HOMEMADE TAJíN RECIPE
My version of the ubiquitous Mexican chile-lime powder with ancho and chipotle powder, crystallized lime powder, and a little less salt!

HOMEMADE TAHINI
Tahini is a staple in Middle Eastern cooking. It's added to mashed garbanzo beans to make hummus, mixed with date paste, or drizzled with pekmez in Turkey for breakfast. It tastes great in sandwiches or baked into cookies. Really, there are many many uses for this tasty dip. Start with the freshest sesame seeds you can find.

- Preheat the oven to 350 degrees F (175 degrees C). Spread sesame seeds on a rimmed baking sheet.
- Bake in the preheated oven, shaking the baking sheet frequently, until seeds are lightly toasted, 5 to 10 minutes. Let cool, about 10 minutes.
- Pour cooled seeds and 1 1/2 cups olive oil into a food processor. Blend until smooth, 1 to 2 minutes. Add more oil and blend until a thick yet pourable consistency is reached.

TAJIN® ROASTED NUTS

- Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with parchment paper.
- Place nuts into a medium bowl. Mix butter and chili-lime seasoning together in a small bowl; pour over nuts and toss until evenly coated. Transfer to the prepared baking sheet and spread out into a single layer.
- Bake in the preheated oven until nuts are lightly browned, 18 to 20 minutes, stirring every 6 to 7 minutes. Remove from the oven and place nuts on a paper towel-lined plate. Let cool completely before serving or storing.

TAJíN GRILLED CHICKEN
Tajín is a Mexican seasoning made from dried, ground red chiles, sea salt and dehydrated lime juice. It is great sprinkled over fresh cut fruit like mango and pineapple, or rimmed on an ice cold margarita. But it is also an easy way to add chile and lime to your favorite grilled meats, rubs or sauces. In this dish, the lime in the Tajín balances out the sweetness from the agave syrup, while the red chiles complement the smoky flavor of the chipotles. Serve the chicken as is or on toasted hamburger buns with a schmear of mayonnaise, chopped grilled scallions, cilantro leaves and sliced pickled jalapeños. This Tajín sauce also would pair well with grilled bass, cod or salmon, or with shrimp skewers.

- Prepare a grill for medium-high, direct heat; clean the grates well, then brush them with vegetable oil. Alternatively, heat a grill pan on medium-high and brush the pan with oil.
- Arrange the chicken on a sheet tray and generously season both sides with salt. Whisk together the agave syrup, orange juice, orange zest, chipotles, adobo, garlic, olive oil and Tajín in a medium bowl.
- Brush both sides of the chicken with the Tajín sauce. Grill the chicken, turning and basting often with the Tajín sauce, until cooked through, charred but brick red and glazed, 7 to 9 minutes. Grill the scallions, turning occasionally, until lightly charred on all sides, about 5 minutes.
- Serve the chicken with the grilled scallions, topped with cilantro.

- PLEASE NOTE: I highly recommend wearing gloves when working with the dried peppers! This is just a precaution.
- With a sharp knife, slice open your peppers and remove the seeds and stems. I use about 1 cup of dried whole peppers for this recipe which will yield about a half cup ground.
- Run your knife through the dried pepper pieces to help them fit in the spice grinder. Place them in the base.
- Zest your lemon and add it into the grinder fresh. You can also use dehydrated lime or citric acid in place of the fresh lime zest.
