RESTAURANT STYLE SPAGHETTI SAUCE WITH SAUSAGE
It's easy to make restaurant-style Spaghetti Sauce using just a few ingredients. Adding sausage makes the sauce even more flavorful, but if you don't eat meat its okay to leave it out. This is the recipe I used throughout my long restaurant career.

Steps:
- In a large heated skillet or saucepot add olive oil and sausage. Saute sausage on both sides until it browns.
- When the sausage has browned add the diced onion and chopped garlic. Continue cooking until the onions are translucent, but do not allow them to burn!
- Add crushed tomatoes, rinse cans with just a little water and add to the sauce (if crushed tomatoes are not available use whole tomatoes and crush by hand or with an immersion blender).
- add chopped basil, sea salt and black pepper to taste (don't over season, you can always add more later). If you choose to add sugar now is the time to add it.
- After your sauce has reached a boil, reduce the heat to simmer and continue to cook for at least two hours. If you've got the time let it simmer for 4-6 hours for an amazingly rich tomato sauce.

LOTS O'VEGGIES SAUSAGE SPAGHETTI SAUCE
This Italian sausage and ground beef recipe is full of vegetables and Italian herbs -- the longer it cooks the better! Full of flavor, and makes a great base sauce for lasagna. It's critical to use fresh basil, other herbs may be dried. Do not use canned tomatoes which have any corn syrup in them. Home canned tomato equivalent is 3 quarts. If you want a spicier sauce add either crushed red pepper to taste or use hot Italian sausage.

OXTAIL RAGU
Richly browned oxtail sections are simmered low and slow in a rich tomato sauce until the meat comes off the bones-- this oxtail ragu is almost foolproof. The only way to screw up this incredibly succulent cut of beef is to not cook it long enough.

ITALIAN SAUSAGE SPAGHETTI
This is my favorite method of making Italian sausage spaghetti. By browning the sausages first and then cooking them in the sauce at a long, slow simmer, the sausage is loaded with flavor and firm, but tender--almost meatball-like in texture. And we hardly need any seasonings because the long cook time allows the sauce to get infused with all the sausage-y goodness!

Steps:
- Heat olive oil in a saucepan over medium heat. Transfer sausage links into the hot pot. Cover with a lid and cook until beautifully browned and just barely cooked through, about 5 minutes per side. You can increase the heat a little if you like, but make sure the oil does not smoke. Turn off the heat and remove sausages to a plate to cool completely.
- While the sausages are cooling, add wine to the same pot over medium-high heat. As it comes up to a simmer, stir the caramelized bits on the bottom of a pan with a spoon or spatula. Simmer until it reduces by about half, 1 to 2 minutes.
- Add marinara sauce. Pour water into the jar of pasta sauce, seal, and shake to rinse out the jar. Pour that liquid into the pot and return to a simmer. Reduce heat to low.
- Slice each fully cooled sausage into 4 pieces. Transfer sausage and any accumulated juices into the simmering sauce. Stir and increase heat to just between low and medium-low. Cook at a gentle, steady simmer, stirring occasionally, for 1 hour. Taste and adjust seasonings. Skim about 1/2 of the fat from the surface, and continue to cook until reduced and thick, about 30 minutes longer.
- Meanwhile, bring a large pot of generously salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until almost tender yet firm to the bite, 10 to 11 minutes. Drain spaghetti and transfer it directly into the pot of hot sauce. Mix until thoroughly combined. Cover with the lid and let sit for 1 minute so the pasta can absorb some of the sauce.
- Evenly divide pasta onto 4 plates and top each serving with 4 pieces sausage. Sprinkle with Parmigiano-Reggiano and parsley.

Steps:
- Coat dutch oven with olive oil. Saute oxtail until browned and set aside. Cut off sausage lining, break into small pieces, and saute until cooked through. Set aside with oxtail. Re-coat dutch oven with olive oil if needed. Add garlic, basil and parsley and saute briefly. Add oxtail, sausage, tomato sauce, tomato puree, oregano and bay leaf. Stir. Add baking soda and sugar. Simmer for 5 hours. With 1 hour remaining (4 hours in), cut meat off oxtails and add meat back into sauce. Discard bones and fat. Skim fat off of top of sauce every 20 minutes during the last hour. Enjoy same day or the next over spaghetti!

SPAGHETTI SAUCE WITH HOT ITALIAN SAUSAGE
Inspired by my Dad's somewhat tamer spaghetti sauce, this is my spiced up twist on an old classic. It is easy to make, SMELLS great and makes enough for dinner plus 2 frozen dinners for two (for those nights you just don't have time to cook from scratch). This sauce comes out THICK and CHUNKY, so adjust if you like a thinner sauce. I also make this a day in advance of when I want to eat it as I like the flavor after it has been refrigerated over night and then reheated.

ITALIAN SAUSAGE SPAGHETTI SAUCE
Recipe by Rita Futral, as reported by Helen Dollaghan in the Oct. 27, 1985, edition of The Denver Post. The recipe comes from the first place winner in the Hunt-Wesson national spaghetti contest. Note: The recipe is posted as the original, but I have no experience adding the cheese with such a long cooking time. I'd add it towards the end fearing it would settle and possible stick or, worse, burn.

Steps:
- Heat oil in Dutch oven over moderate heat. Crumble in Italian sausage, add garlic and cook until meat loses red color. Remove meat from pan and drain off all but about 1 tablespoon of grease.
- Whisk in tomato paste and cook over moderate heat about five minutes, stirring frequently (tomatoes burn quickly). Whisk in pureed tomatoes and tomato sauce, then add whole onion, green pepper, cheese (a little at a time to avoid clumping), sugar, oregano, basil and fennel seed. Add sausage. Bring just to boil, reduce heat and simmer, covered, about 1 1/2 hours. (Sauce will splatter if heat is too high.).
- Add parsley and mushrooms during last 5 minutes of cooking time. Remove onion and green pepper. Add salt and pepper. Serve over spaghetti, garnished with additional Parmesan cheese.

CHEESY STOVETOP MAC WITH SAUSAGE AND KALE
Quick, easy and delicious, this one-pan meal is perfect for weeknights when cleaning up is the last thing you want to do. It's reminiscent of hamburger skillet macs, which gained popularity in the 1970s, thanks to Hamburger Helper, when beef prices were high and families wanted to stretch a pound of meat. This kale-packed version spices up that classic with herby sweet Italian sausage, fresh garlic, red-pepper flakes and hot sauce. Like the original, the starch from the pasta helps thicken the cooking liquid into a quick sauce that becomes creamy once the cheese is added. Serve with a crisp green salad and toasted bread.

Steps:
- Heat the olive oil in a large, wide pot or a very large, deep skillet over medium-high, then add the onion, kale and ½ teaspoon salt and cook, stirring occasionally, until the kale has cooked down and the onion is smaller in size, 4 to 5 minutes.
- Add the garlic and tomato paste and cook, stirring often, until the paste darkens slightly, 1 to 3 minutes.
- Add the sausage and cook, breaking the meat into small pieces, until it loses its pink color, 4 to 5 minutes.
- Add the red-pepper flakes, sprinkle with salt and give everything a good stir. Add the chicken broth and pasta and stir to combine. Bring the liquid to a boil, then reduce the heat to low, place a lid on the pan and cook until the pasta is soft but still has some bite to it, about 10 minutes. Be sure to check on the pasta and stir every now and again. (The sauce will have thickened from the starch in the pasta.)
- Add the cheese and hot sauce and mix well. Add salt and additional hot sauce to taste before serving.
