- Preheat oven to 400 degrees.
- Mix dry ingredients until well combined. Add in sugar and wet ingredients, stirring to incorporate.
- Fold in 1 chopped apple.
- Spray a muffin tin with nonstick cooking spray and divide batter between muffin cups. Top with the other chopped apple and cinnamon.
- Bake for 20 minutes or until a toothpick inserted in the muffins comes out clean.

- Preheat oven to 400 degrees.
- Place oats in a food processor. Pulse 5-6 times until oats resemble a coarse flour.
- Put oat flour in a large mixing bowl and add flour, cinnamon, baking soda, baking powder and salt. Mix thoroughly until well combined.
- In a separate bowl, beat eggs then incorporate buttermilk, sugar and vanilla. Whisk to combine then stir in grated apple.
- Add wet ingredients to dry ingredients and mix thoroughly.
- Spoon batter into liners (about 3 Tbsp of batter per cup). If desired, sprinkle sugar on top of each muffin for aesthetic appeal.
- Bake at 400 degrees for 18-20 minutes until muffins spring back slightly when touched and a toothpick inserted into the center comes out clean.
- Remove from oven and let cool on a wire rack
- Eat within 2 days (when stored in an airtight container) or freeze cooled muffins and pull on out to reheat whenever you need a quick and hearty breakfast.

- Preheat oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin pan or line with paper liners.
- Stir 1/4 cup oats, 1 tablespoon brown sugar, melted butter, and 1/4 teaspoon cinnamon together in a small bowl; set aside.
- Whisk together 1 1/2 cups oats, flour, 1/2 cup brown sugar, 1 1/2 teaspoons cinnamon, baking powder, baking soda, and salt together in a large bowl.
- Stir applesauce, milk, oil, egg, and vanilla extract together in a bowl. Stir applesauce mixture into flour mixture just until all ingredients are moistened; stir in apple. Spoon apple mixture into prepared muffin cups about 2/3 full; sprinkle oat topping mixture evenly over each muffin.

- Preheat oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
- Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.
- Bake at 400 degrees F (205 degrees C) for 15 minutes or until golden brown.

- Peel the skin from the apples and grate on the coarse side of a cheese grater. Set aside. (To prevent browning, place grated apples in a bowl and cover with lemon juice and water. Drain before adding to the batter.)
- Preheat oven to 350°F/180°C.

This is my own adaptation of a recipe I found on the back of the oat bran box. These are also good with cinnamon sugar sprinkled on top before baking, and are especially yummy warmed up in the microwave about 10-15 seconds , with a little margarine!

- Preheat oven to 400.
- Line 12 muffin cups with paper liners, or grease muffin tins.
- In a large bowl, mix together dry ingredients, including nuts & raisins if using.
- In another bowl, mix together vanilla, oil, eggs & applesauce until well blended.
- Make a well in the center of the dry ingredients; add wet ingredients & mix until well blended.
- Let mixture sit for 10 minutes (for oat bran to absorb some of the liquid).
- Spoon mixture into paper-lined muffin cups and bake 15-20 minutes or until golden brown & toothpick comes out clean.
- Let muffins cool in pan for 5 minutes; then remove to a wire rack to cool completely.
