- Boil and peel the potatoes.
- Grate the potatoes and transfer to a large bowl.
- Add the grated cheese, salt, red chilli powder and corn flour.
- Mix well to a thick dough without adding water.
- Keep this in the fridge for 45 to 60 minutes.
- Then make small balls and flatten them like a vadai.
- Using a knife, cut out two eyes and a mouth.
- Heat oil in a deep frying pan over medium flame.
- Fry the smileys until golden brown and crisp.
- Remove and drain excess oil.
- Serve with tomato ketchup.

- Preheat oven to 425°F.
- Peel the potato and cut into one-inch cubes. Place in a microwave-safe bowl and cover with plastic wrap. Cut a small slit to vent. Microwave for 5 to 7 minutes until tender.
- Add the milk to the potato and mash the potato mixture with a fork or pastry blender well. Let cool a bit.
- Stir in the egg, cornstarch, cheese, breadcrumbs, salt and garlic salt. Mix well.
- Place the dough between two pieces of wax paper. Press or roll the dough to 3/8-inch thickness. Use a two-inch circle cutter to cut circles. Place the potato circles on a baking sheet lined with parchment paper. If the dough is too soft, place in the refrigerator to chill 30 to 60 minutes.
- Use a straw to make eyes and a small spoon to make smiles on each potato circle.
- Bake for 10 to 15 minutes until the tops start to brown.

- In a large bowl mix mashed potatoes, flour, breadcrumbs, cornstarch and egg. Mash with a fork until a dough forms. Season with salt and pepper. Roll dough out between two pieces of waxed paper to ¼ inch thick. Carefully peel off the top piece of waxed paper. Cut out 1½-inch circles, using the rim of a glass. Using the end of a drinking straw, cut out two circles for the eyes; use a spoon to cut out a mouth. Pour canola oil into a large pot to a depth of 2 inches. - Preheat oven to 400 degress.
- Wash, peel, and boil potatoes and carrots for about 15-20 minutes.
- Mash the potatoes and carrots and add the rest of the ingredients. Add salt to taste (I added about a teaspoon). You can use your hands to mix everything well..
- Form little round-flat balls with your hands and place them on a baking sheet on top of parchment paper. You can use a little extra flour if they are a little sticky.
- Make the eyes with a straw and the mouths with a teaspoon.
- Bake for about 15 minutes and turn on the broiler a couple of minutes at the end so the potatoes will be crispy on the outside.
- Serve with your favorite dipping sauce.

- Cut the Potatoes. Wash the potatoes, scrubbing them well, and dry completely. Peeling is optional and comes down to personal preference. Peeled or unpeeled, the cut is absolutely key when making fries.
- Soak the Potatoes. Put the cut potatoes in a large bowl and cover with cool water. Soak for at least 20 minutes or up to an hour. This step gets rid of excess starch, resulting in fluffier and crispier fries.
- Drain and Dry the Potatoes. Drain the potato sticks and pat them dry with paper towels or a clean kitchen towel. Arrange them in a single layer to air-dry for a bit.
- Fry the Potatoes. Bring at least 2 inches of oil in a large heavy pot to 325 F. Once the oil is hot, fry the potatoes for about 5 minutes. Work in batches if you're making more than one or two potatoes' worth.
