flour and salt. Add to the creamed mixture. Mix until combined.Spread 3 cups batter into a greased 15x10x1-in baking pan (Also works with 9x13 - baking time will be at least 35 minutes). Spread with pie filling. Drop the remaining batter by teaspoonfuls over pie filling. Bake at 350 for 30 to 35 minutes, or until toothpick comes out clean. Cool on wire rack. Combine glaze ingredients, and drizzle over cooled bars.
MERRY CHERRY BARS
These luscious bars, filled with cherries and almonds, really suit the Christmas season. I sometimes put a cup of coconut in a clean jar with a few drops of red food coloring. After a few shakes, I have tinted coconut to sprinkle on top.

- In a bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a greased 13-in. x 9-in. baking pan. Bake at 350° for 12-15 minutes or until lightly browned., Meanwhile, in a bowl, combine brown sugar and eggs; mix well. Combine flour, baking powder and salt; gradually add to egg mixture. - 1. Preheat your oven to 350 degrees.
- 2. Place the butter and sugar into your stand mixer or large mixing bowl. Cream together for 1-2 minutes or until light and fluffy.
- 3. Add the egg and mix for an additional 2 minutes.
- 4. Add the almond extract and mix just until combined.
- 5. In a separate bowl toss together the flour and salt. Add it to the creamed mixture and mix just until combined.
- 6. Chop the candied cherries into small pieces. Add them and the m and m candies to the mixing bowl and mix just until combined. Your mixer will chop up the chocolate just a bit for you (which is a good thing!) but be sure not to let the mixer run too long. You still want the m and ms to be fairly whole.
- 7. Spray a 9x13 pan with cooking spray and press the dough out evenly into it.
- 8. Bake for 17 minutes or until a toothpick inserted into the center comes out clean.
- 9. Allow the bars to cool completely (should take about an hour).
- 10. Make the glaze by whisking the powdered sugar, almond extract and about 3 Tb warm water together. Add more water as needed. Drizzle over the cooled bars. Allow the glaze to set up and then cut into bars.

- Preheat the oven to 300 degrees F (150 degrees C).
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and almond extract. Combine the flour and salt; stir into the creamed mixture until well blended. Mix in 1/2 cup of the cherries. Press the dough into an ungreased 9x13 inch baking pan. Sprinkle with remaining cherries and crushed candies. Press in lightly.
- Bake for 30 to 35 minutes in the preheated oven, or until edges are lightly browned. Cool completely in the pan before icing. To make the icing, mix together the confectioners' sugar and water until a drizzling consistency is reached.

- Heat oven to 300.
- Mix sugar, butter, almond extreact and egg in a large bowl until well blended.
- Stir in flour, 1/2 cup cherries, and salt.
- Spread in ungreased 15 1/2 x 10 jelly roll pan.
- Sprinkle on top the remaining cherries and the candies; press lightly.
- Bake until edges are very light brown, 30 to 35 minutes.
- Cool completely.
- Make glaze by mixing powdered sugar and water until smooth and of desired consistency.
- Drizzle squares with glaze.
