2 tablespoons maple syrup
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon liquid smoke
2 tablespoons olive oil

Steps:

  • With a mandoline or vegetable peeler, cut carrot into long, thin strips. In a shallow bowl, whisk maple syrup, paprika, garlic powder, onion powder, salt and liquid smoke. Dip carrot slices into syrup mixture, allowing excess to drip off., In a large skillet, heat oil over medium heat. Cook carrot slices in batches until browned, 4-6 minutes, turning once.

½ white onion, diced
2 cloves garlic, chopped
1 bunch collard greens, stems removed and leaves torn into bite-size pieces
½ teaspoon red pepper flakes
2 cups vegetable broth
2 tablespoons apple cider vinegar
1 teaspoon brown sugar
¼ teaspoon liquid smoke flavoring
¼ teaspoon smoked paprika

Steps:

  • Heat olive oil in a large skillet over medium heat; cook and stir onion and garlic until browned and fragrant, 3 to 4 minutes. Add collard greens and red pepper flakes; cook and stir until greens are slightly wilted, 2 to 3 minutes.
  • Combine vegetable broth, cider vinegar, brown sugar, liquid smoke flavoring, and paprika in a large pot; add collard greens mixture. Cover pot and simmer until greens are very tender, 40 to 50 minutes. Strain collard greens before serving.

1/4 cup veggie bacon bits (of your choice, if homemade, make sure they are very dry!)
6 pieces sun-dried tomatoes, chopped (dry, NOT in oil)
3 tablespoons brown sugar
3 tablespoons granulated organic sugar
2 tablespoons hot smoked paprika (pimenton)
1 tablespoon sweet smoked paprika (pimenton)
1/2 tablespoon granulated garlic
1/2 teaspoon fresh ground black pepper (OR use smoked black pepper, freshly-ground)
1/2 teaspoon mustard powder
1/2 teaspoon onion powder

Steps:

  • NOTE: If you want the salt to be a little more coarse, mix all of the ingredients EXCEPT the salt in the blender or VitaMix first. When they are powdery, add the salt and whiz until it's the texture you want.
  • Mix everything in the DRY VitaMix (or use a good blender) and blended on high, stopping now and then to stir everything up (because it tends to clump together), and then blend again. When you can't feel any tomato bits anymore, stop. IScrape the mixture into a dry bowl and mix it with a spoon to fluff it up. Scoop it into a dry 1-pint canning jar with a tight lid. You can put some in a shaker-jar for table use.

2 tablespoons vegetable oil, plus more for the grill
1/3 cup finely chopped walnuts
1 shallot, finely chopped
2 cloves garlic, minced
8 ounces cremini mushrooms, finely chopped
Kosher salt and freshly ground pepper
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
2 teaspoons Dijon mustard
1 large sweet potato
1 1/4 cups cooked quinoa, cooled
1/2 cup breadcrumbs
4 hamburger buns, split
Sliced red onion and sprouts, for serving

Steps:

  • Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the walnuts, shallot and garlic and cook, stirring, until softened, about 1 minute. Add the mushrooms and season with salt and pepper. Cook, stirring occasionally, until lightly browned and tender, about 5 minutes. Add the Worcestershire sauce and paprika and cook, tossing to coat, until reduced, about 10 seconds. Remove from the heat and stir in the mustard. Transfer the mixture to a large bowl.
  • Meanwhile, microwave the sweet potato until tender, 8 to 10 minutes. Let cool, then peel and transfer to a large bowl. Add the quinoa and beat with a mixer on medium-high speed until combined. Beat in the breadcrumbs, 1/2 teaspoon salt and a few grinds of pepper. Form into four 4-inch-wide patties and freeze until firm, 20 minutes.
  • Preheat a grill to medium high. Oil the grates. Grill the patties until marked, about 3 minutes per side. Grill the buns. Serve the burgers on the buns with onion and sprouts.

2 tbsp olive oil
1 small onion
2 rashers smoked back bacon
420g can of cannellini bean
2 large tomatoes , preferably vine-ripened
6 or so large fresh basil leaves
a few drops of Tabasco sauce , optional

Steps:

  • Warm the oil in a medium saucepan while you quickly chop the onion into quite small pieces. Add the onion to the pan, give it a good stir with a wooden spoon then leave it to cook over a high heat for about 5 minutes, stirring occasionally.
  • Meanwhile, snip the bacon in half lengthways with scissors and either cook them between 2 sheets of kitchen paper in the microwave for 2-3 minutes on HIGH or in a frying pan in the usual way until the fat is golden and crisp.
  • Open and drain the beans then roughly chop the tomatoes and add them both to the pan. Stir well and cook for another few minutes until the tomatoes have softened. Shred the basil and add to the pan with salt and a generous grinding of black pepper - for extra heat you can add a few drops of Tabasco sauce. Spoon onto plates and top each with the bacon. Serve with lightly toasted bread on the side.

6 cups water
3 tablespoons kosher salt
2 tablespoons white sugar
2 tablespoons maple syrup
¼ teaspoon garlic powder
¼ teaspoon pink salt #1 (curing salt)
1 (1 pound) pork tenderloin

Steps:

  • Mix water, kosher salt, sugar, maple syrup, garlic powder, and curing salt until dissolved.
  • Place the pork loin in a large bag or food-safe container large enough to completely submerge it in the brine. Add brine and refrigerate for at least 3 days.
  • Remove pork from brine and pat dry with paper towels; discard brine.
  • Preheat a smoker to 180 degrees F (82 degrees C) according to manufacturer's instructions.
  • Place pork onto wire racks. Place the racks into the smoker. Add wood chips according to manufacturer's directions. Smoke until pork is slightly pink in the center, about 2 1/2 hours. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Let cool before slicing.
