I found this in a blog post and thought I would save it here. I have not tried it yet but it looks like it could be good.

Ingredients

6 organic lemons
4 1/4 cups water
2 1/4 cups sugar

Steps:

Wash the lemons well and cut them into thick slices.
Put these in a large saucepan with the water and sugar.
Bring to a boil and let simmer for 10 minutes.
Remove from heat and let cool.
Keep covered in the fridge for 24 hours.
Strain, pour into a clean jar, cover and refrigerate.
You now have a concentrate that needs to be mixed with water: one part concentrate to three parts water.
Serve with lots of ice.

This recipe came from my ex-husbands great-grandmother. It is quite old and tastes great. My whole family absolutely loves it and it makes a LOT of concentrate! If you have troubles finding tartaric acid, I found it at a make your own wine store. The citric acid I find at a pharmacy.

Ingredients

2 ounces citric acid
1 ounce tartaric
1 ounce epsom salts
8 lemons, juice of
8 lemons, zest of, grated
5 lbs granulated sugar
3 pints boiling water

Steps:

Mix all ingredients together well.
Pour boiling water over mixture.
Stir shortly.
Let stand overnight.
Strain mixture and then bottle.
When you wish to drink it, add the concentrate to water to taste.

Steps:

Juice the lemons to make 1 cup of juice. To make your labor easier, FIRMLY roll the lemons between your hand and counter top before cutting in half and juicing.
In a gallon pitcher combine 1 cup lemon juice, 1 cup sugar, and 6 cups cold water. Stir. Adjust water to taste. Chill and serve over ice.

First, scrub the lemons, then peel them using a vegetable peeler so as to get as little pith as possible attached to the peels. Place the peels in a large bowl (you can use only half, if desired).
Place the water and honey in a heavy-bottomed saucepan and bring just to a boil, then pour the hot mixture over the peels and let sit until cooled, 30-45 minutes.
Meanwhile, juice the lemons and pour the juice through a sieve to remove any seeds or large pieces of pulp. Place juice in a large bowl or jar that's easy to pour from. Set aside, then prepare freezer containers for the concentrate.
A Note About Containers: I find leftover pint-sized sour cream containers or pint-sized Weck jars work very well for this purpose, but you can use anything that's freezer-safe and pint-sized. I prefer not to use Mason jars in the freezer, merely because of the curved top you have to thaw them completely before using them. With straight-sided Weck jars, you just have to loosen them before plopping them in your pitcher to mix. That said, mason jars are a great option if you want to can them in a water bath!)
